 Peanut Butter Chocolate Chip Cookie Bites
 
  

Ingredients: 

 

1 1/4 cups canned chickpeas, well-rinsed and patted dry with a paper towel

 2 teaspoons vanilla extract

1/2 cup + 2 tablespoons natural peanut butter

 1/4 cup raw honey

1 teaspoon baking powder

a pinch of salt if your peanut butter doesn't have salt in it

 1/2 cup dark, mini chocolate chips

 

Directions

 

Preheat your oven to 350°F.

 

Combine all the ingredients, except for the chocolate chips, in a food processor and process until very smooth.

 

Make sure to scrape the sides and the top to get the little chunks of chickpeas and process again until they're combined.

 

Put in the chocolate chips and stir it if you can, or pulse it once or twice. The mixture will be very thick and sticky.

 

With wet hands, form into 1 1/2 inch balls. Place onto a piece of parchment paper. Press down slightly on the balls. 

 

Bake for about 10 minutes.

 

This recipe makes approximately fourteen 1 and a 1/2 inch cookie balls. It's important to use real peanut butter otherwise they will turn out very oily.

Magnesium From Food


Food sources containing magnesium used to be consumed more often in the American diet but due to industrialized agriculture and changes in the way Americans eat, approximately 75 percent of the population consumes a diet insufficient in magnesium.

  

The foods magnesium is found in include:

  • Beans and nuts
  • Whole grains such as brown rice and whole wheat bread (ancient grains only)
  • Green leafy vegetables

Since a large percentage of the American population does not eat the foods listed above, it is no wonder that folks are not reaching the minimum levels for magnesium.

 

Supplementation becomes necessary but make sure you get it from plant-based sources as the absorption rates are much higher than from rocks and salts. Inorganic forms of magnesium are swallowed and pass through the digestive tract. Tested levels of absorption of oral magnesium supplements like magnesium oxide can be as low as only 4% absorption.

What's Natural About Being Synthetic 
  

There is so much confusion out there when it comes to deciphering what's really natural in your supplements and what's synthetic. Finding what's natural for our bodies is difficult because the marketing deception is rampant. Most claim "natural" on the containers and yet what's in most containers is not what we should be putting in our bodies! If you know what to look for and where to listen, you can decipher it. Help yourself find what actually IS utilized by the body. It is clear from the many studies which have been done that synthetics are not recognized by the body. So, at the very least, you are throwing your money away and, at the very most, you are harming yourself.

Missing Magnesium
  

Magnesium content in vegetables has seen declines from 25-80% since pre-1950 figures, and typical grain refining processes for bread and pasta remove 80-95% of total magnesium.

 

There are three basic reasons we can't get enough magnesium in the diet:

  1. Reduced levels due to processing.
  2. Reduced levels due to soil conditions.
  3. Changes in eating habits.
Processed Foods

 

Food processing essentially separates plant food sources into components, both for ease of use and to reduce spoilage. In processing grain into white flour, the bran and the germ are removed. In processing seeds and nuts into refined oils, the oils are super-heated and the magnesium content is strained out or removed through the use of chemical additives. It is these removed portions of the plant that often contain the highest amount of minerals such as magnesium.

  • Refined oils remove all magnesium. The result of oil refining is a zero magnesium product. Safflower seeds, for example, contain 680 mg of magnesium per 1,000 calories. Safflower oil lacks magnesium entirely.
  • Refined grains remove 80-97 percent of magnesium. At least twenty nutrients are removed in refining flour. And only five are put back in when refined flours are "enriched". Magnesium is not one of them.
  • Refined sugar removes all magnesium. Molasses, which is removed from the sugar cane in refinement, contains up to 25% of the RDA for magnesium in one tablespoon. Sugar has none.
Where Do Foods Containing Magnesium Come From? ...From Soil Containing Magnesium

 

It is well known among experts that the quality of our crops is decreasing. In 2004, the Journal of the American College of Nutrition released a study which compared nutrient content of crops at that time with 1950 levels. Declines were found as high as 40%.

 

Dr. Donald Davis, lead researcher for the study, offers one explanation for the dramatic declines:

During those 50 years, there have been intensive efforts to breed new varieties that have greater yield, or resistance to pests, or adaptability to different climates. But the dominant effort is for higher yields. Emerging evidence suggests that when you select for yield, crops grow bigger and faster, but they don't necessarily have the ability to make or uptake nutrients at the same, faster rate."   

Declines are not limited to vegetable crops. A study by David Thomas published in Nutrition and Health examined average nutritional content of foods across food categories using the UK government's Composition of Food tables.

Thomas found consistent declines in magnesium content:

  • Vegetables declined by 24% between 1940 and 1991.
  • Fruit declined by 17%.
  • Meat declined by 15%.
  • Cheeses declined by 26%.

Our crops' lack of magnesium and other nutrients has a direct impact on the ability to achieve sufficient magnesium in the diet. Ultimately, even those who seek out a balanced high magnesium diet with magnesium-rich vegetables and whole grains may not be able to rely upon food alone to provide sufficient magnesium levels. 

 

Next month I will look at how pesticides and modern farming practices decrease available nutrients like magnesium in our food.

The picture shown here doesn't even look like it could be real but I took it while walking on the path heading to the old working windmills. I was torn as to which picture I would post as truly I have so many that are unreal!

 

Healthy relationships begin with sharing and showing kindness. Going above and beyond what is needed and or expected is one way to solidify friendships. We have felt that with these good people here in Amsterdam as well as each city we've been blessed to be in! The lovely dinners, conversations, notes and gifts of appreciation along with every handshake, kiss, hug, and smile have endeared us to this beautiful part of the world!
