Bonjour Mes Amis:

I truly believe that cooking is an art form, part preparation and part presentation, both equally important. It's much easier to cook if you have seen the dish prepared in front of you, and seen the final presentation. We here at L'Auberge de Seattle Inn and French Specialty Cooking School practice a lifestyle that has been passed down from generation to generation, as a livable art form of refinement and gracious living. We celebrate the art of the vine, the art of wine and the art of the table through our gourmet cuisine experienced during our cooking classes.

On my recent travel tour to France...I kept coming across Unesco Heritage sites; these sites are marked as conservation and preservation of cultural properties.  These are physical places such as monuments, buildings, and cities like the Palace & Park of Versailles, The Chartres Cathedral or Mont Saint Michel.  Imagine my surprise when I realized that Unesco also has a list they call intangible Cultural Heritage for humanity.  This list is comprised of social practices, traditions of living expressions inherited from our ancestors and passed on to our descendants.  One of these Unesco Intangible Cultural Heritage practices from France is The gastronomic meal of the French.  It is a festive meal bringing people together for an occasion to enjoy the art of good eating and drinking.

The gastronomic meal emphasizes togetherness, the pleasure of taste, and the balance between human beings and the products of nature.  Important elements include the careful selection of classical French recipes; the purchase of good, local produce whose flavors go well together; the pairing of food with wine; the setting of a beautiful table; and specific actions during consumption, such as smelling, tasting items at the table and of course appreciating and talking about the food.

Come, and join us and part take in a cooking class with us. Each dinner cooking class meal is a delicious experience; and voila an example of The gastronomic meal of the French!

What to look forward to when you book a culinary cooking class:

Our cooking classes are located within Auberge de Seattle Inn, in the Woodinville Wine Country, on the Eastside of Seattle.  Originally, a five acre private estate that is now a commercial establishment.   We are not open to the public and by invitation only.  You will find that "all" of our hands-on cooking classes are not held in the typical cold and industrial type of cooking kitchen;  as we take our cues from the warm and homey French "manoirs" from the Loire Valley of France.  Our classes are unique culinary experiences for those interested in a non-threatening cooking environment under the guidance of one of French classically trained chefs.   Our focus is on French "CLASSICAL" cuisine,  (cooking traditions from the French country side) compared to French Haut Cuisine.   We welcome our guests to meander on our grounds and visit our "potager" vegetable garden.    When the weather and climate permits you will join us as we harvest from the garden for your cooking class.

Ile de France, May 10, 2014

Ile de France is in central France...where all the trains and trucks bring their produce to the capital city of Paris.  Food abundance and variety abound at the local markets.  Our Chef Christine Olieverie was raised in this province and the menu presented is full of her favorite recipes.
