Walnut Pesto Pasta

Ingredients
-
One package of Brown Rice pasta (any kind you prefer-but I like the linguine with this) -
One head of broccoli chopped into small bite-sized pieces -
2 cups firmly packed basil -
1 ½ cups of walnuts
-
½ to 1 cup of olive oil
-
1-2 tablespoons of fresh lemon juice
-
1 small fresh garlic clove
-
2 teaspoons good quality salt (more or less to taste)
Directions
Remove the tough outer peel from the broccoli stalks. Chop into small pieces. Put aside in a large bowl. In a food processor, place the basil, walnuts, olive oil, lemon juice, garlic and salt. Process until you create a nice pesto sauce adding more oil to achieve the consistency you prefer.
Massage pesto sauce into broccoli pieces and set aside for a while allowing the broccoli to soften a bit.
Cook the brown rice pasta according to the el dente directions on the box. Drain the water and toss with the walnut pesto sauce.
This is a yummy side dish for any meal! |

I recently registered for a teleseminar where the presenter taught us about the Law of Polarity. While the principles were familiar to me, I had never heard it stated this way. The law addresses opposites. We can see it easily when we think of good versus evil, high versus low, right versus left, up versus down, etc. But we don't easily translate that into other aspects of our lives. For instance, in nature when there is a poisonous plant the antidote for that poison MUST also be near.
The same goes for our desires. If you have the desire for a new job, then the solution that can satisfy that desire must also be there. Same with anything else...if you have a desire for a healthy, happy marriage relationship, then the solution for that desire must also exist.
Participating in this teleseminar expanded my mind on what is possible for my life. The law states that if I desire it, then it must already exist. Now, the journey is to move forward with diligent work until my desires are manifest in my life. Wheat Glycemic Index Worse Than Candy
The University of Toronto in 1981 launched the concept of glycemic index by comparing the blood sugar effects of food. The higher the blood sugar after consuming a specific food relative to glucose, the higher the glycemic index (GI).
The study showed that the GI of white bread was 69 while the GI of whole grain bread was 72 (worse!). Shredded Wheat cereal was 67. Table sugar (sucrose) was only 59! Candy bars like a Mars bar was 68 (less than bread) while a Snickers bar was only 41 - far better than whole grain bread!
The standard diet recommended by the American Diabetes Association (ADA) to control diabetes includes "whole grain breads, whole grain cereal, low-fat crackers, and pasta." It is no wonder that we are getting fatter and sicker as a nation. The fat-phobic, carbohydrate centered diet with 55 to 65% of calories coming from carbohydrates, which most often are wheat-based, adds fat at an astounding rate and leads to the "wheat bellies" so many of us seem helpless to reduce. Reducing or eliminating wheat from our diet can seem a difficult thing to do in our modern, processed food environment. This is especially true given the government backing of eating an immense amount of "healthy whole grains." Science is pointing the way for those who can discern the truth about where we are nutritionally in this country. There is a "famine in the land" despite the over-abundance of food-like substances in the middle aisles of grocery stores. Stay healthy and shop the perimeter of your supermarket. |

It's beginning to look a lot like Chirstmas -- at least here in Colorado Springs! Snow has fallen and it's beautiful. I love feeling warm and cozy at home. We are here for a couple of weeks and we love every minute of it! We feel so blessed and wish for each of you all that is right and good in the world. Wonderful Walnuts
Walnuts are a staple around many holiday kitchens. I grew up not liking walnuts but since have grown to love them like I love other nuts. Be sure to see the recipe for this month as it is a yummy way to eat walnuts too!
Here are a few health benefits of walnuts:
- Walnuts contain a rich source of nutrients, minerals, antioxidants and vitamins that are essential for optimum health.
- They are rich in monounsaturated fatty acids like oleic acid and an excellent source of all important omega-3 essential fatty acids like linoleic acid, alpha-linolenic acid (ALA) and arachidonic acids.
- Regular intake of walnuts in the diet helps to lower the "bad cholesterol" and increase the "good cholesterol" levels in the blood. Research suggests a diet that is rich in monounsaturated fatty acids, and omega-3 fatty acids help to prevent coronary artery disease and strokes.
- By virtue of their anti-inflammatory action, they help to lower the risk of blood pressure, coronary artery disease, breast, colon and prostate cancers.
- They are also a rich source of many phyto-chemical substances that may contribute to their overall anti-oxidant activity, including melatonin, ellagic acid, vitamin E, carotenoids, and poly-phenolic compounds. These compounds have potential health effects against cancer, aging, inflammation, and neurological diseases.

Wheat: A Good Grain Gone Bad
Dr. William Davis, a cardiologist, records in his #1 New York Times Bestseller, Wheat Belly that "A loaf of bread, biscuit, or pancake of today is different than its counterpart of a thousand years ago, different even from what our grandmothers made. They might look the same, even taste much the same, but there are biochemical differences. Small changes in wheat protein structure can spell the difference between a devastating immune response to wheat protein versus no response at all." The tall, 'amber waves of grain' utilized for thousands of years have been replaced in the last fifty years by dwarf and semi-dwarf wheat that stand only 18 inches tall and cannot live in the wild without human intervention. No animal or human testing was conducted during the tens of thousands of hybridization and breeding efforts conducted to increase yield and develop newer, "synthetic" wheat. Hybridization, while not as specialized as creating genetically modified organisms (GMO), still possesses the potential to 'turn on and off' genes unrelated to the intended effects. Over the past fifty years, thousands of new strains have made it to the human commercial food supply without a single effort at safety testing.
Wheat Gluten Explosion
Dr. Davis reports, "Analyses of proteins expressed by a wheat hybrid compared to its two parent strains have demonstrated that, while approximately 95% of the proteins expressed in the offspring are the same, 5 % are unique and are not found in either parent. Wheat gluten proteins, in particular, undergo considerable structural change with hybridization. In one hybridization experiment, 14 new gluten proteins were identified in the offspring that were not present in either parent wheat plant. When compared to century-old strains of wheat, modern strains of Triticum aestivum express a higher quntity of genes for gluten proteins that are associated with celiac disease." Multiply these alterations by tens of thousands of hybridizations wheat has undergone and you have the potential for dramatic shifts in genetically determined traits such as gluten structure. It is no wonder millions of people are suffering from celiacs disease, leaky gut, irritable bowel syndrome and a host of inflammatory complications resulting from a compromised intestinal tract.
Wheat Sugar Worse Than Table Sugar or Candy
Today's wheat products elevate blood sugar levels more than almost any other carbohydrate, from beans to candy bars. Despite being a complex carbohydrate, the amylopectin A in wheat breaks down much more rapidly than its cousins amylopectin B (think potatoes and bananas) or amylopectin C (think beans). "Consumption of two slices of whole wheat bread are no better and often worse than simple carbohydrates like sucrose. The induced surge in glucose and insulin following wheat consumption is a 2 hour phenomenon that produces the high at the glucose peak and the low of the inevitable glucose drop. The surge and drop creates a two-hour roller coaster ride of satiety and hunger that repeats itself throughout the day. This cycle results in fat accumulation particularly visible in the abdomen resulting in wheat belly," according to Dr. Davis.
Bottom Line
Wheat used to be a healthy grain. Today's man-made wheat is being implicated in numerous studies including diabetes, heart disease, and autoimmune issues. It is time to try an experiment. Eliminate wheat from your diet for four weeks and see if you notice the health benefits that accrue. Many people report significant changes to the quality of their life. |

Christmas Service
We come to love those we serve. Recently I had the privilege of helping with a luncheon for the hiking group Larry and I participate with. These wonderful people have been hiking together for many years and we have been blessed to join them on hikes in and around our city when we are in town. Annually they have a Christmas luncheon and because it's such a large group a few volunteers agree to host it by organizing and executing the details. It can be quite an undertaking but is such a wonderful opportunity to visit socially in a festive setting.
This year I offered to do the table centerpieces. Since we are out of town a lot, I thought that would be a good way to help as I could work on them even while on the road! Well, I can tell you the luncheon was a hit--it all went without a hitch. The hikers were spoiled with gifts and treats.
They also had an opportunity to contribute to Care and Share by bringing new mittens, gloves and/or socks that would be donated. The tables were beautiful and it was fun doing it! Everyone commented on the great time spent together. As one of the volunteers, I can tell you I loved these good people more because I was able to serve in this way! There are many ways we can find to serve all year long and when we do this is all part of building healthy relationships! |
