Dear Friends,

 

The first order of business is that we will be keeping our regular delivery schedule for this week.  As those of you that have been with us through the years know, 'holidays' wreck havoc on us because all our work has to be done by a schedule:  Monday's and Tuesday's are harvest days, Wednesday's are packing and deliveries, Thursday's are delivery days and so forth.  Everyone here has a necessary full day's work and trying to do jobs in one day instead of two makes it terribly hard on everyone.  So please understand and hope all have a safe and happy 4th of July.

 

Summer weather brings bounty of production and if for example, 'green beans' are overwhelming you, now is the time for blanching.  I'd say the #1 reason people cancel, is they say, 'I'm just not using everything and hate to throw it away!'. I do understand that cooking is 'work' and it takes time, but small farms need all the support that the understanding public can give.. here's directions for blanching and freezing for later:

 

Wash, trim tips and slice beans into sections.  Bring a pot of water to a boil and drop in 'green' beans.  These heirloom purple beans will turn green when cooked.  Cook about 3-4 minutes until al dente, not quite cooked.  Remove from heat, drop into a colander and toss with lots of ice until cooled.  The ice stops the cooking process.  Put into freezer bags or freezer container and viola! you'll have tasty crisp green beans ready to re-heat when bean season is over!
