 Herb Roasted Eggplant

Ingredients
  
1 medium to large egg eggplant--cut in one inch cubes
4 lg Roma tomatoes--quarter lengthwise
3 T olive oil
2 T sherry wine vinegar
2 T plus 2t. chopped fresh oregano
1/2 cup crumbled feta cheese
Optional:
1 lg onion (red or sweet white) or shallots
1 red or orange pepper
Kalamata olives to taste
Garlic 6 whole cloves or to taste
Quinoa (cook according to directions on package)
 
Directions
 
Preheat oven 450 degrees
Toss vegetables in oil and vinegar (if you add optional vegetables then increase oil and vinegar)
Sprinkle with 2T. Oregano
Salt and pepper to taste

Roast until eggplant is tender stirring occasionally about 20-25 mins
Transfer vegetables to serving platter
Sprinkle with feta and 2 t. Oregano
Serve on a bed of quinoa

Concerns With Synthetic Ascorbic Acid
 
Most people have heard of two time Nobel Prize winner, Linus Pauling, who advocated large doses of ascorbic acid for colds. However, some recent studies infer that ascorbic acid acts more like an antihistamine drug. It interferes and disrupts the phase of inflammation and repair process that fences off and isolates injured tissues. This triggers an immune system response to send more neutrophils to the area and thus the symptoms of the cold appear to reduce. Unfortunately, while the symptoms are improved, the inflammation process is disturbed from its normal process of eliminating the dead or damaged tissue to start cell replacement so normal repair is hindered.
 
Other studies have
demonstrated that ascorbic acid does not prevent colds from occurring. It will reduce the severity and duration by interfering with the natural response of the body to heal. One study demonstrated that doses of 500 mg a day of ascorbic acid increase the incidence of arterial plaque buildup while another study indicated that gallstones are more likely to appear in those taking synthetic vitamin C (ascorbic acid). Rutin and bioflavanoid components of vitamin C complex (not the ascorbic acid) are important in stopping capillary hemorrhages. Factor K helps with clotting and Factor J helps with the oxygen carrying capacity of the blood. 
  
Ascorbic Acid in the Body
  
If you put 100 mg of ascorbic acid in the body, within a few hours over 90% of it will be excreted in the urine. If you mega dose that amount and put 10 times more to account for the 90% loss, you will cause diarrhea. When scientists looked for a better way to get the ascorbic acid to stay in the body, they found that attaching it to another molecule eliminated the problem with diarrhea. No one ever asked the question whether it was a good thing for that synthetic vitamin C to stay in the body longer!
  
Another interesting statistic is that the body will absorb close to 100% of the vitamin C consumed as part of whole food but barely 10% of the "stripped down" ascorbic acid is ever absorbed. While we don't know all the ramifications, we do see evidence that the body prefers natural vitamin C (vitamin C complex) as opposed to the synthetic version (ascorbic acid). We are also beginning to see scientific evidence that the synthetic version does not convey the benefits the whole food version provides and may actually be harmful.

Eggplant 
  
 

 

Eggplant is a summer vegetable although it is really available year round. This is one vegetable I haven't really ever cooked or eaten much of although I did feature an eggplant hummus recipe in this eZine one time which I did like! I got a recipe submitted by my dear friend, Linda, so I wanted to re-visit the eggplant. Be sure to see this recipe and try it yourself.

 

The eggplant's texture varies significantly depending on how it is cooked, how much oil is used and when it is harvested. If the plant is overly mature the seeds will be much more developed which make them bitter. Choose smaller firm fruits as that's a sign of youth and freshness. Eggplants absorb flavors and soak up oil like a sponge so be careful with this as it changes the flavor and texture quickly. It's best to grill, pan fry or roast eggplants and they pair nicely with other summer vegetables such as tomatoes, squashes and peppers.

Vitamin C Versus Ascorbic Acid
  
Most people think vitamin C is the same thing as ascorbic acid. It is not. According to Dr. Tim O'Shea, ascorbic acid is an isolate, a fraction, a distillate of naturally occurring vitamin C complex.   Ascorbic acid represents only 5% of the vitamin C complex molecule. In addition to ascorbic acid, vitamin C complex includes rutin (also known as vitamin P), bioflavonoids, Factor K, Factor J, Factor P, Tyrosinase, Ascorbinogen, and mineral co-factors which must be available in proper amounts. If any of these parts are missing, then there is no vitamin C complex which means there is no vitamin C activity.  

  

When only some of these ingredients are present, the body is forced to draw on its own stores to make up for the ones missing. Only then will vitamin C activity take place, provided that all other conditions and co-factors are present. This is why supplementing with a synthetic form of vitamin C can actually deplete your body of micronutrients as the body is trying to fill in for the missing ingredients.

  

Ascorbic acid is described merely as the "antioxidant wrapper" portion of vitamin C. Ascorbic acid protects the other functional parts of the vitamin from rapid oxidation or breakdown.

 

"Fake" Vitamin C
 
Over 90% of ascorbic acid production in the United States is manufactured at a facility in Nutley, New Jersey, owned by Hoffman-LaRoche, one of the world's biggest drug manufacturers. Ascorbic acid is made there from a process involving cornstarch and volatile acids. Most U.S. vitamin companies buy the bulk ascorbic acid from this single facility.   After purchase, each company makes its own labels, its own claims, and its own formulations. Each company claims to have the superior form of vitamin C even though it all comes from the same place and it's really not vitamin C at all!
 
The ascorbic acid purchased at the grocery store, thinking you are buying the same Vitamin C that you would get from acerola berries, is just a chemical copy of naturally occurring ascorbic acid. And this ascorbic acid is still only a fraction (1/20th) of the actual Vitamin C complex in acerola berries. Real vitamin C complex is part of something living, and as such, can impart life. The synthetic, fractionated chemical called ascorbic acid never grew in the  ground, never saw the light of day, never was alive, and was never part of anything that was alive. It's a chemical, a cornstarch derivative, a sulfuric acid by-product. In the body it's just another drug. Synthetic vitamins have toxic effects from mega dosing and actually can increase the white blood cell count. Vitamins are only necessary in relatively small quantities on a daily basis. Whole food vitamins, by contrast, are not toxic. The vitamin is complete in its integral working form and requires nothing from the body. It triggers no immune response.
  
DEFICIENCY
  

Scurvy is a disease caused by vitamin C deficiency. Scurvy is characterized by bleeding gums, slow wound healing, softening bones, loose teeth, ulcerations of the mouth and digestive tract, general weight loss and fatigue. From 1650 to 1850 half of all sailors on transoceanic voyages died of scurvy. It was discovered by ship surgeon Thomas Lind in the early 1800s that British sailors were spared the disease altogether simply by including a diet rich in citrus fruits. Since limes traveled well, they were the common choice during the early years, and thus the expression "limeys" was coined to describe British sailors. It was later found both at sea and in prison that potatoes were equally successful in preventing scurvy. They were much cheaper to obtain and became standard fare. (Lancet. 1842)

 

There is actually less than 20 mg of ascorbic acid in a potato.   Yet this small amount, since it is in a vitamin C complex food source, is all the body needs to prevent scurvy and cure it even in its advanced state. Such a remedy is described in detail in Richard Dana's journal, Two Years Before the Mast, written in 1840.

 

Vitamin C Complex 

 

Whole food vitamin C complex, as found in potatoes, onions, and citrus fruits is able to quickly cure any case of scurvy. By contrast, the fractionated chemical ascorbic acid has been shown to be insufficient in resolving scurvy conditions, because it does not act as a nutrient. (Lancet 1842). Ascorbic acid simply cannot confer vitamin activity. This was taught by the discoverer of vitamin C complex himself, a Nobel Prize laureate, Dr. Albert Szent-Georgi.

 

Szent-Georgi discovered vitamin C complex in 1937. In all his research, however, Szent-Georgi found that he could never cure scurvy with the isolated ascorbic acid itself. Realizing he could always cure scurvy with the "impure" vitamin C complex found in simple foods, Szent-Georgi discovered that other factors had to be at work in order for vitamin activity to take place. So, he returned to the laboratory and eventually made the discovery of another member of the vitamin C complex - rutin (also known as vitamin P). All the factors in vitamin C complex, ascorbic acid, rutin, and the other factors, were actually synergists. They were co-factors which together sparked the "functional interdependence of biologically related nutrient factors." (Empty Harvest p120). The term "wheels within wheels" was coined to describe the interplay of these co-factors.

We were blessed to be in the Charlotte, NC area with 4 of our grandchildren as our daughter and son-in-law got to take a trip to Europe for 10 days. They took the 7 month old baby with them while we got to have fun with the others whose ages ranged from 3-10. We had the best time! They all know how we love them but we still made it a point to spend special time together and individually. The youngest, Natalie who is 3, could not contain her joy one day when we were "on a date" and she just grabbed her PapaLaw right around his neck and squeezed tight. I captured the picture as he feigned being strangled--there's nothing quite like being and feeling loved!
