Raw No-bake "Brownie" Bites
Ingredients
1 cup raw almonds
15 whole pitted dates
2/3 cup cacao powder (I use Dagoba)
1 tablespoon honey
2 to 3 tablespoons water
Confectioner's sugar
Directions
Place almonds in food processor and pulse until ground. Add dates, cacao powder, honey, and water. Process until ingredients form a sticky mass (you may have to add extra water to get the right consistency).
Roll into balls or flatten out and cut into small heart shapes. Put a couple of tablespoons of confectioner's sugar on a plate, roll balls in sugar. (OR you could place balls/hearts on a plate and use a sifter to dust just the tops). Place in an air-tight container and store in the refrigerator for up to a week. |

I love that we have lots of reading time while we're driving. I drive and Larry reads out loud to me. We have read so many great, great books this way. I call them "wisdom writings" and we most certainly have gained much wisdom by immersing ourselves into these books!
Recently, we read a book on 10 different people who most of us know nothing about. One man named Mencius lived 400 BC. He said, "There never was a man totally true to himself who failed to move others." This really struck me. First, because he said it so many years ago and, second because there is such wisdom in those words! Being true to ourselves as we strive to be a blessing to those within the circle of our influence will bring the greatest good to both ourselves and to others. Now that's ageless wisdom! |

Glyconutrient N-Acetyl Glucosamine
A glyconutrient, N-Acetyl Glucosamine (NAG), suppresses the growth and function of abnormal T-cells responsible for autoimmune attack in MS and Type 1 Diabetes. Findings of Dr. Demetriou of the University of California Irvine Center for Immunology published in the
Journal of Biological Chemistry documented NAG prevented T-cell hyperactivity that results in autoimmune attack on brain myelin and the insulin-producing cells of the pancreas. Preventing this attack of the body on itself protects against the development of paralysis in MS as well as elevated glucose in diabetes.
"This finding shows the potential of using a dietary supplement to help treat autoimmune diseases. Most importantly, we understand how this sugar-based supplement inhibits the cells that attack the body, making metabolic therapy a rational approach to prevent or treat these debilitating diseases."
Another study found improvement in 75% of children with treatment-resistant autoimmune inflammatory bowel disease after a two year course of NAG. |

Valuable Valentine Treats
Valentine's Day doesn't need to be a "sugar-fest" for ourselves and/or our children. It seems we just start eating better after Thanksgiving, Christmas and New Year's when we get hit with Valentine's Day and more temptation as everything is chocolate!
I loved reading a mom's recent blog and seeing her ideas for making this holiday a special day of love without all the junk that typically goes along with it. Try googling, "Healthy Valentine Treats" and you'll see a bunch of good ideas! What would we do without the internet these days? Seriously, we can get great help with whatever the need. I, for one, am going to make watermelon, cantaloupe and strawberry pops using heart-shaped cookie cutters and lollipop sticks for my grandchildren we are visiting on the 14th. =) |

Glyconutrient Impacts Autoimmune Diseases
A study involving the glyconutrient, N-Acetyl Neuraminic Acid (Sialic Acid) was reported in a scientific journal. Researchers at the University of New Hampshire Glycomics Center led by immunologist Jeffrey Ravetch of Rockefeller University reported in the 13 May 2008 edition of the journal Science that they had identified a specific carbohydrate structure that confers anti-inflammatory activity to a glycoprotein antibody that could lead to improved treatment of autoimmune diseases like lupus or rheumatoid arthritis.
"The work revolves around immunoglobulin G (IgG), the most abundant antibody in blood plasma. Intravenous immunoglobulin (IVIG) has trace amounts of this very active material which effectively relieves inflammatory affects of lupus, rheumatoid arthritis, asthma, and other autoimmune diseases. But because of the trace amounts of active material, effective doses of IVIG need to be very high leading to unwanted side effects."
"This study involved rebuilding the human IVIG into a fully active molecule with a slight modification to a carbohydrate residue. These carbohydrate structures are linked to the immunoglobulin and referred to as glycans, and on the tip of this glycan is a specifically linked Sialic Acid. All the Sialic Acid on IVIG was converted to the active linkage that confers anti-inflammatory properties."
The UNH Glycomics Center helped Ravetch pinpoint exactly how Sialic Acid was linked, which let the researchers engineer a synthetic human antibody that mimicked the linkages in IgG, providing an IVIG with enhanced activity for treatment of autoimmune diseases. In the Science paper, the researchers report that when given to arthritic mice, the engineered IgG was about 30 times more effective than IVIG.
"Carbohydrates are the glue that pulls things together, the cell surface matrix in which cells communicate and they provide the connections for signal transduction. It's only been within the last decade that we've realized that such structures are critical for all kinds of biological function," says Reinhold. "Now that we can define precise structures, we can begin to understand their function. This structure-functional relationship will have a huge impact on our health in respect to immune regulation." |

Dating For Life
Taking time away for dates is a healthy thing to do for your marriage regardless of how busy you are! It may not feel you can take the time to get away but making it a priority will bless your marriage. Larry and I decided 34 years ago that we would make US a priority. Taking time to get away frequently was part of that.
Each week we had some kind of a date night even if it was just at home after the kids went to bed! Each year we took at least a weekend away even if it was just in our own town! Now that we've been empty nesters for quite some time, you'd think we wouldn't need these dates but we do! We still make sure we take time to just be together without distractions of work or anything else. It doesn't just happen...we have to make it a priority. And now, after all these years since our first decision to continue dating after our marriage, we can say it's been totally worth it! |
