Have you ever had a duck egg to eat? Our little group of ducks are almost 9 years old now and still patrolling the property from top to bottom every day rain or shine scrupulously searching out sow bugs, slugs and snails. They're not producing as many eggs now as the did but were still finding enough of them to be able to offer them to you. Each one is precious now. Duck eggs are larger than chicken eggs, the shell a little harder to crack and the yolk bright yellow and they are delicious. I made an omelet last night with 2 eggs, lightly steamed asparagus and Gruyere cheese (and a pat or two of real butter to cook in) and it was more than enough for Kendall and I. Scrumptious.
