 Cauliflower Goat Cheese "Potatoes" 
  

 

Ingredients:

 

1 head cauliflower cut up into florets
2 cups almond milk (of course you can use heavy cream as most recipes call for)
1/2 pound grated Monterey Jack cheese (can try almond cheese)
2 cups fresh grated Parmesan
6 oz goat cheese cut into small pieces
salt and pepper to taste

 

Directions:

 

Layer the florets with the milk and the 3 cheeses in a medium casserole dish. Season with salt and pepper. Roast for 20-30 minutes or until the cauliflower is soft and the sauce has thickened slightly. Take out of the oven and let rest for 10 minutes before serving.

The Milk Myth:

Why Milk Is Not a Good Source of Calcium

 

 

The milk myth has spread around the world based on the flawed belief that this protein and calcium-rich drink is essential to support good bone health. It is easy to understand that the confusion about milk's imaginary benefits stems from the fact that it contains calcium - about 300 mg per cup.
 

However, many scientific studies have shown detrimental health effects directly linked to milk consumption. The most surprising finding is that despite barely absorbing the calcium in cow's milk (especially if pasteurized), it actually increases calcium loss from the bones! How ironic!

 

Here is what happens. Like all animal protein, milk acidifies the body pH level. This triggers a biological correction. Calcium is an excellent acid neutralizer and the biggest storage of calcium in the body is in your bones. So, the very same calcium that our bones need to stay strong is utilized to neutralize the acidifying effect of milk!

 

Once calcium is pulled out of the bones, it leaves the body via the urine, so the surprising net result after this is an actual calcium deficit.

  
We have had proof of this all along in scientific studies. Amy Lanou Ph.D., nutrition director for the Physicians Committee for Responsible Medicine in Washington, D.C., states,
  

"The countries with the highest rates of osteoporosis are the ones where people drink the most milk and have the most calcium in their diets. The connection between calcium consumption and bone health is actually very weak, and the connection between dairy consumption and bone health is almost nonexistent."  

 

So, if you must have milk, our favorite milk substitute is almond milk. It is naturally alkalizing, delicious, and tastes very similar to cow's milk. You can even cook with it.

 

Science is once again showing that a primarily plant-based diet proves to be a much healthier alternative than our heavily promoted meat and dairy standard fare.

Health Benefits of Gratitude 
  
There has been a lot of research done on the health benefits of gratitude. We don't typically think, "boy, it will be a healthy thing if I say 'thank you' to so and so..." but, it's one of those great side benefits because we show that appreciation.

 

Two psychologists, Dr. Robert Emmons of the University of California and Dr. Michael McCullough of the University of Miami have done much of the research on gratitude. One of their studies simply asked participants to write a few sentences each week in a journal. One group focused on things they were grateful for during the week and the other group focused on the sources of aggravation they experienced during the week. After 10 weeks, those who wrote about gratitude were more optimistic and felt better about their lives. They also exercised more and had fewer doctor visits than the group who focused on the aggravations in their lives.

 

Other studies have looked at how gratitude can improve relationships. Couples who took time to express gratitude for their spouse not only felt more positive toward the other person but also felt more comfortable expressing concerns about their relationship and both were more able to discuss these concerns in a spirit of co-operation. Studies have also been conducted in the work environment. Managers who remember to say, "thank you" find that their employees feel motivated to work harder.
  
Yesterday we visited one of our granddaughter's middle school as they spoiled us with a special, Veteran's Day luncheon honoring her PapaLaw and others who served in the armed forces. Remembering the sacrifices of those who stood in harm's way helps us feel gratitude for our freedoms.

 

Expressing gratitude is such a simple thing. When we have a spirit of gratitude it permeates all aspects of our lives...this is a very healthy thing!

Inorganic Calcium Supplements
Have No Benefit
  
  
The U.S. Preventive Services Task Force published startling news in the 25 February, 2013 online version of the Annals of Internal Medicine. Women have been told for years that if they don't take calcium supplements, they're at risk of crippling hip fractures in old age. But the findings of this major government panel says there is no evidence that taking calcium supplements reduce the risk of fractures for most people. This applies to postmenopausal women who represented the main group targeted for calcium supplements.
  
The task force reported that taking up to 1,000 milligrams per day of inorganic calcium supplements and up to 400 international units of vitamin D daily did nothing to prevent fractures in healthy people but actually increased the risk of kidney stones 17%. A 2011 Institute of Medicine (IOM) report had recommended that postmenopausal women take 1,200 milligrams of calcium a day.
  
Some women are "taking three, four, five calcium pills a day," says Cliff Rosen, an author of the 2011 IOM report, and an osteoporosis researcher at the Maine Medical Center Research Institute. Taking that much can up the risk of kidney stones 17 percent, he says. And there is also evidence that calcium supplements may contribute to heart disease.
  
A study published in the online version of the British Medical Journal (Feb 12, 2012) documented that calcium supplements actually double the risk of heart disease. We sometimes believe that "more" is "better." What is the role of too much calcium? What is calcification and how does it relate to hardening of the arteries?
  
The calcium in food doesn't seem to cause those problems, Rosen says. So, the best advice for everyone, from teens to their grandmas, is to get calcium from food.
  
These findings emphasize the importance of ensuring what you supplement is plant-based. The bioavailability of calcium from plants is tens of times greater than trying to suck calcium from an inorganic rock. And now we have further evidence that an inorganic form of calcium does not deliver the benefits we see from natural, plant-based forms of calcium. In fact, it can cause harm. See "Knowledge is Power" for why milk is not a good source of calcium.

 Quilting Together 

 

Recently, Larry and I had the sweet opportunity to visit with my beloved aunt in Portland, OR. She is now in an assisted living home. I was delighted to see her room full of color and beautiful, flowering, potted plants. Of course, there was a pang as I knew I would never again walk into the home she so lovingly greeted me in for so many years!

When my children were growing up, it was the pleasure of my life to get to go visit her. For 10 years in a row, she taught me to quilt. For 10 glorious days each year, we worked together as she tutored me so I could learn to piece together quilts. That was a part of my life for which I will always cherish and feel such gratitude. She is not capable of teaching anyone to quilt now. I'm so thankful I did not wait to learn from her...not just the learning of quilt making but also the many life lessons I learned from her too. It was a real spoil for me to have that time away from my busy life. Everything slowed down for 10 days and I truly felt cared for and nurtured!

She is my beloved aunt and I am blessed because of her. I'm now glad to pass on her love of quilting to my kids and grandkids too. This is the best kind of multi-generational, relationship building!
