Healthy Recipes at Church Pension Group
Each month at the Church Pension Group website, under the Wellness Center, are monthly healthy recipes. This month's delicious idea is gazpacho!
Gazpacho is a soup made with raw vegetables and served cold, perfect for summer heat! Here's the recipe:
Ingredients: 2 large tomatoes 1 medium cucumber, peeled and chopped 1 green or red pepper, seeded and chopped 1 medium onion 1-2 cloves garlic 3-4 tablespoons red wine vinegar 5 tablespoons of water (add more or less according to the consistency you prefer) 2 tablespoons extra virgin olive oil Directions: Place all ingredients into a blender and blend until smooth. Pour the puree through a sieve. Refrigerate until chilled. Like a thicker consistency? Before blending, add a slice or two of bread that has been soaked in cold water and then squeezed. Optional Garnish: Just before serving, sprinkle with chopped cucumber, tomato and green pepper.
