Food for Thought

 Coconut Cream Pie

Buttery Crust

 

In a food processor with the S Blade add:

2 cups pecans or walnuts

Blend into small pieces

 

Then add the following:

 

� tsp. salt                                                        

� tsp. vanilla

1 cup dates, soaked 5 minutes to soften              

� cup ground flax seeds

 

Blend until it turns into a ball. Be careful not to blend too long. Press into a pie pan

 

Filling

 

1 can whole coconut milk + enough rice milk or almond milk to total 3 cups of liquid. Add 3 T. Agar Flakes and gently heat to melt Agar.

 

Add:

 

1/2 c. honey

1 t. vanilla

1/2 t. coconut extract

1/4 c. lemon juice

1/4 c. coconut oil

1/2 t. salt

 

Blend and pour onto crust. Cool in refrigerator for about an hour, until set.

 

 

Chocolate Topping

 

In a food processor blend:

 

2 large, ripe, avocado                                    

1 cup carob powder

1 cup pure maple syrup

  

Spread Chocolate Topping onto set cream filling and sprinkle with unsweetened toasted coconut.

 

Freeze the whole pie and serve when just thawed or slightly frozen. Makes one pie.

Gratitude
  
In this season of Thanksgiving I love that I have seen many Facebook posts which are "lists" of gratitude. I love hearing moms, dads, siblings and friends share how they are grateful for each other! Gratitude shown for family, country, homes and a host of other things is good. It's good to declare what we are grateful for.
 
We have so much to be grateful for and it's good to remind ourselves regularly what those things are! I'm grateful for YOU, for meaningful, purposeful work, for home and my incredible family. Family and friends bring such JOY in my life and I thank YOU for adding to that joy as we meet with you in your cities across this great country and beyond. I pray your Thanksgiving season is full of gratitude!

National Attention Directed Towards Sugars Called Glycans

    

 

According to a recent report published by the National Academy of Sciences, "Glycans are one of the four fundamental classes of macromolecules that comprise living systems, along with nucleic acids, proteins, and lipids,

and are made up of individual sugar units linked to one another in a multitude of ways. Understanding the structures and functions of glycans is central to understanding biology."

 

These sugars are critical to human life and the science of glycobiology is dedicated to that effort. The report also stated, "All living cells are coated on their cell membranes with glycans or include glycan polymers as integral components of their cell walls. They play diverse roles, including critical functions in the areas of cell signaling, molecular recognition, immunity, and inflammation."

 

The report laid out a road map for the future development of this field of study because these cell surface sugar structures will play a vital role in the fields of medicine, energy, and science. "The development of transformative tools for detection, imaging, separation, and high-resolution structure determination of carbohydrate structures and complex mixtures should be a high prioity for the National Institutes of Health (NIH), the National Science Foundation (NSF), the Department of Energy (DOE), and the Food and Drug Administration (FDA).

 

The National Academy of Sciences adamantly believes that glycoscience represents the next frontier in physiology, immune system function, and understanding the nature of sickness and disease.

Glycoscience Focus Recommended 

 

 

National Academy of Sciences Report

In late October, 2012 the National Academy of Sciences (NAS) released a 200 page document calling for "a new focus on glycoscience." Glycoscience or glycobiology is a field that explores the structures and functions of sugars. The report stated that this field "promises great advances in areas as diverse as medicine, energy generation, and materials science." Cell surface sugar structures, referred to as 'glycans,' are also known in the scientific world as carbohydrates, saccharides, antigens, glycoproteins, cell adhesion molecules, and cell receptors. They play critical roles in many biological processes and have properties which are useful in a myriad of ways. The report concluded that these sugars "have not received the attention they deserve." These glycans are in complex, bush-shaped structures and the research community lacks tools to investigate and probe their sugar sequences and properties. The NAS laid out goals for U.S. agencies to meet so this field of study will develop and receive the attention it needs beginning in high school, through college, and on to post-doctoral education.

 

 
Some Important Facts From The NAS Report 
 
General 

 

1. Glycans are the most abundant family of organic molecules on the planet.

2. The potential information content of glycans vastly exceeds that of any other class of macromolecules.

3. Every living cell on the planet is covered with a dense and complex array of glycans. These glycans form the glycocalyx in many types of cells (such as in humans) and comprise the cell wall in others (such as plants). Some cells do not have a nucleus, but all have a glycocalyx or cell wall.

4. Every molecule, cell, or organism that interacts with a cell must do so in the context of the glycocalyx or cell wall.

5. The vast majority of cellular and secreted proteins are modified with glycans, which in turn serve as "on/off" switches and modify, alter, and/or control the expresion of these proteins.

 

Health 

  

1. Elimination of any single major class of glycans from an organism results in death. 

2. Every disease that affects humans significantly involves glycans. 

3. A great majority of host-pathogen interactions involve glycans, via recognition, degradation, or molecular mimicry. 

4. Most protein therapeutics must be glycosylated properly to be functionally effective. 

5. Altered glycosylation is a universal feature of cancer and contributes to pathogenesis and progression. 

6. Many vaccines are glycan based. 

 

 

 

Some Important Findings From The NAS Report  

 

  • Unlike DNA and proteins, glycans are not created by following a template. Instead, the reactions that link individual sugar units together are influenced by factors including cellular metabolism, cell type, developmental stage, and nutrient availability. These factors provide substantial diversity and allow for glycans with a wide array of properties, but also make glycans more difficult to study and manipulate in the laboratory.
  • Glycans play roles in almost every biological process and are involved in every major disease. A better understanding of these roles could yield advances in medicine. For example, glycans inside cells help influence the expression of genes and proteins, forming part of a cell's response to biological signals. These properties mean glycans are useful as components of therapeutic drugs to help treat chronic and infectious diseases and as biomarkers to detect diseases like cancer.
  • In human health, glycans are involved in myriad processes that are part of normal physiology, development, and cell signaling, along with the development of both chronic and infectious diseases. For example, glycans on cell surfaces are important in molecular recognition. One example of this function is their role in the movement of white blood cells through the body to a site of infection, enabling the immune system to respond where needed. Much of the information content in cells is encompassed in the glycome. 

 

Clearly the science of sugar will be critical to developing a correct understanding of the biology of human health. As science learns more about the structure and function of these glycans, we will be much more capable in supporting our immune system to perform the job it was designed to do.

Eating Together Around the Table

 

When our children were growing up we most often ate together around the kitchen table. We didn't think much about this and couldn't imagine eating any other way. We were together for breakfast and dinner during the week as lunch was brown-bagged and taken to school. However, on the weekends we ate lunch together too. It is clear today that this family ritual is more and more rare as families are eating on the run. Families also eat hurridly in the car after a quick "drive-thru" at the local fast-food place. When at home it's more of a "help yourself with whatever you can find" thing. I believe it is a tragedy when families don't make it a practice to eat together at least 3 or 4 times a week. These meal times were great together times for us and I know helped to bind us to each other! We just can't underestimate the power of these simple rituals. Recently, we enjoyed a "family" dinner with another family in the Napa Valley, California area which was a real treat for us. This is "Healthy Relationship" building at its finest. =)
