Locally made fresh salsas quick way to spice up any table!     
      
  A long-time local favorite at Ranch Foods Direct, the fresh Baja Gourmet Salsas are made and delivered weekly by Colorado Springs' own Elvia Sandoval Caldwell, left.

As the name implies, her salsa line reflects flavors that are characteristic of her native homeland, Mexico's Baja peninsula. In particular, she uses a light touch with the cilantro, a strong herb which can be polarizing. (Some love it but others do not.)

Elvia recently took a moment to explain what makes her various salsa products unique, how she recommends using them and how she incorporates them in her own cooking.  Find her products in the cooler along the store's east wall. 
 

FIRE ROASTED:
This is her most popular salsa and also one of the most traditional. She recommends using it for tacos, carne asada or fajitas.

GUAJILLO:
This salsa has a unique smoky flavor but also a distinct texture: it's very smooth, with no pronounced chunkiness. "My husband loves it over scrambled eggs," she says. The smooth texture also makes it ideal for adding to chili, soups or stews. "It really has the rich, smoky flavor of this particular chile," she explains.

MANGO:
"We call this one our summer salsa. It's great with grilled meats and veggies." It's also an obvious choice for fish (or fish tacos.) In that case, consider mixing it with the pico di gallo: "They don't clash because tomatoes are actually a fruit. And both are made with red onion, which means they share that little hint of sweetness."

PICO DE GALLO:
"I like the pico for nachos. It's fresh and crunchy and has a little more onion than some of my other salsas."

Salsa is such a versatile cooking ingredient that it should never, ever go to waste, she adds. "If it's getting close to its expiration date, I use it as a sauce for cooking chicken breasts or I make a chicken tortilla soup, something like that," she says.

WHAT IS YOUR PARTY FOOD GO-TO:
The sausage! I like to do a post-holiday brunch and invite all the people I wanted to see but didn't get to see over the holidays. I just do something simple, like pancakes and sausage and some kind of vegetable. I do advise ordering twice as much sausage as you think you'll need! When I did this last year, everybody wanted more sausage and they were all asking me where I got it! Everyone loved it.

IS THE SAUSAGE YOUR FAVORITE RFD PRODUCT? Everything's really great. For my favorite I would probably pick the New York strip steak. But yes, the sausage is an item that's convenient and affordable. Having healthy protein I can make during the week before school is a wonderful thing.
