Just Say "No"
  
Say "no" to the good so you can say "yes" to the great!
 
Sometimes we settle for good when we could really reach for what's great! And, sometimes we fill our lives with so much "good" that we are too busy to really do that which would be great. It's not always easy to recognize where we are limiting ourselves due to "busy" activities that aren't really growing us. But I find if I look at where I'm spending the majority of my time I can better determine if saying "no" to some of the things would free me up for more focused pursuits of excellence.
 
TV was something I had to say 'no' to. It's amazing what turning the TV off can do for getting things done. This doesn't mean there aren't good things on TV. I really enjoy watching my favorite cooking show or the ever interesting History channel but it does mean it's not on most of the time. I am free to pursue many more worthwhile things simply because I've chosen great over good. =)

Hidden Soy
  

Soy is one of the top 8 allergens. The best way to avoid soy in the food suppy is to buy whole foods and prepare them yourself. Soy is pervasive in the U.S. food supply, so if you develop a soy allergen this may be your only option. Soy is often hidden under many aliases like "boullion," "natural flavor," and "textured plant protein" on ingredient lists.

What a month April has been...and now it's going to pick up even more as we begin traveling on the 14th of May. We will be visiting many of YOU in 22 states, 50 cities (and counting), and two countries! We'll be back home by December 1st so we will spend Christmas in Colorado.
 
We have been inundated with emails and calls as people have heard that we will come and teach a 30-minute Glycobiology class! This gives a synopsis of our more extensive class that is geared toward healthcare professionals and springboards them to CME. This 30-minute class is perfect for those who don't need such an in-depth overview. It is still very impactful and gives folks the option they most likely don't even know exists that there is this most significant science world of glycobiology. It's been such an honor to be instrumental in making this education available to many hundreds of thousands of people over the years!

Did You Know? 
Tofu  

 
Soy Beans courtesy of PublicDomainPictures.netI actually like dishes with tofu if they are prepared well. I'm amazed at how many yummy ways there are to prepare tofu if you'd rather not eat so much meat in your diet. While I'm not a vegetarian I do prefer eating more vegetables and only eating meat sparingly.

 

However, there is a lot of controversy surrounding soy, and tofu, of course, is made from soybeans. Larry has been looking into it so be sure to read the "science" articles below for what he's learned. As for me, I think eating tofu in moderation is probably ok...unless someone else wants to comment on it and shed some more light on the subject. When I eat at Whole Foods market, I just LOVE their "taco" salad with the southwest seasoned tofu and black beans!

Soy Concerns?

 

In Asian cultures people eat small amounts of whole soybean products. Unfortunately, in the western culture food processors separate the soybean into two individual components - protein and oil. Dr. Kaayla Daniel, author of The Whole Soy Story, has written, "Today's high-tech processing methods not only fail to remove the anti-nutrients and toxins that are naturally present in soybeans but leave toxic and carcinogenic residues created by the high temperatures, high pressure, alkali and acid baths and petroleum solvents." She explains that numerous studies now demonstrate that soy does not reliably lower cholesterol but actually raises homocysteine levels in people which has been found to increase the risk of stroke, birth defects, and heart disease. Other common problems linked to high-soy diets include thyroid problems, premature puberty, brain damage, cancer, kidney stones, food allergies, and weakened immune system. In addition, approximately 80% of the soy used in this country comes from genetically modified soybeans. Non-fermented soy products contain phyoestrogens (isoflavones like genistein and daidzein) which mimic and sometimes block the hormone estrogen. They contain phytates which block your body's absorption of minerals. They have enzyme inhibitors which discourage protein digestion. They contain high amounts of omega-6 fat which is pro-inflammatory.

 

Why are so many people (approximately 85% according to surveys) favorable to soy? Dow Chemical and DuPont have heavily promoted processed soybeans for health conscious folks who wanted to avoid meat and milk in their diet and supported earth-friendly environmentalists. These marketing campaigns resonated with many folks. Unfortunately, recent published studies including one from the American Heart Association no longer support the health claims about soy that were initially endorsed by the U.S. government.

 

Not All Forms of Soy Are Bad

 

Many people like to eat tofu occassionally in their diet. As long as you are not on a high-soy diet, it is probably not a problem. Eating a diet rich in vegetables and fruits allows you to eat other things like meat or soy in moderation. However, if you have food allergies you will want to be careful and do further investigation. We do know that properly fermented products like natto, tempeh, and miso do not cause the same problems within the body. It is the unfermented soy products used primarily in western processed foods that cause the problems. These unfermented, processed soy products include soy milk, soy cheese, soy burgers, and soy ice cream. In addition, soybean oil is commonly sold as vegetable oil which consumers view as healthier but isn't. Undoing this misinformation is a slow process. The Soyfoods Association of North America reported that soy food sales increased from $300 million in 1992 to nearly $4 billion by 2007. The importance of educating people so they can make an informed decision regarding their health is critical.

Once in a while someone finds themselves in real need. Most people would rather not be waited on hand and foot but on occasion it is what's needed! One of my dearest friends had one of her single, adult sons come home as he needed back surgery due to an injury he sustained. I love this son like one of my own since our kids all grew up together. It really pained me to know HE was in such pain and would have a tough recovery due to his injury and surgery. I was so glad to put together a little surprise - a "get better soon" basket that I hoped would lift his burden a bit. It wasn't a huge thing. It took only a small amount of time and effort. Knowing I could do something so he would know others were praying for him and thinking of him ended up lifting me! Funny how that works. You can't bless others without blessing yourself! And, truly I do think the person MOST benefited when kind acts of service are given IS the person providing the service. It's a wonderful way to live.
