Food for Thought

 Vegetable and Egg Frittata 
  
  
Enjoy brunch with some friends! I love this yummy frittata and have made it many times over the years. I have done it with and without the chicken or turkey and either way it's yummy!
  
Directions

 

In large skillet sauté onion in a tablespoon of butter and a tablespoon of olive oil.

Season with a bit of salt, cooking onion until translucent

 

Then add:

Two small New Red potatoes washed and cut into thin slices and arrange over onions

 

Top with:

Cooked shredded chicken or turkey seasoned to taste(optional)

 

Then add:

One bag of Broccoli Slaw (you can get this in the produce section of the grocery store but it may not be easy to see so ask the produce guy.) It has shredded broccoli, carrots and cabbage or cut up your own.

 

Because the skillet you are using which sautéed your onion is still warm you can steam the vegetables until tender crisp (which won't take long) by putting a lid over it on low heat.

 

Slightly beat 8 eggs adding 2 T of water to them (which will make it lighter). Pour the eggs over the chicken and vegetables, season it with salt/pepper or whatever you like and put the skillet in the oven at 350 degrees to finish cooking until the eggs are cooked through.

 

Insert knife to check when it's not runny with egg any more so you will know it's done.

 

I like to top it with fresh sliced tomatoes and sprinkled with fresh grated parmesan cheese (or other fresh grated varieties) before serving.

Recently I started a "Value-Captured" journal. I got the idea from something Larry and I were reading. It inspired me because this is the kind of "journal" I might be able to keep up with! Ha! The premise behind it is that we hear things on a regular basis which inspire us, lift us, grow us but usually we fail to record it so it gets lost to us. If we could get in the habit of recording these tidbits of value then we could refer to them and even if we don't refer to them just the fact that we recorded them gets it in us better! But, truly reviewing what we record occasionally is even more valuable.
 

Just last week I was speaking to a group of people in Atlanta, GA. I wondered if there was something I had learned recently that had inspired me which I could share with them. So, I turned on my I-Pad and went to my Value-Captured journal and looked at the  most recent entries. There were several "nuggets" of wisdom I could leave with the group. The one I'll leave today with you is: "We get paid in direct relationship to the value we bring to the market place...the more value, the more income." Wow, it had never occurred to me that this statement was in fact a true principle! Its good practice to ask ourselves...what value am I bringing to the market place?? And, how can I increase that value?

Antioxidants and Cancer

    

 

There is compelling evidence that chromosomal damage seen in cancer stem cells is caused by exposure to a prolonged or repeated barrage of free radicals in numbers too large for the body's DNA repair system to neutralize. A strong antioxidant is essential to the diet to help your immune system ward off these free radicals.
  
Unfortunately, some people already have malfunctioning DNA repair systems, i.e. people with BRCA1 and BRCA2 gene mutations that are associated with breast cancer. Providing the cells the real food nutrients needed to combat free radicals is essential to immune system function.

While I know many have been socked with a bunch of snow, we have missed it as we traveled through the southern United States where it definitely feels like spring. Last week we visited Biloxi, MS where we lived 34 years ago and it was beautiful there and fun to stop for a short visit!
 

Surely spring will be in the air for most, if not all of us, in the coming weeks and this is a beautiful time of year. We have loved driving through many, many of your states since last May and seeing so much of the beauty in this country.

 

We keep thinking we'll get home soon and we do have plans to be there by the end of March for a couple of weeks! Since you know we don't advertise, word of mouth has kept us quite busy teaching our classes. We do love it. Truly it's rewarding providing exposure to a little known field of science that has such tremendous impact for our quality of life! How honored we are to be instrumental in bringing it to the masses. We are now the first 6 hits when you google "education in glycobiology" (just after the paid advertisement) and that's remarkable! Wow... the power of one! You can't underestimate what ONE can do when we see a need and set out to meet it.

Did You Know? 
Tuning-up With Turmeric  

  

 I was recently reading an article on turmeric. You know the bright orange-yellow powder which comes from the root of Curcuma longa? Well ok, I didn't know where it came from either but I'm sure we've all seen it especially in curry dishes when eating at a favorite Indian restaurant. Apparently, it has been used as a medicine and for seasoning food for thousands of years!
 

Nutrition researchers have been studying the key, active component of turmeric which is called, "polyphenolic pigment curcumin" and their studies have been published and the media is taking notice. This is because their findings provide scientific validity that curcumin's antioxidant and anti-inflammatory properties can support overall health and provide benefits to those dealing with conditions associated with inflammation. And, truly inflammation underlies every disease state!

 

So, we need this in our diet but unfortunately, eating at our favorite Indian restaurant won't do it and thinking we can get it from turmeric powders is not enough because the amount of curcumin in them is so low. To really impact your health you need larger amounts. Unfortunately, a turmeric-only supplement is not the best approach because in animal studies it has been shown to be absorbed poorly. Supplements of curcumonoid that are formulated with bromelain will be sure to enhance the absorption so that's the best bet when supplementing with it!

Metastasis of Cancer Cells

 

Most cancers can threaten life after only a few cells break free and travel through the bloodsteam or lymph fluid to set up shop in another part of the body. Once that's happened, a surgeon can no longer cure a patient by removing the tumor. And even powerful chemotherapy drugs are often unable to kill every last errant cell. Barnett S. Kramer, MD, associate director for disease prevention at the National Institutes of Health states, "Some tumors spread extremely early." They begin metastasizing when they consist of only a few million cells, which sounds like a lot but is smaller than the period at the end of this sentence. They are too small to detect with most screening tests. By the time this kind of cancer is big enough to be seen on a mammogram or other test, it's already sent seeds to other parts of the body.
  
Leukemia
  
Leukemia, which involves cancer of the blood cells, is an especially tough cancer to combat because the blood cells are circulating throughout your body's blood system. You are already in a metastatic state.

What Can We Do?
  
While standard cancer treatments have some benefit in extending some patient lives, they also have limits and serious side-effects. The best defense is a strong immune system. Understanding that our bodies are made to live in a state of health, not disease, provides hope for integrative approaches. A properly working immune system regularly removes damaged, sick, and cancerous cells. Providing our bodies with life-sustaining nutrition and the raw materials necessary for cells to do their job are essential for optimal wellness.

Mourning
With Those That Mourn

 

When trial, sorrow, and heart-ache hits, as it will for all of us at one time or another, it is a very healthy thing to mourn with those who mourn.
 
We lost our little grandson who was stillborn on Valentine's Day this past month. What an outpouring of love, compassion and support was shown our daughter, son-in-law, and their little 2 year old. It's been a sad time with no explanation as to why their little boy, Clark Alan, died. Sometimes life is ironic. The best preparation, the best intentions, the best love, joy, hope and happiness cannot keep life's hard things from us. So, during times like this we pull together, carry each other, lift and share burdens, indeed we mourn with those who mourn. And, that's healthy because it's a blessing for both the giver and the receiver.
