SHIITAKE NOODLE SOUP

Our comforting version of chicken noodle soup, minus the chicken of course: energetically relaxing cubes of pan seared tofu are floating in a richly flavored yellow miso, wakame sea vegetable, and shiitake mushroom broth, along with beta carotene rich carrots, cooling and naturally diuretic celery, pancreas healthy yellow onions, quinoa noodles, a few sprigs of fresh dill, and a garnish of chlorophyll rich fresh green parsley.

Balanced and nutritious medium grain brown rice, is cooked with hato mugi, a grain valued in the orient for its ability to calm the nervous system, cleanse the liver of fat and toxins, and beautify the skin. Powerfully mineralized kombu sea vegetable, vitamin E and omega fatty acid rich toasted sunflower seeds, and plenty of chlorophyll rich fresh green parsley, form this pure and simple mixture of the best for your health basic whole grains. Garnished with cellular cleansing sesame seed gomashio.

This "main course" cobbler (not to be mistaken with a dessert cobbler) is filled with saut�ed protein rich and easily digestible tempeh, sweetly diced carrots, rutabaga, and parsnips, subtly pungent mineral rich turnips, green peas, pancreas healthy kabocha squash, and a delectable cobbler topping of rolled oats and almonds.

MILLET WITH BLACK BEAN SAUCE

Relaxing and alkalizing good for the stomach and pancreas whole grain millet is spiked with fresh yellow corn, and formed into polenta like cakes, then smothered in an rich sauce of beautiful kidney and adrenal healthy black beans cooked with flavor enhancing and mineral rich kombu sea vegetable, and naturally sweet yellow onions, fresh ginger, and chlorophyll rich, good for the liver, fresh green chive garnish.

VEGETABLE SPRING ROLLS WITH UMEBOSHI GINGER GLAZE

Chinese cabbage, green cabbage, red cabbage, carrots, yellow onions, and celery, are stir fried with circulation promoting fresh ginger root, wrapped and baked in sprouted grain pastry, and glazed with a tart and alkalizing umeboshi plum and tamari glaze, to create the delicious and healthy non-fried Wholly Macro signature spring roll. Finished with fresh chives.

Oats are full of power and whole grain vitality. They work well to create this thick and rich porridge like dessert pudding that incorporates kombu sea vegetable, sesame tahini, almond milk, brown rice syrup, cinnamon, currants, coconut, and vanilla, topped with intestinal strengthening, digestion promoting, and generally alkalizing kuzu, and calcium rich almond cr�me.

**Wholly Macro makes every attempt to maintain a totally vegan and allergen free kitchen cooking environment. We make every effort to avoid any type of cross contamination during food preparation. Most foods used in the Wholly Macro kitchen are not packaged, but instead are bought in the produce section or in bulk. But as you know, cross contamination is always a possibility, especially with bulk items. And in the few packaged foods that we do use, such as nut butters for example, it is common to find warnings on the manufacturer label stating that the item was processed in a plant that handles tree nuts, soy, wheat, dairy, gluten, shellfish, and so on.
Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.
We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.

You Can Never Eat Too Many Vegetables ~
Can You Even Eat Enough?
Do you get your minimum daily requirement of fresh produce each day??
We know that we do. We get the minimum daily requirement and more. And we do our very best to help all of you to get much more than the minimum daily requirement of fruits and vegetables each day as well.
But do you know what the latest recommended minimum daily intake of fresh produce is each day?
A whopping four to five cups!!
That is way up from previous years.
And that is a lot, even by our standards.
Imagine four to five full cups of vegetables. Then imagine them spread out on your plate. Four to five cups of fresh produce alone would fill at least two plates.
If you can imagine a visual of it, you can easily determine if you are getting anywhere near that much fresh produce into your body on a daily basis.
To help you out, imagine what a typical plate of food at a restaurant would look like. Usually it is a large serving of protein. Fish or meat, or even beans or tofu if you are lucky. Accompanied by a starch or carbohydrate. Usually potato, but once in a while white rice. And nowadays, even brown rice and quinoa make an occasional appearance.
And then, and you need to get out a magnifying glass to see it, a small little mound of vegetables. SO small. If at all! Many restaurants don't even serve vegetables as part of the main course. Sure, you can order a side of vegetables if you wish, but the quantity falls way short of four to five cups, and the variety is non-existent.

How are you ever going to get four to five cups of vegetables into your diet at that rate?
When we look around at what most people eat, we can see that they don't get anywhere near the proper quantity of fresh produce into their diets each day.
And it is not just about the quantity. It is about the quality, and the variety.
Sure. It is easy to eat a bowl full of lettuce, and stretch it out in your mind and make it look like four to five cups in quantity of fresh produce. But does that really count as quality and variety?
You should strive to, and make it your goal, to consume the recommended four to five cups of fresh produce, per day. And even more than that if you possibly can.
You can literally NEVER eat too many vegetables.
The question is: Can you even eat enough?
Here are a few ways to get four to five cups of fresh produce into your diet on a daily basis: Take that bowl of lettuce, and turn it into an event! Fill it with a variety of fresh greens, fresh sprouts of all sorts, onion, carrots, beets, cucumber, radish, watermelon radish, heirloom tomatoes, fresh olives, jicama, snow peas, green beans, fresh corn, and any other fresh produce that you can get your hands on. Then you will have a SALAD. And then you will begin to meet the daily quota for fresh produce. In quantity, quality, and variety.

Add to that by doing what we do here at Wholly Macro: Introduce fresh produce into all of the basic dishes that you create.
Don't just make grains. Make grains, and spike them with a variety of diced veggies.
Don't just make beans; make beans with kabocha squash and onions, or any other favorite vegetable.
And always steam or saut� several other fresh vegetables at each meal as well.
And enjoy seasonal fruit too, health permitting. Fruit is full of antioxidants, and also counts towards your fresh produce quota.
Recent research suggests (via AARP) that the phyto chemicals found in plants are so important, that blood tests are being developed as we speak to test your blood to see if you have consumed enough fresh produce to raise your levels of the thus far known and researched, all important antioxidant rich phyto chemicals found in plants.
Talk about the medicine of the future. That would be quite a feat, to compliment current medical practices with blood tests to test for adequate fresh produce consumption.
Would you pass, or flunk??
Make healthy changes to your diet now.
Eat your vegetables.
Just do it.
All evidence suggests that this is the way of the future.
Be the future NOW! Don't wait, because your health is at stake!
