A Special Shout Out To Parsnips
Does anyone use parsnips other than Wholly Macro??
We never see them being used anywhere.
Yet they are sold at the store, so someone must buy them, other than us that is!
Since we eat to live here at Wholly Macro, we wouldn't bother with parsnips if they were not super healthy!
Their sweet and creamy naturally spicy flavor has many culinary uses, but lends itself absolutely perfectly and especially well to desserts.
The Cr�me Of Parsnip Pie this week is an example of the epitome of the most healthy dessert possible.

How can you go wrong when your dessert is a vegetable!
And what a vegetable!

Parsnips are closely related to carrots. They are part of the same family.
The sweet juicy root of the parsnip plant is full of vitamins, minerals, and fiber.
In fact, parsnips contain both soluble and insoluble fiber.
Adequate amounts of both of these types of dietary fiber have been found to stabilize blood cholesterol, prevent obesity, and regulate digestion / relieve constipation.
Parsnips are also high in several antioxidants, similar to those found in carrots, and just as valuable.
The poly-acetylene category of antioxidants found in parsnips have been found to have anti-inflammatory, anti-fungal, and anti-cancer properties.
Parsnips are especially high in vitamin C, another powerful anti-oxidant. And they are also a rich plant based source of many B complex vitamins such as folic acid, vitamin B-6, thiamin, and pantothenic acid.
And if that is not enough, they are high in vitamin K and vitamin E as well.

The mineral content of parsnips is also worth mentioning because they are high in iron, calcium, copper, potassium, manganese, and phosphorus.
It is just amazing that such an overlooked vegetable can contain so many really important healthy properties, right?
Our menu this week (and always) is just full of overlooked, neglected, and underused vegetables, beans, and grains.
We need to eat them all, because each and every one of them contain a multitude of known, and yet to be discovered health giving and disease preventing nutrients.
We haven't met a vegetable, bean, or grain yet that we don't just love. To cook, and to eat. So it is easy to incorporate fun, exciting, and nutritive variety in this, and all of our Wholly Macro menus.
Every single last vegetable, bean, and grain ALL deserve a special shout out. Don't you think?

CHICKPEA SWEET VEGETABLE MISO SOUP

Chickpeas, which are relaxing and supportive of stomach and pancreas energy and are especially good for balancing the heart, provide a creamy smooth base for this soup. They are cooked with mineral rich kombu sea vegetable, and the naturally sweet and pancreas relaxing vegetables: kabocha squash, yellow onion, carrot, and green cabbage, along with naturally diuretic celery, good for the pancreas wakame sea vegetable, shiitake mushrooms, digestion promoting sweet yellow miso, and a garnish of bright green scallions and iron rich deep purple dulse sea vegetable. Yum!

BROWN RICE AND BULGHAR PILAF

Strengthening, yet energetically light medium grain brown rice, is combined with cracked bulghar wheat, kombu sea vegetable, digestion friendly naturally pickled cucumbers, red radish, vitamin E rich sunflower seeds, and alkalizing umeboshi plum, then garnished with red blood cell building chlorophyll rich fresh green parsley, to create this whole grain, cracked grain, and fresh vegetable pilaf.

Naturally sweet, pancreas nourishing butternut squash, is cooked with saut�ed yellow onions, carrots, and kombu sea vegetable, then tossed with delectably chewy high protein pieces of braised tempeh, rutabaga, and fresh parsley. An anti-oxidant packed mineral rich protein and vegetable dish that is especially good for relaxing the middle part of the body: the stomach and spleen/pancreas. Full of iron, beta-carotene, and vitamin C.

.Relaxing and alkalizing whole grain millet is spiked with fresh yellow corn, and formed into polenta like cakes, then smothered in an iron rich adrenal supportive sauce of black beans cooked with flavor enhancing and mineral rich kombu sea vegetable, kabocha squash, blood strengthening fresh burdock root, naturally sweet yellow onions, fresh ginger, and a garnish of chlorophyll rich fresh green scallions.

This dish is a study in the naturally beautiful colors provided to us by our highly valued fresh vegetable friends that literally show their colors to represent their nutrients. Deep purple red cabbage is high in iron and beta carotene, and is braised in a toasted sesame oil, ginger, brown rice syrup, umeboshi plum, mustard, and shoyu sauce, then highlighted with lightly steamed chlorophyll rich dark green kale, and iron and mineral rich delicate black strands of arame sea vegetable and sweetly saut�ed yellow onions.

Naturally sweet and ever so subtly cinnamon-y, relaxing and good for the spleen/pancreas, fresh parsnips are pureed with amasake brown rice milk, silken tofu, calcium rich sesame tahini, intestine strengthening kuzu root, fiber rich agar agar sea vegetable, a hint of full bodied roasted and flavorful grain coffee, brown rice syrup sweetener, and a hint of sultry vanilla and orange zest, to form a light and delicate filling for this rich and delicious pie. Baked in an oat and almond crust, and topped with light and fluffy protein and calcium rich tofu whip cr�me. Trust us. It is delicious. And healthy. After all, it is like eating a vegetable!
