Dear Friends,
Surprised to see 6 little quail eggs in your delivery? Thought it would be interesting for you to try a little something different and still good for you. Although small, they have the same nutrients as a good chicken eggs and are fun. They may be fried, pickled, poached or hard boiled. Here's an easy way we like to have them.
Toads in a Hole
6 slices bread or English muffin
1 c milk
1 t cinnamon
1 t vanilla extract
pinch of salt
1 regular egg
6 quail eggs
maple syrup
Combine milk, egg, vanilla, salt and cinnamon in mixing bowl and whisk until smooth. Soak the bread in the liquid. Heat fry pan over med heat with butter or coconut oil. Cook soaked bread in pan, seperating a hole in the middle. After a couple of minutes, crack a quail egg into the center. Cook another minute, turn, and cook until done. Serve with good maple syrup or yummy jam or preserves.
We had good response from the black-eyed peas at New Year so am including good black beans for something a little different. Dried beans of all sorts have protein, fiber and good nutrients, so if you haven't tried this variety, I encourage you to do so. Easy and flavorful, here is an easy recipe. They can also be made into 'patties' for 'burgers' or a tasty salsa. Here is for soup:
