 Kamut Tortillas

Carol used this recipe for making chicken enchiladas and said it was delicious. Great use of "safe wheat!"  Carol said to check out Kamut.com for more recipes using Kamut.

Ingredients
 
3 cups Kamut (ancient grain whole wheat flour)
1/4 t baking powder
1 t salt
1/4 cup olive oil (it might be fun to experiment with coconut oil too)
1 cup water

Directions
 
Combine all but the water in a food processor until it resembles corn meal.
 
Pour the water through the feeding tube and knead for a few minutes.
 
Roll into a ball and let it stand for 10 minutes covered. Roll into 10 small balls and let them stand covered for 10 minutes. Roll with rolling pin (or use a tortilla press) very thin and cook on a hot griddle a minute on each side.

I have to say I'm sorry! We're late for this month's eZine issue--it should have been out to you this morning and here it is nearly midnight...something about having fried-grandma brain! Ha! Larry and I are in Dallas with 5 of the greatest grandkids anyone could ever ask for. We are taking care of them while their parents are on a anniversary get-a-way. We've been so caught up in all the fun and activities we forgot what day it was!

 

So, here we are a bit late but hope in this issue you find healthy living tips and tidbits that can be beneficial to you. Be sure to read the "And Science Marches On" segment for more follow-up from last month's issue on magnesium--we had many responses to it!

Fortification With Iron 
  

When you see "fortified with iron" on prepared food (packaged, boxed, bagged) it means they have added little, filed shavings of metal "iron"! How much metal do you think our bodies actually absorb? But this is how we get our required daily intake of iron...even in our baby cereals.

 

Try an experiment and pour a few cups of baby cereal in a blender, add water and blend. Seal the mixture in a large ziplock bag, pass a big magnet over it and gather up the metal shavings! The picture in the top right corner is a food particle of baby cereal showing the iron shavings.

 

It really is shocking what has been done to our food over the  past 40 or so years...right under our noses. We need to be aware so we can do what we can to protect ourselves and our families. Make your own baby food. And, for yourself, eat whole, real food and avoid packaged, processed food.

Pesticides Destroy Organisms That Provide Nutrients to Plants

 

Experts link vitamin and mineral depletion in the soil to use of pesticides and fertilizers. Today's soils produce vegetation with dramatically reduced vitamin and mineral content. Though it was believed initially that pesticides would work simply to rid farmland of unwanted weeds and pests, it was soon learned that their use was causing irreversible damage. Vitamin-fixing bacteria in the soil, as well as earthworms, natural soil aerators and fertilizers, were being first reduced and then extinguished from American crop land. Without this living environment, soils produce vegetation with dramatically reduced vitamin and mineral content.

One of the joys of being a grandma is spending one-on-one time with little ones! I also love spending time with the bigger ones too as they grow up so fast that before you know it they aren't little any longer.

Today our oldest grandson stood before the Board of Review and presented himself for his Eagle Scout award. I couldn't be more proud of this grandson! He did such a wonderful job and I was so glad I could be a part of helping him to be prepared as his parents are out of town. Attaching merit badges to his sash and ironing his uniform was fun while he practiced the required memorizations. Where does time go? But looking back I can see we have a great relationship because it has been nurtured all of his life!
