Sweet and creamy winter squash lends themselves perfectly to form a thick and rich base for this healthy miso soup. They are cooked with kombu sea vegetable to impart easily digestible minerals into the broth, sweet and orange beta carotene rich kabocha squash and carrots, crispy and naturally diuretic celery, sweet yellow onions, bursting with sweet and juicy sun drenched flavor bright yellow corn kernels, fresh ginger root, mineral rich wakame sea vegetable, immune system strengthening shiitake mushrooms, enzyme rich yellow miso, liver cleansing orange zest, and a garnish of fresh green chives.

Perfectly balanced medium grain brown rice is cooked with kombu sea vegetable to enhance it's mineral content, then tossed into a colorful paella with protein rich delectable morsels of tempeh, fresh green peas, sunshine yellow corn kernels, red onions, digestion promoting green olives, omega fatty acid and trace mineral rich sunflower seeds, pungent fresh ginger, and a touch of tangy and alkalizing umeboshi plum.

Pancreas healthy chick peas, deeply rich red heart healthy kidney beans, and iron and mineral rich good for the kidneys black beans, are cooked with kombu sea vegetable to aid in their digestion and enhance their mineral quality, then combined with enzyme rich pickled cucumber, red onions, and radish, to create a fresh and flavorful crunch. Finished with a burst of liver cleansing tangy lemon zest, alkalizing umeboshi plum, olive oil, and chlorophyll rich fresh green dill.

Lovely and fun to eat fettuccine noodles are smothered in a rich, creamy, and most importantly healthy alfredo sauce, made with protein rich and high in calcium tofu, yellow onions, and bursting with live enzymes yellow miso, laced throughout with cremini mushrooms, and the unique flavor and immune system supporting quality of shiitake mushrooms, and garnished with fresh green iron rich, red blood cell building Italian parsley.

Graceful french cut green beans, are lightly stir fried with blood cleansing and generally strengthening fresh burdock root, good for the stomach and pancreas rutabaga, beautiful beta carotene rich julienne carrots, circulation stimulating fresh ginger root, a touch of flavorful toasted sesame oil and tamari soy sauce, and a crunchy garnish of lightly roasted almond slivers.

**Wholly Macro makes every attempt to maintain a totally vegan and allergen free kitchen cooking environment. We make every effort to avoid any type of cross contamination during food preparation. Most foods used in the Wholly Macro kitchen are not packaged, but instead are bought in the produce section or in bulk. But as you know, cross contamination is always a possibility, especially with bulk items. And in the few packaged foods that we do use, such as nut butters for example, it is common to find warnings on the manufacturer label stating that the item was processed in a plant that handles tree nuts, soy, wheat, dairy, gluten, shellfish, and so on.  

 

Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged  or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.

 

We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.

WEEKLY ARTICLE:

Flash Freezing ~ To Make Your Wholly Macro
 Delivery Food Last All Week

We often talk about purchasing extra food from Wholly Macro, to keep in your freezer indefinitely, or at least for while we take periodic vacation breaks and our kitchen is closed.
 
We would if we were you.
 
We DO in fact. We always have several containers of leftover Wholly Macro food in our freezer. Because you just never know where life is going to take you, or when it is going to take you away from the kitchen!

But we have not ever written about our tried and true weekly method of Flash Freezing.

The purpose of Flash Freezing, and the reason that we developed our little method of doing so,  is so that you can have Wholly Macro food for the entire week, from delivery day to delivery day, and keep your order of Wholly Macro food fresh for the entire week. Without freezing it.
 
We developed this method, because so many of you want and need your Wholly Macro food for the entire week, not just for a few days. And because Wholly Macro provides so many other services to our interested and supportive community, such as Cooking Classes, Consultations, Catering, Public Speaking, and more, we are unable to devote more than one time a week to our very popular Prepared Food Delivery Service. 
 
We are very frequently asked how long the food order will stay fresh, and how to make it last all week. And although we have verbally advised many of you to use our Flash Freeze method, and very successfully at that, we have never gotten it down on paper.

We have finally awoken to the fact that our Flash Freezing advice is important, and that it deserves it's own newsletter article. 

A little back-story first though (of course!), and then to the Flash Freezing facts:

What seems like about a million years ago, I was married to a European man. And in the early years of our marriage, we lived in a loft next door to his parent's house, in Northern Europe.
 
It was quite an experience.
 
His mother was an old fashioned cook. And master baker.
 
The kitchen was so practical and amazing, and SO un-American. As in NOT modern. But it was very functional. And she cooked up a veritable storm!

Everything was totally fresh and homemade. They had a gorgeous garden, which grew even in the winter. She would harvest kale and parsley from underneath the snow.
 


And it was so freezing cold there. I mean so seriously cold, that icicles the diameter of my thigh hung all the way around the house, from the attic to the ground.
 
We're talking about icicles that were at least 30 feet long.
 
The kitchen was definitely the center of the home. And it was so warm in there by contrast. My Mother In Law had a regular stove and a wood burning stove. And she cooked on both. It wasn't uncommon to have to open a window in the kitchen to cool things down.
 


The rest of the house, while heated, was pretty cool in comparison.
 
The "refrigerator" was basically a pantry in a walk in room next door to the kitchen that simply wasn't heated. Everything stayed fresh in there, but because it was within the home, and insulated, nothing froze.
 
And then, below the home, in the cellar, was a legitimate, bona fide, Root Cellar.
 
I had never seen a root cellar before, and I just loved it.
 
It was huge, and my Father In Law had built shelving and tables in the entire area. It went on and on. And it was not heated at all. But it too was insulated, although its insulation came from the walls of semi frozen earth that surrounded it, not from the walls of the heated home.


 
It was quite a bit cooler down there in the root cellar.  
 
Perishable foods were stored down there: Meat, eggs, milk, and table after table and row after row of her absolutely amazing homemade baked goods. And breads. Did I mention the homemade breads!!





My Mother In Laws mother, my ex-husbands grandmother, lived there with the family too, and she was also a baker extraordinaire. They competed with each other, so amazing food was abundant!
 
I always said that they could have opened up a bakery here in the US, offering authentic European desserts, and been a huge success. They were that good! I learned a lot from both of those lovely women.
 
Anyway, back to the root cellar. Everything stayed perfectly fresh in that root cellar, in a state of suspension between way colder than a refrigerator, but not as cold as a freezer.
 
Nothing was ever fully frozen.
 
Foods lasted forever when stored in that root cellar. And they utilized it fully and constantly for superior food preservation, including homemade sauerkrauts and various other pickled and fermented foods. It was part of their way of life, and a good one at that!


 

Many of you are familiar with root cellars. You may even have one in your own home. I hope you put it to good use if you are lucky enough to have one!
 
Here in Florida we don't have root cellars. 

 
 
In my longing for a root cellar for superior fresh food preservation, I have come up with a method that I call Flash Freezing.


 

Wholly Macro's Flash Freeze Method Of Preserving The Life Of Your Fresh Delivery Food Items For The Entire Week


I use the Flash Freeze method when I want to extend the life of any given food. I have a separate freezer that I have set to just above freezing, and I am able to keep food in there, keep it fresh, and preserve its life expectancy for much longer than if it was in the mere refrigerator, or on the shelf of my not so cool Florida pantry!
 
We use our makeshift freezer / root cellar mainly for storing perishable grains, flours, dried goods, nuts, seeds, fermented foods such as tempeh, and similar. Items that I would LOVE to store in my root cellar. IF I had one!
 
But for our clients who wish to order enough food to last them for the entire week, without freezing the food, I always recommend our makeshift OR real (if you have one) flash freeze / root cellar method for preserving the life of your freshly prepared Wholly Macro delivery food.
 
You don't have to buy a separate freezer to do this, so please don't panic. Just read on!

I always advise them to order two or more SMALL containers of several items of their choice of dishes from the current weeks menu, and to place one or more of the duplicate containers in their regular freezer, (or root cellar), for several hours, or overnight.
 
Always keep one set of containers in the regular refrigerator for immediate use.  
 
I then advise them, after the several hours (about 10 or so), or overnight, to remove the containers from the freezer and place them directly into the refrigerator, untouched.
 
They should be VERY cold. Almost frozen, or even ever so slightly, briefly frozen.
 
Lets call this state of suspension between very cold and fully frozen: Root Cellar Frozen! Or, as I usually call it: Flash Frozen.
 
This takes the better part of one day to achieve.
 
Once the containers are placed in the refrigerator, it will take them another good day or so to come back to normal refrigerated temperature. Thus extending the life of the food within the containers by two to three days.
 
If you eat from the first set of containers for the first few days after you receive your food, (the one's that you put directly into your refrigerator, not freezer), lets say from Wednesday through Saturday, and if you then eat from the extra set of containers of food, (the one's that were in the freezer being flash frozen), for the last few days of the week, lets say: Sunday through Wednesday, and you then receive a fresh order of food on that following Wednesday, you will have preserved your fresh Wholly Macro food for the entire week, and eaten fresh - never frozen food.
 
Flash frozen, yes. Root cellar frozen, yes. But not deep freeze frozen.

It is imperative though, once you move the flash frozen containers back to the refrigerator, that you keep those containers of food, the flash frozen containers, closed and sealed to preserve their freshness.
 
We have found over the years, that once the containers are opened, and poked around in, they do not maintain their freshness nearly as well as if they are unopened.
 
And please always use clean, unused utensils; being careful not to introduce food from one container into another container via dirty utensils will also preserve the life span and freshness of the food.
 
We have many customers who order a few sets of containers each week to last them the entire week, and don't even bother with the Flash Freeze method. They just leave their extra containers unopened in the refrigerator for the bulk of the week, and they are perfectly fresh when they dig into them early the next week.
 
We have inadvertently done the same thing ourselves several times over the years, just "not getting to the food in a timely manner". Sound familiar? It happens!! We are always absolutely amazed at how delicious the food is, even days later, when it is left untouched and unopened in the refrigerator.
 
But in a perfect world, planning is always best.
 
So if you know that you want to order enough food to last you for your entire busy week, and you prefer your food fresh, not frozen, we recommend that you make it a point to use our flash freeze method.  Just go ahead and plan well for yourself each week, so that you always have a nice fresh container of your favorite Wholly Macro menu items to dig into later in the week, never go hungry, and NEVER have to resort to unhealthy convenience food.
 
Wholly Macro's freshly prepared food is made entirely from scratch. Each grain, each bean, each vegetable, is so fresh, that even if you do freeze it for a few hours, days, weeks, or months, it is still FAR fresher than frozen, canned, or packaged foods from the grocery store that may have been "packaged" for a year or more before you purchase them, and may not have started out "from scratch", with pure ingredients, anyway, even at that.
We wish that we could cook fresh for you several times a week, but the labor intensity of what goes into making everything from scratch, and other constraints, prevent us from doing so.
 
So until then, Flash Freezing is the next best thing.

ALL of the Wholly Macro dishes flash freeze really well. You can use the flash freeze method on anything that you order from us.

And pretty much all of our dishes "regular" freeze just fine too.  

Here at Wholly Macro we always have a few soups, burgers, and pastry puffs in the freezer, (our personal favorites) and boy do they ever come in handy!
