Dear Friends,
Grateful. A word that passes my mind often. Grateful the heat/humidity have passed for now, the tomatoes are ripening, the chickens are still laying and grateful the water still comes out of the hose. Grateful for our 2 loyal workers that tend the gardens. Last week tested us though. We told everyone to go home early every day we could last week as the temperatures were testing us all to the limit. I am shocked however, by the tenacity of the weeds we didn't get to last week. Why don't our cultivated crops grow as fast as these mosters have in one week? Now it's double duty to tackle them as soon as harvesting and packing are finished for the week. Any volunteers?
Perplexed by a different bunched of greens with small but kind of thick leaves in you bag? Ah, these are purslane. A miracle food in terms of nutrients, they are good raw in a salad or in the juicer. Utilized in Mexico and eastern countries, they use them in soups and stews as well as raw. Here are a couple of ideas for you to try:
