Merry Christmas and a Happy New Year!  As the year 2012 comes to a close many of us will reflect upon our accomplishments, goals and achievements, as well as our disappointments. We will begin the new year setting new goals in which to aspire.  In setting these goals just remember this:  leave your disappointments behind; they will only hold you down, and relish in your achievements for they are building blocks to your future.

 

Here at Dreamchasers we have many new goals set and exciting things coming for 2013 and look forward to sharing these with you!

WEEKLY RUNNING TIP

Winter Hydration Tip:  

Hydration is water plus electrolytes. Dehydration in winter can lead to hypothermia. Sweat evaporates quickly in cold/dry air so drinking fluids can become an after-thought.
Winter running is an amazing time in Teton Valley. During the winter it is still important to hydrate. While on the snowy trail, you can supplement your water ration by digging down deep to place pristine snow into your water bottle. Mixed with a little liquid and an electrolyte tab, you have made the ultimate mountain slush puppy! Avoid collecting discolored snow or digging in areas that are suspect to pollution.

Mediterranean Orange Almond Cake

This simple cake from Chef Pauli Halstead is very moist and dense. It's gluten free and the eggs and almonds make it a high-protein breakfast or snack cake. Serve with whipped cream and raspberries for garish.

2 organic navel oranges
6 eggs
1 1/2 cups of very finely ground almonds (use food processor or blender)
1/2 cup raw honey
1 teaspoon baking powder
Pinch of sea salt

Preheat over to 350 degrees F. Oil and flour a 9-inch spring form pan. Wash the oranges then place them in a pot and cover with water. Cover the pot with a lid and boil gently 45 minutes to an hour. The oranges should be very soft when done. Drain, cool, and then cut the oranges into large pieces, removing any seeds. Place with the honey in a food processor and grind until very fine. With an electric mixer, beat the eggs until light and frothy. (also can use hand whisk) Fold in ground almonds until well combined and then fold in the orange mixture. Pour the batter into the prepared pan and bake about 1 hour. Remove from oven and cool on a rack. Serves 8
