The BIG news this week is that Wholly Macro is back!!!
 
Our two-week break was just wonderful. We thank you all so much for bearing with us.
 
Jaime had a very nice visit with his family in Colombia, and was lovingly babied by his mother. Which is so great for him. We all need some extra special TLC as often as possible, and he got a good long dose of it while visiting his family.
 
I had some quiet(er) time to work on a few of my side projects, and also had a chance to get some extra winks, which can never hurt.
 
But now we are both back, along with "Wholly Macro", and we hope to entice you with some fun and tasty menus for the next several weeks.
 
WEEKLY ARTICLE 

Self Care For Your Tongue - 
Getting Reacquainted With Your Taste Buds

One of the most frequently asked questions / comments that we receive here at Wholly Macro is:

"I don't enjoy eating "plain food". Food doesn't taste good to me unless it is really spicy. I'm afraid I won't like your (Wholly Macro) food, because I am used to using lots of seasonings. How can I enhance the flavor of (any) food and make it taste better to me without smothering it in tons of sauces, condiments, spices, dressings, and salt? I know that there are a lot of really unhealthy ingredients in the sauces and seasonings that I use, but I just don't enjoy my food without using them. I don't like "health" food. "

Here is an idea: Make your tongue and taste buds work better!

And have some patience!

First off, stick your tongue out and look at it in a mirror.



You can do this in the privacy of your own bathroom!!

I often have people do this with me during a Natural Lifestyle Consultation.

We compare their tongue to mine.
 
My tongue is generally pink and clean, for the most part, although I do have "cloudy" days here and there.
 
And not to brag, but quite often my clients will gasp in shock and disbelief at how white, gray, yellow, or red their tongues appear when compared to mine.
 
You really must start checking out other peoples tongues, and also begin to inspect your own tongue, on a daily basis, in order to become familiar with the huge array of colors, textures, and thicknesses that occur from tongue to tongue.
 
And btw, you can discreetly observe people's tongues during ordinary conversation. You don't have to have them stick their tongue out!
 
You will begin to be able to differentiate the cleaner, clearer, and pinker (healthier looking) tongues in time, which will help you to strive for a clean and clear tongue yourself.
 
Health, beauty, and yes, taste, happen from the inside out.
 
You can clean your tongue with any number of tongue cleaning devices, but it will just get dirty again, as it fills with toxins from within your body if you don't clean up your entire act!
 
And anyway, we don't just have taste buds on our tongue, they occur throughout the entire digestive tract, all the way from the roof of the mouth, to the throat, to the stomach.



You can't reach and clean all of them with a tongue cleaner!
 
And "pollution" occurs throughout the entire body as well.
 
Every toxic chemical that we put on or in our body impacts us on every level of existence, from minute cells such as the taste buds, to large organs such as the tongue. 
 
Every super hot spice, every over the top sugary sweet, and every artificial flavor enhancer that we senselessly ingest, not only masks the true flavor of pure and natural "simple" food, but also clogs up every "pore" of the body, including the porous tongue and taste buds.
 
We never want to become so clogged up, so backlogged, that we begin depositing excess "stuff" in nooks and crannies within our bodies.
 
And a coated or discolored tongue is a pretty good indicator of a buildup of excess "bad stuff".
 
Which not only stifles the taste buds ability to do their job, which is to taste, but also damages the tongue and taste buds as well.
 
It is a viscous cycle:
 
We can't taste because our tongue is too damaged and / or coated, so we add more "sauce".
 
Yet the sauce, and the flavor enhancing chemicals contained within, damage the tongue and taste buds further, which results in continued excessive use of the sauce, seasonings, condiments, and the like. 

And don't think that the food manufacturers don't know all of this.
 
They know that people's mouths have become numb to the natural flavor of food, damaged by all sort of excessive behaviors and eating habits.
 
And they know, that the more they load their packaged foods up with (bad for you) flavor, such as bad quality salt, processed white sugar, MSG, genetically engineered flavor enhanced food, etc., the "tastier" it will seem, and the more of it they will sell.



What to do!!!
 
First and foremost, you must Break The Cycle!!
 
This is where having a little patience comes in handy.
 
Because it may take a while to detoxify the body, and the tongue, while you let your taste buds get reacquainted with the pure, simple, and subtle nuances of the beautiful and delicate whole natural foods that we humans are meant to be eating.
 
Each and every food that our planet provides for us has an entirely different taste and flavor.
 
In fact, many SAME foods will vary in flavor from piece to piece.
 
We have a beautiful star fruit tree in our yard for example. And every single piece of fruit that it bears, and it bears tons of fruit, tastes ever so slightly different from the other.
 


It is one of the greatest pleasures in life to be able to appreciate and enjoy the unique, and quite often, subtle nuances and flavor variances of different basic foods.
 
And it is truly a crime to mask food in very often, unhealthy sauces and seasonings in order to "create" flavor, rather than to enjoy the food for the pure and natural flavor that it has to offer.
 
Here at Wholly Macro we enjoy using the food to make natural sauces.
 
Such as the Apricot Braised Tempeh dish this week for example. The "sauce" is made of apricots. Pure and natural.


 
Simple and delicious.
 
It may not be "heavily" seasoned, but it does allow the foods natural flavor to flow through.
 
There is no fighting amongst different flavors. Ideally, each flavor should compliment and enhance the other.
 
And a mouth and tongue full of happy healthy taste buds and skin tissue can then appreciate the flavor of the various foods.
 
It hurts us to hear the words: Healthy food has NO flavor".
 
It hurts us on so many levels.
 
It hurts us that the people who use such phrases have become so out of touch with what food is all about, because food is not about masking the foods natural flavor in seasonings, but rather, it is about enhancing, ever so slightly, the deliciousness and pureness of the food itself.


It is about coaxing the foods natural flavors and textures to show themselves fully, while at the same time taking care NOT to alter the very nature of the original state of the food.
 
When we were in Europe this past summer, one of our guides imbued us with a valuable gem of knowledge.
 
We were on a boat tour off the coast of Italy, cruising on the gorgeous and abundant Mediterranean Sea.
 
Our guide told us that the content of the Mediterranean Sea, with salt and mineral rich waters and soil feeding it from the volcanic mountains above, is very concentrated. So concentrated in fact, that the fish and seafood fresh out of that ocean are already "seasoned", naturally, by the sea itself. The best chefs of their country do little more than merely cook the fish as simply as possible. Anything more would mask the perfection of that perfect and natural cycle, and those pure and natural flavors.

 

I knew just what he meant. I could imagine the fresh fish infused with the natural sea salt and minerals from that beautiful ocean and those beautiful mountains, and could imagine the flavors contained within.
  
How delicious!
 
And interestingly enough, some of the very best food that we ate while over there, was simply pulled from the ocean, or the earth, and steamed, grilled or baked with very little to-do.
 

 
We enjoyed it immensely, and with our own cooking here at Wholly Macro, strive to compliment Mother Nature rather than to "reinvent the wheel".
 
We are eternally grateful for our sense of taste, and diligently do all that we can to keep our bodies, and tongues, clean and toxin free so that we can enjoy the flavors and the simplicity of natural "health" food.
 
We wish the same for all of you.
 
Rather than resist the process of getting back in touch with pure and natural "real" foods, as nature intended, try to be open to the possibility that you just might LOVE the way healthy food tastes.
 
Identify and appreciate each and every ingredient, not only for its taste and flavor, but for its invaluable nutritional value as well.
 


And give it some time.
 
Because even if you don't love these new and unfamiliar tastes initially, know that they are good for you, SO good for you. Allow them to "grow" on you as they nurture, nourish, cleanse, and detoxify your tongue and your body so that they both "work" better!
 
Eventually, the tables will turn, and your own body will want and need the healthy foods, recognizing their ability to fill it's nutritional cravings, needs, and desires.
 
And your healthy tongue, palette, and tastebuds will recoil in horror when a toxic, chemically laden, artificially flavor enhanced food touches their pure surface!

SPLIT PEA MISO SOUP WITH TOFU SOUR CR�ME

A thick, creamy, and nourishing puree of liver healthy and protein rich green split peas cooked with mineral rich kombu sea vegetable, intestinal and immune system strengthening Irish moss sea vegetable, speckled with dices of carrots, parsnips, and yellow onions, powerfully cleansing and immune system boosting shiitake mushrooms, gentle and relaxing mineral rich wakame sea vegetable and irish moss, enzyme rich sweet yellow miso, and a garnish of tofu sour cr�me sprinkled with fresh green dill.
BROWN AND WILD WILD RICE PILAF

Wild wild rice, the uncultivated and powerfully revitalizing native American grain of our ancestors, is cooked with medium grain brown rice and mineral rich kombu sea vegetable, then tossed into a healthy and delicious pilaf with pancreas relaxing sweet yellow onions, naturally diuretic crisp green celery, chlorophyll rich red blood cell building fresh green parsley, and liver supportive, fresh and flavorful orange zest.
APRICOT BRAISED BBQ TEMPEH AND SAUERKRAUT

Tempeh is a brilliant way to consume protein, which is ordinarily a heavy type food. Tempeh is a fermented form of soybeans, very easy on the digestive system, promoting better digestion and therefore better absorption of nutrients such as the rich omega 3 oil and naturally low in fat protein naturally occurring in soybeans. Bite sized cubes of tempeh are marinated in circulation stimulating fresh ginger juice and tamari soy sauce, then coated with arrowroot and pan fried to form a paper thin crispy crust. Naturally sweet iron rich and good for the spleen and pancreas fresh apricots braise the naturally enzyme and friendly intestinal bacteria rich sauerkraut, and liver relaxing upwardly energetic scallions garnish the dish.
MILLET AND LOTUS SEEDS WITH MUSHROOM KUZU GRAVY

Whole grain stomach and pancreas healthy millet is cooked to a creamy consistency with vitalizing lotus seeds, then smothered in a thick and rich shiitake, cremini, and portabella mushroom gravy, flavored with tamari, ginger, and yellow onions, thickened with digestive and intestine strengthening kuzu root, and garnished with chlorophyll rich red blood cell building fresh green parsley.

I never understood what a "pressed salad" was, until I mastered the fine art of making this ultimate salad. Any raw vegetables can be used, because they are quite literally "pressed" under weight, with umeboshi plum in this case, until the raw and watery quality is released, and removed, and you are left with the pressed/marinated/naturally pickled, rich in digestive enzyme, alkalizing, vitamin, mineral, and fiber rich healthiness of brightly colored red and green cabbage, yellow onions, celery, red radish, and high fiber, high calcium, good for the heart and liver deep green collard greens, dressed with freshly ground omega fatty acid, alkalizing, and trace mineral rich pumpkin seed tahini dressing.

Most foods used in the Wholly Macro kitchen are not packaged, but instead are bought in the produce section or in bulk. But as you know, cross contamination is always a possibility, especially with bulk items. And in the few packaged foods that we do use, such as nut butters for example, it is common to find warnings on the manufacturer label stating that the item was processed in a plant that handles tree nuts, soy, wheat, dairy, gluten, shellfish, and so on.  

 

Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged  or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.

 

We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.
