 Watermelon Summer

Ingredients
  

For the vinaigrette:

1/4 cup freshly squeezed orange juice

1/4 cup freshly squeezed lemon juice (2 lemons)

1/4 cup minced shallots (1 large)

1 tablespoon honey

1/2 cup good olive oil

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

6 cups baby arugula, washed and spun dry

1/8th seedless watermelon, rind removed, and cut in 1-inch cubes

12 ounces good feta cheese, 1/2-inch diced

 

Directions

 

Whisk together the orange juice, lemon juice, shallots, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly, to form an emulsion. If not using within an hour, store the vinaigrette covered in the refrigerator.

 

Place the arugula, watermelon and feta in a large bowl. Drizzle with enough vinaigrette to coat the greens lightly and toss well. Taste for seasonings and serve immediately.

Anyone who knows me, knows I feel compelled and am totally committed to provide an exposure/overview for the science of glycobiology to those I know, love and care about. I am compelled because most have no idea of the critical role "sugar-nutrients" play within the immune system. I sure didn't nine years ago! It is so important because all the good we can put into our bodies doesn't add up to enough if the cells can't identify what to do with that good.
  
The articles in last month's issue featured multiple ways in which these nutrients impact human health (be sure to go back and read them if you missed them!). This issue will continue by highlighting their role in the developing fetus as well as for newborns. Oh yes, be sure to also catch the Food for Thought segment for an incredible quote that I just love from a doctor who knows!
 

I shudder to think where I would be if I hadn't been blessed to read material which gave me an exposure to this little known field of science...I'm just so grateful. It has made all the difference for the quality of my life as well as for hundreds and thousands I have come to know over the years.

Breast Milk 
  
 

 

In 1980 my doctor suggested that I formula feed my baby. He said formula had more protein, more lipids, more this and more that - AND MORE meant better! Since it was my first baby I had no idea why this was bad advice. Fortunately, my mom and grandma counseled me to breast feed my baby. Now, thirty-three years later, I am so glad I followed that wisdom and breast fed each of my 5 children. What we now know due to multiple 18 year longitudinal studies is that breast fed babies have better cognitive ability, better digestive and intestinal health along with better brain development. What's different about mother's breast milk? Eight sugar-nutrients called glyconutrients are the BIG difference. They are abundant in mother's breast milk. They are more prevalent than even protein - as important as protein is!

 

  

We can now see how the design of life supports a baby by delivering critical nourishment when the baby is no longer getting it through the umbilical cord. Of course, the design is in place so it comes from mother's breast milk. When a baby is old enough to eat then these critical glyconutrients are supposed to come from food. What are the ramifications if these sugar-nutrients are gravely missing from the food our children eat or from what we eat for that matter? Look around and we can easily see there are consequences. Replacing what has been missing is possible if you know what to look for and where to listen to find exactly what is efficacious! We are always happy to help with recommendations if needed. Brain Development and Sugar
  
Polysialic acid (PSA) is a sugar with a vital role. N-acetylneuraminic acid (Sialic Acid) is one of the eight sugars surrounding each cell within the human body. It is an example from this group of sugars categorized as PSA. PSA is a major regulator of cell-to-cell interactions. It is a key factor necessary to increase neural plasticity in the growing fetus and is critical for the developing nervous system. Neural plasticity allows cells to more easily break and form connections in the brain. This is done specifically via PSA-NCAMs (PSA-neural cell adhesion molecules) which regulate the spacing between cells in tissues and thus increase neural plasticity.
 

The Young Brain

 

The brain of the developing fetus in the womb is constantly growing and moving neurons into place. Billions of synaptic connections are being created. By the time a baby reaches the age of a toddler, the baby will have over 1000 trillion (1 quadrillion) synapses and will be making 2 million new synaptic connections every second! By the time a baby is 3 years old, they can lose up to 50% of these synapses. The connections that are used most often will get "hard-wired" while the connections that are seldom or never used will be weeded out. Some of the latest research concerning attention deficit disorders and autism suggests that some children don't perform the weeding out process. The end result is the child is left with an over-abundance of synaptic connections which inhibits focus and clarity. It would be like sitting in a noisy room with hundreds of conversations going on around you and not being able to focus on just one. Most people are able to tune out and move secondary conversations to lower-level background noise so they can focus on the task at hand. But autistic children are bombarded by sensory overload.

 

The Old Brain

 

Older folks generally keep their long-term synaptic associations (memory) but may lose their short-term memory because they cannot build and keep the new synapses. Supplementation with the raw ingredients necessary to build these connections could prove beneficial. A diet rich in PSA has been shown to increase levels of PSA in the brains of postnatal piglets. In addition, it increased the expression level of 2 learning-related genes and enhanced overall learning and memory. (Wang B, Adv Nutr. 2012 May 1;3(3):4655-725). PSA is known to go through the blood/brain barrier.

 

Breast Milk

 

Human breast milk has exceptionally high levels of Sialic acid while infant formula has very low levels of Sialic acid. This is seen as one of the reasons breast fed babies do so much better than formula fed infants. The design of life is clearly evident. Science continues to uncover these truths which have lain hidden from our view. But the underlying principles such as "you are what you eat" never seem to change - they continue to endure.

 

 Knowledge is Power

 

Sialic Acid in Breast Milk

Did you know that a mother's body adjusts to increase the Sialic acid in her breast milk if her baby is born premature? Polysialic acid (PSA) is critical for the brain development of babies in the womb. Because a baby born prematurely does not have access to the mother's body for those stores of PSA, the design of life automatically builds into her breast milk a 13 - 23% increase in sialic acid above what a full-term baby would have gotten from her breast milk. This biological compensation is amazing!
 

C-Sections

 

Unfortunately, the most common surgical procedure in the United States impacts this in a negative way. C-sections (Cesarean deliveries) have grown from 4.5% in 1965 to 21% in 1996 to a high of 32.8 % in 2011. Even worse, there are hospitals in the U.S. with C-section rates of 70% of all deliveries. The bad news is this intervention bypasses the biological mechanisms for increasing sialic acid in the breast milk. So, mothers nursing these babies don't have the extra shot of sialic acid their babies need.

 

Formula

 

Formula is not the answer. Most formulas have less than 25% of the sialic acid of full term milk. In addition, over 70% of that sialic acid is bound to glycoproteins not readily available for brain development. Another problem is the formula sialic acid is in the form N-glycolyneurmanic acid (Neu5Gc) which has been implicated in several inflammatory diseases. The sialic acid in human breast milk, N-acetylneuraminic acid (Neu5Ac) is bound to free sugars and not tied up in protein structures. This makes it much more available for brain development. All this goes to show that having the correct sugars in place is critical to human health.

I had the great pleasure of being with two of my granddaughters, Elena and Felicity along with another darling girl, Millie recently. Discussing what we could do one morning, it became apparent that we ALL needed our toes done! What a fun time we had talking, sharing and laughing together as we cleaned off the old polish and put on the new. You can see the 3 sets of toes in the picture above; My toes are not pictured as I couldn't figure out how to include them while taking the picture! Ha! It's clear why we all just had to go "out" in our flip flops and/or sandals so we could show them off. It was a great day and we all felt really good about our time together. That's building healthy relationships 101!
