Greetings!   

  

WOW!  Looks like a great year has already started for us!  Our wine cabinets, filling up with wines from France, Italy, the United States, and Japan, have been selected by Master Sommeliers Roberto Viernes and Patrick Okubo, and Chris Pearce (World Sake) and have been made, using sustainable, farming methods (see below).  All of our hard work of "spreading the word" about our foods via the Farmers' Markets, by giving out loads of free samples and introducing people each week to our foods are turning even the staunchest carnivores into buyers of our foods and to visiting our restaurant.

 

Events and concerts at the Blaisdell and the Convention Center, like "Wicked", Journey, Chicago, a recent World Peace Convention; Local and Japanese food writers and Multi-Media reporters, who have published articles, blogs, interviews, in newspapers, magazines, on TV, have brought throngs of people to fill our tables and chairs.  Just a couple of weeks ago, the word got out through a Japanese film clip about our "numbah one" food item the Living Lasagna, and our lasagnas sold out in the first hour of the KCC Farmers' Market.  (A Japanese film crew had interviewed & filmed us for half an hour last year at the Farmers' Market).  Last week, I brought 2 coolers of lasagnas and they all sold out again!  We've had to make adjustments in the ordering and production of our food.  Our Grab n Go Fridge in our restaurant has had to be constantly refilled each day as available. 

Our Grab n Go take-out foods are available as soon as a staffer who is knowledgable in the use of the iPad is present (around 9-10:00 am).  We used to have the Grab n Go deli-fridge and a cash register in our kitchen while construction was going on in the restaurant, and you could enter our kitchen to purchase stuff since we were not using the service counter area for the restaurant at that time. Our kitchen staff knew how to operate the cash register (a remnant from the old Licious Dishes at Dole Cannery).  But, now that the Grab n Go deli-fridge is in the restaurant, we only have the iPad connected to the new cash register, and so if you come to purchase Grab n Go during off-hours of our restaurant, you must call us from outside the restaurant if the doors are locked, and we will open the doors of the restaurant to let you in to check out the deli-fridge.  The Health Department rules do not allow for customers to enter our kitchen anymore, since the deli-fridge is in the restaurant.      
 
This past week, we started Staff Training, and tasting of some of the wines we carry.  MS Patrick Okubo graciously lead the introductory class, about correct service, and how to analyze the wines to pair with various types of our foods.  This week, we will be introducing our staff to the World of Sake wines, so we can better serve you.

Canella Brut Prosecco (Italian Sparkling Wine):  Founded in 1947 by Luciano Canella, Awarded a Gold Medal in 1994 @ University of Italy for the best Charmat method Sparkling Wine.  Robert Parker (Wine Advocate) gives it 89 points.  It is creamy, perfumed, with excellent overall balance.  The Wine Enthusiast Magazine describes it as yellow rose, soda, pears, peach, lean and crisp.  Sustainable farming methods.

 
Stone Cap Chardonnay (Goose Ridge Estate Vineyard, Columbia Valley, Washington State, USA):  Founded in 1998, the Monson family are the owners of the 1,600 acres of vineyards.  Winemakers, Kendall Mix (from Chateau Ste Michelle), Justin Michaud, Monson family.  Wine Spectator Magazine gives it 88 points describing it as green and yellow lime, lemon, apple, light and crisp.  Sustainable farming methods; using natural pest control.

 
Monferatto Rosso, Tunuta La Pergola (Blend of Red Wines, Italy): Monferatto Rosso Vineyard in Piedmont (with sand and limestone soil), Alessandra Bodda, winemaker and consultant Kermit Lynch, created this blend with 55% Barbera, 20% Bonarda, 15% Freisa, 10% Dolcetto.  Fermented in stainless steel for 10 months.  Kermit Lynch, an American with nearly 40 years of business with winemakers in France and Italy, was the first to champion the benefits of unfined (no eggs or bentonite added to remove suspended solids, like stems, etc. from the wines) and unfiltered (no contact with oak) wines to keep the true flavors of the "terroir" (soil), and the life of the land in the wines (probiotics).  Sustainable farming methods.  

 
Garnet Monterey Pinot Noir 2010 (Monterey, CA, Carneros Region, USA):  Debut 1983 Vintage by Alison Crowe, this estate-grown Pinot Noir in the cool, foggy weather from Monterey Bay gets enough heat to express full, forward fruit character like red and black fruits, berries, toasted hazelnuts, Chinese five spice, strawberry jam, with a long finish on the tongue and a scent of coffee and vanilla.  It's not a wine for your cellar.  It's a delicious "drink now" wine.  "Lutte Raisonnee (sustainable farming).

 
Black Stallion Cabernet 2010 (Oak Knoll District of Napa Valley, USA). Founded 2007, DFV Wines, owned by the Indelicato family, is located on the grounds of a historic equestrian center, where each of the varietals produced is handcrafted and carefully blended from small vineyard lots. Each lot is fermented and aged separately in the cellar until just prior to bottling to achieve wines of balance with layers of complex flavors. 88% cabernet sauvignon, 5% merlot, 5% petit syrah, 2% cabernet franc. Sustainable farming methods.

Maca, a root plant from the cruciferous vegetable family, may affect the thyroid (which directs the thyroid hormone into blood cells, throughout the body when operating optimally) and may not be good for those with hypothyroidism.  
Spirulina and Chlorella:  Dr. Michael Gregor (www.veganmd.org) who reads 300 of the latest studies each year, reported that the dark green and dark blue algae contain neurotoxins found in the brain of alzheimers patients.

Superfood: Chia Seed

Chia is the richest non-marine whole food source of Omega-3 and dietary fiber currently known to man.

 

Omega-3 fatty acids can normalize blood pressure and bad cholesterol levels, while helping promote healthy heart and blood vessels.  With six times more calcium than milk, and with greater amounts of high-quality protein than the one found in soy, Chia also helps strengthen muscles and bones.  Chia can absorb a whopping 12+ times its weight in water - flax seed only absorbs 6-8 times its weight. Chia´s insoluble fiber reduces digestive transit time and removes toxins as it passes through the digestive tract... while reducing blood sugar levels after meals inhibits the appetite, thus making it the perfect food for healthy, effective weight loss. - What are raw chocolate nibs?

Cacao beans are the seed within a fruit, they are botanically a nut. All the antioxidant value, mineral benefits, neurotransmitter rejuvenating properties, and overall health-giving qualities of chocolate are found in raw Cacao!  The special properties of cacao are destroyed or lost by cooking, refining, and processing.

- Does Cacao (raw chocolate nibs) Contain Caffeine?  

Contrary to popular opinion, cacao is a poor source of caffeine. A typical sample of raw chocolate nibs or cacao beans will yield anywhere from zero caffeine to 1,000 parts per million of caffeine (less than 1/20th of the caffeine present in coffee). In February 2008, Dr. Gabriel Cousens discovered in clinical tests on healthy people that Cacao does not elevate blood sugar in the same way as a caffeine containing food or beverage. In fact, Dr. Cousens found that cacao has less of an effect on blood sugar than nearly any other food.  There is no evidence to implicate cacao bean consumption with obesity. Cacao is actually one of the great weight loss foods because... it contains the minerals and molecules that shut off the appetite.

Flax Seed is High in Fiber... mainly responsible for the cholesterol-lowering effects of flax. Fiber in the diet also helps stabilize blood sugar, and, of course, promotes proper functioning of the intestines.  Flax seed is high in phytochemicals, including many antioxidants. It is perhaps our best source of lignans, which convert in our intestines to substances that tend to balance female hormones. There is evidence that lignans may promote fertility, reduce peri-menopausal symptoms, and possibly help prevent breast cancer. In addition, lignans may help prevent Type 2 diabetes.

 

Superfood: Hemp Seed

Hemp is a high protein seed containing all 20 amino acids, including the 9 essential amino acids (EAAs) our bodies cannot produce.. It also has high amounts of fatty acids and fiber as well as containing vitamin E and trace minerals. It has a balanced ratio of omega 3 to 6 fats at around a three to one ratio. 

 

Hemp seed protein did not cause bloating or gas, like some of their whey, or other protein shakes did...unlike soy which has super high amounts of phytic acid (that anti-nutrient that prevents us from absorbing minerals), hemp seed doesn't contain phytic acid.  A rich source of phytonutrients, the disease-protective element of plants with benefits protecting your immunity, bloodstream, tissues, cells, skin, organs and mitochondria.

 

Superfood: Coconut Water

Coconut water is the juice of young coconut ...clear, sweet, and sterile and composed of sugars, vitamins, minerals, electrolytes, enzymes, amino acids, cytokine, and phyto-hormones in coconut water showed significant anti-ageing, anti-carcinogenic, and anti-thrombotic effects.  Coconut water is composed of many naturally occurring bioactive enzymes... (that) aid in digestion and metabolism.  

 

With minerals like calcium, iron, manganese, magnesium, and zinc, its water is also a very good source of B-complex vitamins such as riboflavin, niacin, thiamin, pyridoxine, and folates.
