Campus Ministry in the Diocese of North Carolina seeks Chaplain's Assistant 

Raleigh Episcopal Campus Ministry in the Episcopal Diocese of North Carolina reaches out to students at NC State University, Shaw University, Meredith College, Peace College, and Wake Technical Community College with the three-fold aim of fostering worship, community, and justice. The ministry is seeking an individual with a Bachelor's degree to be the Chaplain's Assistant for the 2014-2015 Academic Year. The Chaplain's Assistant will meet with students on the cam
puses and help build a worshipping community of hospitality among students members of Raleigh ECM. The position is 30 hours per week beginning August 1 and ending May 30. Please contact The Rev. Deborah Fox at deborah.fox@ecm-raleigh.org .

The United Thank Offering
Grants Awarded

On June 12, 2014, the United Thank Offering of the Episcopal Church awarded 48 grants for a total of $1,525,407.78 for the mission and ministry of the Episcopal Church and the Angelican Communion. The 2014 grants were awarded to projects in 36 domestic and overseas dioceses.

We are happy to report that the Diocese of East Carolina is the recipient of one of these grants. It is a $27,842.00 grant for the Colegio Episcopal Prof. Laura Morrow Playground for our companion Diocese in the Dominican Republic.  

Thanks to all of you in the Diocese of East Carolina for your continued support of UTO. As you can see, your support help projects that address human needs and help alleviate poverty, both domestically and internationally.

God Willing, The Right Reverend Gregory Brewer, will ordain Eric Morgan Moulton to the Sacred Order of Deacons in Christ's One Holy Catholic and Apostolic Church. The ordination will take place on Wednesday, July 23rd, at 6:00 p.m., at St. John's Church, located at 1219 Forest Hills Drive in Wilmington, NC. Your prayers and presence are requested.

Spend some leisure time at local attractions like Fort Macon, the Maritime Museum's Blackbeard's Queen Anne's Revenge Exhibit, or the N.C. Aquarium's Summer Dinosaur Exhibit which is a big hit with families.  Attending an outdoor music concert or movie is a unique summer treat as is just walking along the beach as the sun sets.

Our rooms include a double bed, single bed, and private bath.  Guests share our central living rooms including comfortable furniture, a small kitchenette with ice and coffee machines, television and-if you must contact the outside world-Wi-Fi access. Buffet-style meals may be available for an additional cost in our common dining room at set times, or instead opt to enjoy one of the many local restaurants.

We are also now taking limited reservations for our well-loved Beachside rooms.

The Diocese of Western North Carolina held their History Day on June 7, 2014 at Valle Crucis Conference Center. Mamre Wilson, East Carolina historiographer attended the event. She said the speakers were wonderful and that she was impressed with all the historical items that had been collected. These items were displayed in the Bishop Ives Cabin at the conference center.

Healthy Recipes at Church Pension Group

Each month at the Church Pension Group website, under the Wellness Center, are monthly healthy recipes. This month's delicious idea is gazpacho!
Gazpacho is a soup made with raw vegetables and served cold, perfect for summer heat! Here's the recipe:

Ingredients:
2 large tomatoes
1 medium cucumber, peeled and chopped
1 green or red pepper, seeded and chopped
1 medium onion
1-2 cloves garlic
3-4 tablespoons red wine vinegar
5 tablespoons of water (add more or less according to the consistency you prefer)
2 tablespoons extra virgin olive oil

Directions:
Place all ingredients into a blender and blend until smooth. Pour the puree through a sieve. Refrigerate until chilled.
Like a thicker consistency? Before blending, add a slice or two of bread that has been soaked in cold water and then squeezed.

Optional Garnish:
Just before serving, sprinkle with chopped cucumber, tomato and green pepper.
