As husband and wife co-owners of Sunrise Orchards, an apple farm in Cornwall, Vermont, they don't worry about overbearing bosses as much as a late frost, and the rows of the 60,000 apple trees that make up the farm surely beat a sterile cubicle for a workspace. Vermont Apple Cranberry Crisp

1 pound of apples (4-5 cups) (peeled [optional], cored, sliced)
2 1/2 cups of cranberries
3/4 cups of sugar
1/2 cup all purpose flour
1/2 cup rolled oats
3/4 tsp cinnamon
3/4 tsp nutmeg
2 Tbsp pure maple syrup
5 Tbsp cold, unsalted butter, cut into small pieces
- Preheat over to 375 degrees. Butter an 8 x 8 pan and set aside. (I use a deep dish pie plate or casserole)
- Combine the apples, cranberries and sugar in a large bowl and spread into prepared pan.
- Combine flour, oats, cinnamon, nutmeg. Stir in the syrup and cut in butter until coarse meal forms. Spoon over fruit to cover.
- Bake in the oven until juices are bubbling, apples are tender, and the top is golden brown, about 30 minutes.
