I love that because in order for ME to become all I can be I must take complete responsibility for myself. What I choose to do today will directly affect my tomorrows. There are no excuses... while God is the captain of our soul, we are captains of our own ship. We get to chart our course through life guided by eternal principles of truth He has ordained. While we can't control the wind (or the storms) we CAN set the sail!
 
Becoming the very best version of ourselves requires this full responsibility and clear recognition that WE CAN SET THE SAILS...and by so doing we will find ourselves living in the future we most want to live in. We can make it a great 2012!

Happy New Year!
 
I can hardly fathom it is 2012 and we're already through the first month! Truly, time flies...but we are enjoying the ride and are looking forward to the next 11 months and beyond. It's a great time to be involved with the Education of Glycobiology - the need is bigger than ever and there are more and more people recognizing the hope which comes from understanding the role this science plays in our well-being. When you have your health you have a lot! Living is definitely more fun when your immune system functions well.

Hummus...Huh?  

 
Cranberries © Pawel Strykowski | Dreamstime.comHummus is a great treat and snack! I had no idea how good chickpeas could be. I love them in salad but had never really knew they were the main ingredient for hummus. Recently we watched a cooking show, Cooking With Giada, where Giada showed how easy it is to make your own hummus. She did a roasted eggplant hummus which sounded less appealing to me since I'm not a big eggplant fan, but I was hungry so decided to give it a try. Wow, was I surprised...check out the recipe in this issue and you can give it a try too. We love it as a spread for vegetable sandwich wraps, for a dip with pita chips, crackers and/or vegetables. It was so good I'm making my second batch today! I even learned eggplant can be disguised nicely so you don't even have to like it to love it in hummus! And, of course, it's good for you too...that's a healthy bonus. =)

Dairy Benefits - Real or Bogus?

 

John Robbins, author of The Food Revolution, refutes the popular myth that dairy products, especially cow's milk, is a dietary necessity to get enough calcium and develop strong bones. We've all seen the television and billboard ads featuring celebrities with the famous "milk mustache." What Whoopi Goldberg, Venus and Serena Williams, Tyra Banks, Spike Lee, and Patrick Ewing don't know is according to the Food and Drug Administration, there is no evidence that increased calcium intake from milk will lower the risk of osteoporosis for African Americans. President Clinton, Steve Young, Mark McGwire, and Dennis Rodman apparently don't know that the FDA finds no evidence that increased calcium intake from milk lowers the risk of osteoporosis for males. How about the ad featuring Larry King and the claim that increased milk consumption lowers the risk of high blood pressure? No evidence. Well, surely women are different? Not according to the Nurse's Health Study, a 12-year study involving 78,000 women. The study actually found the relative risk of hip fracture for women who drank two glasses or more of milk per day was actually 1.45 times higher than for those who drink one glass or less per week!

 

How about growing girls? Nope. A study published in 2000 in Pediatrics, the medical journal of the American Academy of Pediatrics tracked a large group of 12 -18 year old girls for 6 years. Consistent with previous studies, they found that low or high calcium intake

made no difference as to bone development. Contrary to the dairy industry claim, their findings contradict the commonly held belief that the road to strong bones is higher calcium consumption through dairy products. It is not.

 

Dangers of Dairy

 

The president of the Physicians Committee for Responsible Medicine, Neal Barnard, M.D., spoke strongly about the dairy ads. "The diary industry continues to whitewash the dangers of cow's milk. The ubiquitous 'milk mustache' campaign makes misleading claims about milk preventing osteoporosis, lowering blood pressure, and enhancing sports performance. Recent studies, including the Harvard Nurses' Health Study, have shown that milk offers no protection against broken bones. And, unlike prescription drug ads, the mustache ads don't reveal the many unwanted 'side-effects' of milk, among them increased risk of prostate and ovarian cancer, diabetes, obesity, and heart disease."

 

One cup of cow's milk contains 300 mg of calcium but only 32% (96 mg) is bio-available to the body. You can derive the same amount of bio-available calcium from 1.5 cups of cooked broccoli or 0.3 cups of sesame seeds. Plant-based sources provide plenty of calcium. Unfortunately, when we eat food based on animal protein, salt, or with coffee we actually lose calcium through urinary excretion. A woman will lose 28 mg of calcium after eating a hamburger and 2 mg for each cup of coffee. This goes a long way to explain the following statistics:

  • Countries with the highest consumption of dairy products: Finland, Sweden, United States, England
     
  • Countries with the highest rates of osteoporosis: Finland, Sweden, United States, England
     
  • Daily calcium intake for African Americans: More than 1000mg
     
  • Daily calcium intake for black South Africans: 196mg
     
  • Hip fracture rate for African Americans compared to black South Africans: 9 times greater
     
  • Calcium intake in rural China: 1/2 that of people in U.S.
     
  • Bone fracture rate in rural China: 1/5 that of people in U.S.  
Shave Your Milk Mustache!

 

Cow's milk is the perfect food to turn a 90-pound calf into a 450-pound cow in one year. Human breast milk is the perfect food for human babies. Adult cows do not drink cow's milk. Neither should we. There are wonderful, healthier alternatives like almond milk and rice milk. If you haven't tried these options, you are in for a pleasant surprise. You can have your cake and eat it too. But when you wash it down, use a plant-based milk - your body will thank you.

Dating Your Children

 

Each January when our children were growing up, we held a special family "counsel." We gathered together with dad who held the calendar for the new year. We went through each month and scheduled the "dates" each of our children would have with us. This was such a fun time as we all got excited about the special time we would have with them individually. From the youngest to the oldest, we calendared the name and type of date we would be enjoying. Everyone was excited to share what they wanted to do when it was their turn, like visit the pet store to hold the new puppies, ride the escalator and stop for ice cream.
 
It was fun over the years to see how the dates "grew" right along with them. Shopping for just the perfect sweater or jeans became the anticipated outing! Since we had 5 children, each child got two special dates a year as we kept November and December for special holiday events. That doesn't seem like a lot but with a large family it was perfect and kept it meaningful because they weren't too frequent. Dating your children not only makes them "queen or king" for a day but also ensures when mom and dad have their dates everyone understands this special time and can easily say, "Good-bye, see you later." That's building Healthy Relationships!
