Cooking Healthy Food for Yourself is Hard Work!

I want to write about this subject this week, because during the two weeks that we were just closed, I did some serious cooking for myself!

And the memory of that is fresh and vivid!

When Wholly Macro is open for business, we have a team of people who help us cook. We have shoppers, grocery unpackers, vegetable choppers, chefs, and a clean-up crew. 



But when Wholly Macro is closed, it is just the two of us: Jaime and myself. 

And during this past closure, Jaime was out of town, so it was just me. And I have to admit, that the thought of doing all of the above and more for myself, was a bit daunting!

I know that I always advise all of you to order extra food from our delivery service, to freeze for use while we are closed.

And I most definitely did that for myself too.

I followed my own advice, and I am so glad that I did!

But I wanted to cook for myself each day as well.

I wanted to see exactly what it takes to live life without the Wholly Macro lean mean cooking machine  / delivery service fully cranked up and operating.

Because when we are open and operational, it is all about the kitchen for Wholly Macro.

We live, eat, breathe, and yes, even sleep in our kitchen.

The sun literally rises and sets in our kitchen.

And we have lots of help!

But when we are closed, and our routine goes offline, and our help goes away, and it isn't ALL about the kitchen and food, it does become a bit more challenging to cook enough healthy food to get the variety of foods that Wholly Macro prepares, into our daily diet.

Even for us!!

And variety is SO important.

We have written about this before.

There are just SO many nutrients in each and every natural plant based food that grows on this planet.

Known and yet to be discovered nutrients.

If we don't get as many varieties of vegetables, grains, and legumes into our body as possible, each and every day, we can't possibly get all of the nutrients that we need. 


And food science becomes more and more clear about the fact that plant based nutrients protect against disease.
 
We humans (and even our pets) are living longer lives than the human race has ever experienced.
 
And yes, some of that is because of knowledge and education, nutritional supplementation, and modern medicine.
 
But much of it is because of our knowledge and accessibility to a wide variety of plant-based foods.
 
There is much evidence that people who live in areas with limited accessibility to fresh produce, and / or people with unhealthy diets, incur far more health issues and shorter life spans than people who are able to eat well.
 
But eating well is not simple!!

When Wholly Macro is closed, and we fall off of our food centric routine, it becomes challenging to even fit cooking into our lives at all.
 
Again, even for us, "the pro's"
 
When we are closed, we do a lot of work. But it is not food and kitchen related work.
 
It is more home repair work, computer upgrade work, and other things that take us away from the kitchen. Whereas when we are open, our work puts us right IN the kitchen. And even with whatever work we do when closed, we still do not put in a 40 plus hour work week, which is what we do when we are open for business, and what we know many of you do as well.
 
I just do not know how anyone living a busy life, raising children perhaps, and working full, or even part time, can possibly fit real cooking, from scratch, (not microwaving packaged foods), into the mix.
 
Now: I like to think of myself as an experienced cook.

But it really took some serious time, effort, and planning to cook for myself, consistently, each and every day while on my own while Jaime was in Colombia, especially while having many other things to do during those two weeks besides JUST cooking.
 
And it was not just the cooking! I had to fit the shopping in as well.
 
Food shopping is time consuming!! 
The stores and parking lots are SO crowded. The traffic to and from the store is very challenging. And it is really hard to find all of the variety of ingredients, especially fresh produce, and especially in just one store.
 
And to cook well, and especially to create enough variety, you absolutely MUST have a wide array of ingredients on hand.
 
And fresh produce needs to be just that: Fresh.
 
So it is a constant back and forth juggling act: Traffic, crowded parking lots, crowded produce aisles, lines at the cash register, couldn't find everything, thus the need to go to another store, rinse, and repeat!!
 
And the cooking has not even yet begun.
 
First you must drive home, carry the groceries in, unpack the groceries and put them away, REST, and then begin cooking.
 
Forget about a social life!!
 
And did I mention the cleaning up afterwards??!!

 
I found myself longing for an easy, but HEALTHY, convenient way to get the food that I desired to eat, the food that my very life depends on, onto my plate and into my body, without having to cook it for myself every single day!!!
 
Wholly Macro was what I was looking and searching for.
 
Thankfully, I had a freezer full of Wholly Macro food. And believe me, I used plenty of my frozen Wholly Macro food stash to supplement the fresh food that I was making for myself each day.
 
I don't know how long I could have gone on cooking for myself without the help from Wholly Macro! And I LIKE to cook. 
 
But it was more work, and more challenging than I expected, to run my household, busily work, exercise, clean, sleep, garden, do minimal socializing, AND shop and cook.

I did find a cooking groove. I did find a routine. But it was rigid!! I had to start cooking at a certain time of day each day in order to fit the cooking in, eat in a timely matter, and get the whole shebang all done with and cleaned up, so that I could get on with the other necessary things in my life.
 
Here are a few of the meals that I prepared for myself: 


Miso Soup, Udon Noodles with Shiitakes and Cilantro, Wild Salmon and Salad


Miso Soup, Forbidden Temple Black Rice, Hokkaido Adzuki Beans, Hijiki, Lacinato Kale, Mochi, Sauerkraut, Salad and Nori Sheet

Rice Croquette, Black Beans, Hijiki, Salad, Sauerkraut and Mochi
Brown and Wild Rice, Black Beans,
Kabocha Squash, Arame, Salad with Avocado,
Sauerkraut and Mochi 

 

 

I found myself expressing gratitude that I already knew HOW to cook. 

I cannot imagine how difficult it must be to cook when one does not know how to prepare healthy food from scratch, and / or does not enjoy cooking, and / or does NOT have the time to cook.
 
What became most evident to me during this past closure of Wholly Macro's, first and foremost, is the magnitude of the service that we provide.
 
The energy that it takes to cook healthy food.

Cooking for yourself is HARD work!
 
In the above mentioned longing for a way to get healthy and varied food into my body a little more easily, I totally longed for Wholly Macro.
 
I missed our delivery service, because we rely on it, the same as our clients do.
 
And when I read our menus, I am so impressed by them.
 
Our dishes ARE the super foods that we all need to eat each and every day of our lives.
 
There is no substitute.
 
We do not want to have the ailments, however large or small, that we all see so many people suffering from.
 
And so much of it stems from the lack of a consistent and healthy daily diet.
 
So I guess that what I am saying, is that during our last closure, I really missed the convenience and quality of Wholly Macro's cooking!
 
We have a team of cooks here, and together, we are able to get the tremendous array of perfectly orchestrated, varied, and balanced foods to you each week.
 
But little old me, on my own, without my team. Wow. I would say that it is without question, IMPOSSIBLE to cook the way that we cook here at Wholly Macro, just for yourself, week in and week out, on any kind of long term basis, without your entire life literally revolving around your kitchen.
 
And even then, it is doubtful that you could get the variety of food into your diet that Wholly Macro prepares, which is the very food that is truly necessary for optimal health.
 
With that in mind, please gaze upon our Wholly Macro delivery menu, below.
 
And knowing all that you now know about the importance of a consistent and varied daily diet, and how justifiably hard it is to provide for that for yourselves, we hope that you enjoy, and reap the health benefits, of the energy charged food that we prepare for you here at Wholly Macro.

MOCK MISO "TOMATO" BISQUE WITH TOFU SOUR CR�ME
SMALL___ LARGE___
A sweet, creamy, beta carotene rich, highly enzymatic yellow miso based soup, made primarily with pureed carrots, but tastefully highlighted with butternut squash and red onion, richly blended together with relaxing and cleansing shiitake mushrooms, mineral rich wakame sea vegetable, and circulation promoting fresh ginger root, seasoned with umeboshi vinegar, and prepared in Wholly Macro's special way to create a tomato like effect. Topped with a dollop of tofu, lemon, and acid/alkaline balancing umeboshi plum tofu sour cr�me, and a garnish of fresh green scallions. *There are no actual tomatoes in this soup.
BROWN RICE, BUCKWHEAT, MUSHROOMS, AND ONIONS

Power packed, complex carbohydrate, energy enduring whole grain medium brown rice and good for the heart gluten free buckwheat, are cooked to moist perfection, then tossed with the magical and mysterious healing properties of saut�ed shiitake and cremini mushrooms, stomach and pancreas nourishing sweet yellow onions, and liver healthy fresh green scallions.
 FILLO PASTRY PUFFS WITH CRANBERRY AND ONION TAPENADE

An interesting and wonderful blend of sweet and tart, this dish combines the good for the stomach and pancreas naturally sweet flavor of slow cooked yellow onions and leek, with the kidney supportive subtly tart ambience of dried cranberries, in a protein rich base of liver healthy green split peas cooked with kombu sea vegetable for digestibility, and a splash of mirin brown rice cooking "sherry" and naturally fermented shoyu soy sauce, all wrapped in wheat germ and rosemary layered cooked to crisp perfection, spelt fillo pastry. Please heat in a dry frying pan or oven to crisp them up before serving.
LENTIL, SUNFLOWER, AND ARAME HEALTH SALAD

Green lentils are cooked with kombu sea vegetable, then tossed into a healthy salad with power packed roasted sunflower seeds, iron rich and spleen/pancreas healthy arame sea vegetable, green cabbage, carrots, yellow onions, celery, fresh green chives, and a liver cleansing and alkalizing dressing of fresh lemon, umeboshi plum, and shoyu.
  SESAME SNAP PEA KINPIRA

Kinpira is a traditional Japanese saut� of burdock root, known to promote strength and cleanse the blood, and carrots, which support the burdock root in its cleansing properties. They are cut into fine matchsticks, and in this dish, are accented by the presence of brilliantly green sweet, fresh snap peas, strengthening and stabilizing good for the stomach rutabaga, seasoned with toasted sesame oil, ginger, and shoyu, and garnished with mineral rich, pan roasted, flavorful brown sesame seeds.
COCONUT CR�ME CAKE

A delicious and creamy coconut custard layered dessert, the cake is a whole wheat pastry flour, sunflower oil, and "amasake" brown rice milk light as a feather batter, layered with rich and creamy high calcium, low fat tofu, almond, and coconut whip cr�me with subtle hints of vanilla, sweetened with the gently sweet and complex carbohydrate goodness of brown rice syrup, and garnished with toasted coconut flakes.

**Wholly Macro makes every attempt to maintain a totally vegan and allergen free kitchen cooking environment. We make every effort to avoid any type of cross contamination during food preparation. Most foods used in the Wholly Macro kitchen are not packaged, but instead are bought in the produce section or in bulk. But as you know, cross contamination is always a possibility, especially with bulk items. And in the few packaged foods that we do use, such as nut butters for example, it is common to find warnings on the manufacturer label stating that the item was processed in a plant that handles tree nuts, soy, wheat, dairy, gluten, shellfish, and so on.  

 

Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged  or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.

 

We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.
