Food for Thought

 Vegetable Soup 
  
  
Ingredients

  

One large onion

½ to 1 teaspoon minced garlic

2 medium or 1 large carrot

1 large stalk of celery

1 medium to large zucchini

1 large can chopped tomatoes

2 quarts vegetable broth

1 can white beans or soak your own for 1 ¾ cup beans

1 small bag frozen chopped green beans

Grated cheese to top (optional)

 

Directions

 

Sauté onion in butter/olive oil approximate 2T each

Add minced garlic

3/4 teaspoon of salt and 1/4 t. of pepper (or more pepper if you like)

Add sliced carrots, celery and vegetable broth and simmer while slicing zucchini

Add zucchini, canned tomatoes with the juice, white beans and green beans

Simmer until vegetables are tender crisp

Adjust seasonings and enjoy!

What A Beautiful Day
  
I was listening to a man speak and he shared a story about one of his friend's roommate from his college days. He said this guy was always optimistic and he never said anything bad about anyone else. Then he shared an example...
 
One bitter-cold, snowy morning he was walking on campus feeling the miserable, blustery wind, he heard singing from a distance. Since there were not many out at that early hour he looked to see and to listen. What he heard was, "Oh what a beautiful morning, oh what a beautiful day! I've got a wonderful feeling, everything's going my way!" He recognized it as a line from the musical, Oklahoma. And, it was coming from this roommate of his friend! He smiled and thought "Wow! Maybe by changing my thinking it would improve the way I feel about this day!"

 

Our thoughts can change our feelings. Knowing that things are going our way will most certainly make a difference for our lives. Thinking this way is as easy as not thinking this way. But it takes reconditioning. I'm practicing reconditioning my thinking and I choose to believe the world is out to make my life wonderful! =)

Animals and Cancer

    

 

Cancer kills about one-third of cats and about half of older dogs. According to Kim Selting, assistant teaching professor in the College of Veterinary Medicine at the University of Missouri, there are about 70 animal cancer treatment facilities with linear accelerators (radiation therapy) existing nationwide.
  
Prevention
  
Preventing cancer in pets would save the cost and pain associated with these treatment therapies. Glycan-based research on the role of sugar and it's effect on the immune system holds great promise not just for human beings but for animals. According to the National Academy of Science publication, Transforming Glycoscience, "glycans are the most abundant family of organic molecules on the planet."
  
All Living Cells
  
In fact, "every living cell on the planet is covered with a dense and complex array of glycans." "Every living cell" includes humans, animals, and plants. Since "glycans play roles in almost every biological process and are involved in every major disease," then the research performed on humans to discover the ties of sugar to cancer will directly help our pets. That is great news for all pet lovers!

It's been wonderful being home in Colorado for the month of April. Spring is definitely trying to arrive and we're enjoying many beautiful days here. It's a great time of year. We don't have anything blooming outside but we were blessed when a friend brought fresh cut tulips for inside our home--thanks Carolyn! =)

Did You Know? 
The Lowdown on Cooking Vegetables 
 

  

When you cook vegetables they can lose much of the nutrition in them. Most of us know this and yet it's difficult to never cook anything! In fact, there's nothing like a yummy pot of soup simmering on a brisk day. Here in Colorado we get lots of cold days when spring is trying to emerge so we love to eat homemade soup. In fact, check out the recipe for this issue as this is my favorite vegetable soup.
 
Anyway, cooking vegetables over 187 degrees kills everything good in them so try steaming your vegetables just until they are tender-crisp and then add them to your soup base at the last minute. This will help to retain more of the nutrition. Of course, eating vegetables raw is the best way to ensure you get the maximum nutrition contained in the produce. But when you want or need to cook them, try keeping the temperature low.

Secondary Cancers

 

Increasing numbers of cancer "survivors" are facing new malignancie not caused by a recurrence or spread of their original cancer. These new cancers are a side-effect of chemotherapy or radiation treatment used to fight the original cancer. According to research by author, Susan Ince, an alarming one in six people with a new cancer diagnosis have had a previously diagnosed cancer that was different than the one being diagnosed. Good Morning anchor, Robin Roberts, recently revealed that she now has myelodysplastic syndrome (MDS) which is a form of bone marrow cancer. She had previously been counted as a breast cancer survivor. Unfortunately, chemo and/or radiation used to treat her breast cancer likely caused Robert's new life-threatening situation.
  
Leukemia
 
The American Cancer Society now links several types of chemotherapy to leukemia. This usually ocurrs two to ten years after initial treatment. The drugs used to target the DNA of cancer cells also indiscrimantly affect normal cells like stem cells in the bone marrow. These altered stem cells create altered red/white blood cells leading to a significant risk of creating blood cancer (leukemia). According to Marie Woods, MD, professor of medicine at the University of Vermont College of Medicine, "If you lump together all second cancers, it's a very common diagnosis." In fact, researchers at Johns Hopkins reported in December 2012 that women treated with chemotherapy for breast cancer have a five times greater risk of developing leukemia than those treated with surgery alone. 
 
Prevention
 
Avoiding a diagnosis of cancer in the first place would solve the problem of secondary cancer. "There is a strong conncection between many lifestyle factors and the development of primary cancer," said Jennifer Ligibel, MD, assistant professor of medicine at Harvard Medical School and senior physician at the Dana Farber Cancer Institute in Boston. Glycans or biological sugars are proving key in the search for reliable cancer bio-markers. According to a October 2012 publication entitled, Transforming Glycoscience by the National Academy of Sciences, "Altered glycosylation is a universal feature of cancer and contributes to pathogenesis and progression." Altered glycosylation "underlies many properties of the cancer cell, including the propensity to metastasize."
  
Much to Learn
  
There is still much to learn about the specific roles of glycans in cancer, but "it is clear that cell surface glycans and glycan-binding proteins contribute to all stages of cancer progression and metastasis..." The publication expressed the hope that as we learn more about these critical sugars, "and about how the immune system recognizes cancer-associated glycans, effective development and use of glycan vaccines against cancers may come to fruition." As cancer diagnoses continue to rise around the world, we are all hopeful that understanding how these sugars work will represent a key component in our efforts to free people from the grasp of this difficult disease.
Healthy Relationships 

          

Springtime is the Perfect Time... 

 

Building and strengthening relationships in your life is a healthy necessity! Here's a fun idea:
  
Springtime is bird nesting time. A fun activity to do with your children or grandchildren is to gather "nesting" materials. Use things like scraps of thread, yarn, tiny fabric strips, cotton balls, or bits of kleenix. Ball them up inside a mesh bag like what you would find wrapped around grapes or tangerines. Put a rubber band around both ends to secure it. Using a yarn needle, thread a loop of yarn to use as a "hanger" and hang it outside. Make sure it is high enough in a tree so the birds feel safe and then watch what happens!
 
The birds will come and pull these materials out through the mesh and take them to make their nests. You may even be lucky enough to see where the nest is being built. It's fun to see how these items are used to help in the nest building process. But most important is the relationship-building process you are developing!
