Dark Chocolate Avocado Mousse
Ingredients
- 4 ripe avocados
- 1/2 cup agave nectar (I added a bit more for taste)
- 1 Tbsp pure vanilla extract
- 1 cup unsweetened dark chocolate (I bought a chunk and shaved off what I needed)
Directions
- Blend all ingredients in a food processor until smooth and the green is chocolate colored.
- Refrigerate.
- Serve with cut up strawberries for wonderful color and added flavor.

I've been thinking a lot about true "principles" or "universal laws" and how when we tap into them we get the blessings associated with keeping them OR when we ignore these truths we receive the consequences of not keeping them. Some of these principles or laws are easy for us to keep...like the law of gravity. We know if we fall out of the skyscraper window we are going to go down, down, down...so we avoid breaking that law!
Others are not so easy to "see" so we don't easily tap into them. For example, if you dig a hole in your backyard and it begins to rain, what happens with that hole? Yes, it fills up with water! We can't will it not to fill up. We can't say, "I've been so good, I'm such a nice person...please, please, PLEASE don't fill up with water." No, we can't break that law - it will fill with water. So we learn to cover the hole if we don't want water in it.
There are LOTS of these principles and I've been learning how to tap into them so they work in my life! When we figure them out, we WIN! We win in relationships, we win in our physical well-being, we win in our financial well-being and we win in every other aspect of our lives! |

Too Much Inorganic Calcium Supplements Doubles Risk of
Heart Attack
A study of nearly 24,000 men and women in Heidelberg, Germany found that those who obtained their calcium exclusively from inorganic supplements were 2.7 times more likely than non-users to experience a heart attack. The research was published in July 2012 in the journal, Heart.
Dr. Claire Bowring of the National Osteoporosis Society also urged cautious use of supplements. "This study further highlights the need for care when considering taking calcium supplements. Boosting calcium beyond recommended levels has no extra benefit for bones. Supplementation may be warranted if you are unable to get enough calcium in your diet, but it needs to be done with consideration," she said.
All of this serves to validate the importance of ensuring that we get nutrition from plant sources (food) not from inorganic minerals (rock). Human beings are designed to get the nutrients they need from plant-based sources. The food matrix is essential to the bioavailability of minerals like calcium. The same problems associated with synthetic vitamins increasing the morbidity rate is now being validated with inorganic minerals. Always ensure that you supplement vitamins and minerals with a 100% plant-based supplement. |

Greetings!
Well, after 9,000 miles in our car we're back home in Colorado for the month of August! It's been an amazing road trip as we've met with many hundreds of you across our country and in Canada too. We have been blessed being with you! As we teach in your communities and link our mission of the education of Glycobiology with the meaningful work of feeding malnourished children around the world, it's been rewarding to say the least.
It's truly a tragedy when 14,000 children die every day due to malnourishment when we know that real nutrition would solve that crisis. So we are moving forward with education and linking consumers of real nutrition to malnourished children who would otherwise have no option. When we feed ourselves, we feed a child. It's that simple. This social entrepreneurial effort began nearly two years ago and we have already given nearly 40 million servings of real nutrition to malnourished children in more than 83 nations just because people like you and me are feeding ourselves! Don't Believe Everything On Facebook
I was all excited when I saw a Facebook post about how you can read those little stickers they put on fruit in the produce section at the grocery store. I was so excited, I re-posted it! I thought, "This is great! Now, we can identify what's locally grown, what's GMO, what's conventionally grown and what's shipped from far away places!" This would have been great if it was a foolproof system and they actually used the code for GMO. What a great system...NOT!

PLU Codes On Produce Not So Helpful
Have you ever seen the labels stuck on the apples you buy at the store? These stickers have a four or five digit code on them. These codes are organized by the Produce Marketing Association. The 4-digit codes on the labels tell the checkout clerk what the produce is so they can charge you the correct amount and the inventory folks can keep track of resupply needs. For example, a small Fuji apple has a code of 4129 and a Honeycrisp apple is 3283. If there is a 5-digit code starting with a 9, then the produce is organic. But it is usually easier to read the larger print that says it is organic rather than the smaller number.
PLU Codes Do Not Distinguish Genetically Modified Produce
Some savvy consumers discovered that the association developed a 5-digit code beginning with an 8 that was to represent GMO (genetically modified) produce. The trouble is these codes were never designed for the consumer. They were developed for the retailer. And because of the political and health concerns raging around GMO, that code is never used by the retailers. So, the consumer cannot tell from looking at the PLU codes which produce is natural and which is GMO.
Because most Americans say they would avoid purchasing GMO if given the choice, retailers never use it. Some seed companies don't even want gardeners to know which of their seeds are GMO. One company that sells zucchini seeds modified with virus genes refuses to sell seed packets in Vermont because that state requires genetically modified seeds to be labeled as such.
Avoiding GMOs
Where does that leave the consumer? According to the Huffington Post, finicky eaters who value their immune and reproductive systems and don't want their kids to end up with organ damage common among GMO-fed lab animals have some options. If you go to NonGMOShoppingGuide.com, you can review the lists of non-GMO and GMO brands by category. Although a list of non-GMO brands won't help you figure out if your produce is genetically modified because each brand's produce still comes from various suppliers. The good news is that there are currently only four types of fruits and vegetables that are GMO at this point - papaya from Hawaii, some zucchini and yellow squash, and some corn on the cob. Make sure there is a sign that ensures the particular produce you are purchasing in these categories is organic AND non-GMO. The eight GMO food crops are corn, soybeans, canola, cottonseed, sugar beets, Hawaiian papaya (most) and a small amount of zucchini and yellow squash. Old-Fashioned Letters
I remember in elementary school having a pen-pal. She lived in a different state and we wrote letters back and forth to each other. It was great fun receiving a letter in the mail! With today's quick communication via email and text many have no need for handwritten letters. However, I still think there's something meaningful about getting a handwritten letter - I hope it won't completely go out of style!
Today, getting to be a pen-pal with my own grandchildren is even better than my experience all those years ago... Just last week I was all smiles upon seeing a letter addressed to me from one of my granddaughters... yep, there's something special about getting a letter in the mail, and that's a healthy relationship! |
