 Raw Cranberry Sauce
 

 

At Thanksgiving I found myself without cranberry sauce to enjoy with the turkey! I simply forgot to be sure I had it. So, for Christmas, that is not going to happen! In fact, I'm going to try to make it myself so I can enjoy a "raw" cranberry sauce. Maybe you'd like to try it also? Let me know how it goes if you do!

 

Ingredients: 

 

1 1/4 cups frozen cranberries

1 cup freshly squeezed orange juice

1 teaspoon orange zest

2 Medjool dates

Pinch of sea salt

 

If you don't have oranges on hand or just prefer to omit the flavor, replace the orange juice with water, (you may want to add another date for the sweetness).

 

Preparation:

 

1. Soak 1 cup of the cranberries in the orange juice for at least one hour, or up to overnight in the refrigerator. Dice the remaining 1/4 cup cranberries and set aside.

 

2. Blend the soaked cranberries along with all of the remaining ingredients on high speed for 20 seconds or until a slightly chunky paste forms. Transfer to a bowl and stir in the diced cranberries. Refrigerate for at least 20 minutes before serving to set.

The Committed Heart
  

Larry and I listened to a book on tape while traveling home through bitter cold (18 below zero) in the Colorado mountains. It made the time pass and was a great "read." Be sure to check out the Book Pick below to learn more about it.

 

I love how the author, Andy Andrews used a true life story from when he was 19 and homeless, after the death of both of his parents. He was able to create a beautiful story which teaches us many, many truths. One of my favorites:

 

"Most people fail at whatever they attempt because of an undecided heart. Should I? Should I not? Go forward? Go back? Success requires the emotional balance of a committed heart. When confronted with a challenge, the committed heart will search for a solution. The undecided heart searches for an escape. A committed heart does not wait for conditions to be exactly right. Why? Because conditions are never exactly right. Indecision limits the Almighty and His ability to perform miracles in your life. He has put the vision in you--proceed. To wait, to wonder, to doubt, to be indecisive is to disobey God."

 

I do believe we all have the ability to move forward and make our lives beautiful, fulfilling and rich in every aspect. That doesn't mean we avoid hardship and trial. That's life. But, it does mean we choose to rise above it and be all we can be in spite of it. And, in fact, we grow becoming better versions of ourselves, because of it. This is our challenge and it makes for a beautiful life--the life God wants for each of us.

Making Margarine Step By Step

 

 

Step 1: Use cheap, poor quality vegetable oils like corn, cottonseed, soybean, safflower, or canola. These oils become rancid due to the high temperature used to extract the oil from the seeds and they come from the big four Genetically Modified (GMO) crops - soy, corn, canola, and cotton. The last bit of oil is removed with hexane (a solvent known to cause cancer) but hopefully without leaving any "trace" of it in the oil.

Step 2: Steam clean the raw oils. Of course, this removes any natural vitamins and antioxidants but hopefully gets rid of the hexane and pesticides.

Step 3: Mix the oils with finely ground nickel (highly toxic to humans) but necessary to catalyze the chemical reaction during hydrogenation.

Step 4: Hydrogen gas is inserted into the oils under high temperature and pressure in a reactor which turns the oil from a liquid to a semi-solid (partially hydrogenated). Trans fats are formed during this process. If the oil is fully hydrogenated, it would turn into a hard solid that cannot be eaten.

Step 5: It is smelly, lumpy, grey grease when it comes out of the partially hydrogenated process and emulsifiers (like soaps) are mixed in to remove the lumps.

Step 6: The mixture is steam cleaned (again) to remove the odor of chemicals.

Step 7: The mixture is bleached to get rid of the grey color.

Step 8: Synthetic vitamins and artificial flavors are mixed in and it is dyed yellow otherwise it would look a pasty white.

Step 9: Promote to the public as a healthy food.

Merry Christmas everyone! Such a beautiful time of year. While I know there are painful situations all over the world and those who are sad for many reasons I still hope we can find how much there is to be grateful for. Just tonight with our balmy 16 degrees here in Colorado Springs, I saw how cold the "bell-ringer" looked out in front of the grocery store. It is a lonely job, so I stopped at a local coffee shop and got a hot cup of cocoa and brought it to him with the change in my purse for the bucket. I wished him a Merry Christmas...grateful for my toasty, warm coat and car! I hope we all can find a simple way to lift a burden or brighten someone's day this Christmas season. And, we wish for you all the Merriest of Christmases!

Soaking Nuts and Enzyme Inhibitors 
  

My friend, Raw Chef Wendy posted this interesting thing about soaking nuts on her blog. I was also blessed recently to eat her yummy food for two days and nuts were among the snacks. I LOVE nuts but even loved the soaked ones better! You'll have to try it after reading what she had to say about it here:

 

"Did you know that eating nuts is good for you, but soaking them and releasing the enzyme inhibitors is even better? Some people really struggle eating nuts because they feel sick or bloated afterwards. The inhibitors that are around the nut, to help it store longer, are what cause that. For the harder nuts (like almonds), soak 8 hours or overnight and for the softer nuts (like cashews), soak about 20 minutes. The flavor is sweet, not bitter, and they are so much easier to digest. Try it and see what you think! You can eat them wet or dry them in your dehydrator or simply out in the air on a paper towel on a plate all day or night. Do be sure to cover so bugs won't get to them. You can also add organic sugar and cinnamon or other seasonings to the wet nuts and mix them to coat. Then, lay them out to dry. These make a delicious, sweet treat for your family. Put the dried nuts in a bowl and watch them be devoured before your eyes. They are a great after-school or party snack."

The Healthy Choice: Margarine or Butter?
  
  
Butter. Why is there a debate? Since the early 1990s, the dangers of trans fats and hydrogenated oils used in margarine have been documented in countless scientific studies. Trans fats are known to cause heart disease, obesity, cancer, diabetes and other degenerative diseases. In addition, these substances are linked to low birth weight in newborns and infertility.
 
Saturated Fats Versus Trans Fats
 
The reason why people are confused is because of the deeply entrenched myth that saturated fats are harmful. They are not. You need these fats within your body to do good things. Of course, too much of a good thing is not good but the main point is when scientists go back to all those studies that made saturated fat the bad guy, guess what? When the researchers take into account the real culprit - trans fats - it turns out that saturated fats do not cause any serious health concerns. In other words, saturated fats have been blamed for decades for what was really caused by trans fats! But that message has had a hard time getting out because there are vested interests in promulgating the deception to sustain the market for these products which were developed as an alternative for butter.

Processed Food Versus Natural
 
Most people are unaware of how margarine is made. Just investigating these processing/production details should convince you that the natural product, butter, is definitely the healthier choice. Typically margarine is made from cheap, poor quality oils that are rancid because the oils have been extracted from seeds using high temperature (which causes the rancidity). Some of the oils, like cottonseed oil are not suitable for human consumption because they contain naturally toxic substances. Most of the oils come from seeds that are genetically modified (GM or GMO).
 
Partially Hydrogenated
 
A hydrogenation process is used where hydrogen molecules are forced into oil molecules via high heat, high pressure, and toxic catalysts like nickel. At the end of this process, margarine is a grey, smelly blob. It is then bleached and deodorized, artificially flavored and dyed yellow to look like butter. It is polyunsaturated at this point but only humans are foolish enough to eat it - rats and cockroaches won't touch the stuff.
 
Real Food
 
Natural foods (foods you can trace their ingredients to living sources in one or two steps) have stood the test of time generation after generation. Man-made, altered food (known as "edible food-like substances") have proven to be less than helpful and often harmful. So, when faced with a question as to what to eat, it is always wise to choose whole foods. Real food is so complex, we still don't know how all of the components work or even what they all are. We need to be very careful with efforts to modify our food supply. We don't adequately test altered foods before allowing them to enter into our food supply. We don't fully understand the ramifications until years later and even generations later. Caution is imperative because eating food is the most intimate thing you ever do. What you eat becomes you - for good or bad!

 Christmas Decorating 

 

Returning home to Colorado after being on the road for a long time was wonderful. We will be home alone for Christmas which brings a pang to my heart...but we are determined to make the most of it! We had a fun "date night" pulling out the decorations and setting it all up while listening to beloved Christmas songs. While this isn't an activity my husband really enjoys (as I do), he did it for ME anyway. That means a lot and warmed my heart knowing I wasn't by myself doing it. In fact, it reminded me of 35 years ago when we went to his parent's home for the first time and were assigned the tree decorating task! We did it together then...and last night too...JOY! That's what it makes me feel...simple JOY. Thanks honey!
