We are back from our two-week break, the Wholly Macro kitchen is back open, and we are very eager and excited to hear from all of you, and to cook for all of you once again.

Dessert: The Great Debate
Do you have an ongoing dialogue within your brain about dessert?
A long term secret love affair with sweets perhaps?
We know that we do here at Wholly Macro.
For twenty five years, ever since we experienced our own huge shift in food awareness and began to eat in a logical and scientifically based highly nutritional way, we have tried to get a handle on our own desire for sweets, and we are here to tell you that not only is it impossible to exist in a world without sweets, but that the more austere and dessert free your diet becomes, the more you will turn to old vices to sneak sweets back into your life.
Some examples of "old vices" are: chewing gum, even if "sugar free" and "all natural", natural or regular hard candies, "raw" desserts, dark (or any) chocolate, and alcoholic beverages, especially wine, even if organic.
Read the labels carefully before ingesting, checking for hidden ingredients. And beware of high concentrations of sugar.
There are five essential flavors that are related to the organs in our body.
To be balanced, to achieve health and harmony, and to keep the body functioning as optimally as possible, foods containing each of these flavors should be consumed daily.
And guess what.
The sweet flavor is one of these five essential flavors!

This means that we actually MUST consume sweets if we are to maintain proper balance and health.
Fortunately for us, sweets do not need to be unhealthy.
The secret is in HOW you consume sweets.
There is a difference between simple processed sugar used in highly concentrated amounts, and natural grain, vegetable, and fruit based sugars used in moderate amounts.
Simple sugar, in it's highly processed form, and consumed in highly concentrated quantities, really is devastating to the body.
Simple sugar goes by many aliases, such as: sugar, cane sugar, organic cane sugar, organic cane syrup, corn syrup, etc. It is found in almost all packaged foods, even those purchased at the "Health Food Store".

Here is the short list of some of the adverse effects of highly processed and concentrated sugar consumption:
- Sugar suppresses your immune system and impairs your defenses against infectious disease.
- Sugar upsets the mineral relationships in your body. It can cause mineral deficiencies and / or interfere with the absorption of minerals such as calcium and magnesium.
- Sugar creates an adrenaline rush, also known as a sugar high. This can eventually result in hyperactivity, anxiety, difficulty concentrating, and crankiness.
- Sugar can produce a significant rise in total cholesterol, triglycerides and bad cholesterol and a decrease in good cholesterol.
- Sugar causes a loss of tissue elasticity and function.
- Sugar is thought to feed and fuel cancer cells, and has been connected with the development of cancer of the breast, ovaries, prostate, rectum, pancreas, biliary tract, lung, gallbladder and stomach.
- Sugar can increase glucose levels and cause hypoglycemia and diabetes.
- Sugar can weaken eyesight.
- Sugar can cause problems with digestion, including: an overly acidic digestive tract, indigestion, malabsorption, and an increased risk of Crohn's disease, and ulcerative colitis.

The above list of sugars adverse effects refers to the over use of processed sugar.
It does not refer to moderate and aware consumption of more natural and unprocessed sweets.
We have already established that all humans (and even birds, animals, and reptiles), in other words, all living beings, desire the sweet taste, as we should.
Because, the sweet flavor is part of the natural cycle of life.
In Oriental Medicine the sweet taste is associated with the stomach and the pancreas.

Too much simple sugar harms these organs, as the above list exemplifies.
Natural sweeteners, derived from grain, vegetable, and fruit sugars, or the actual grains, sweet vegetables, and fruits themselves, relax these organs, which allows them to function with ease.
These natural and complex sugars are found in all whole grains.
Brown rice syrup is a wonderful natural sweetener that is literally made from brown rice. It breaks down slowly in the body and does not stress the pancreas the way that simple sugar does.
And interestingly enough, many vegetables contain deliciously sweet healing natural essences as well, such as carrots, onions, parsnips, rutabaga, and winter squashes.
When you eat whole grains and naturally sweet vegetables, you nourish your stomach, spleen, and pancreas on a deep level.
We use these naturally sweet grains and vegetables in many of our dishes not only because they taste so delicious and contain multitudes of healing vitamins, minerals, fiber, and phyto-nutrients, but also because they have the ability to heal the organs of our body that are tight, inflexible, and stressed from the impact of high levels of simple sugars over the course of the years. Hardened inflexible organs can't do their job well and lead to premature aging and multitudes of other problems, manifesting as illness and disease.
You may be surprised to discover that you actually feel better, less tense, and more relaxed and amicable if you consume guilt free naturally sweet foods on a regular basis.
And in a perfect world, these naturally sweet foods should satisfy our sweet tooth.

But temptation is all around us, in the form of cookies, cakes, candy bars, "granola" bars, concentrated fruit products, and lets not forget chocolate!
The world is a veritable smorgasbord of rich, decadent, and unhealthy desserts!
The sweet taste has really found it's true home in desserts.
Desserts are an art form in and of themselves.
And they always have been.
Human kind has created works of art, courtesy of desserts, for as far back as we can trace civilization.
And at this point in the evolution of life on this planet, the world around us is an endless array of impossible to resist desserts.
Most of which are highly UNHEALTHY!
Wholly Macro has long suffered the great dessert debate: to indulge or not.
We decided long ago, that since we absolutely cannot fight it, we might as well join in.
And creating desserts lends itself perfectly to our natural passion for food, cooking, and art.
But our desserts are different.
We take our inspiration from traditional societies, where desserts were not deadly, but rather, were inspired by naturally sweet, colorful, delicious, and highly nutritious nutrient dense foods.
Our desserts are pure.
They do not contain artificial chemicals or colorings.
They do not contain additives of any kind in fact.
The ingredient list in our desserts is short and sweet!
We mostly use brown rice syrup as a complex and unprocessed sweetener.

Quite often we use seasonal fruit.
And a favorite trick of ours is to use the same naturally sweet vegetables that we use in our non-dessert dishes, as inspiration for many of our dessert creations.
The cooking method differentiates the eventual flavor outcome of any given ingredient.
If you eat right, and understand the energetics and healing qualities of food, you can drop the mind set that "desserts are unhealthy", or "I have to somehow abstain from all sweets", or that "food is my enemy", and start enjoying the healthy and delicious natural sweets that Mother Nature (and Wholly Macro) provide, in moderate amounts, and without extreme cravings or deadly consequences.
It's all about balance.

A rich and creamy blend of high fiber whole grain barley and pearled barley cooked with mineral rich and digestive kombu sea vegetable, the unique in flavor medicinal shiitake mushroom, along with the more traditional cremini mushroom, and sweetly blanched carrot, celery, yellow onion, and parsnip dices, in an enzyme rich, strengthening barley miso, ginger, and wakame sea vegetable base, garnished with a sprinkle of fresh green parsley and a few sprigs of flavorful dill.

This is quite simply, a good for you whole grain mixture, incorporating the stable balance of medium grain brown rice, and the moist and plump, good for the spleen and pancreas energy of whole grain millet, cooked with kombu sea vegetable, then "seeded" with omega three trace mineral rich pumpkin and sunflower seeds, and deeply cleansing on a cellular level black and brown sesame seed gomashio, finished with a garnish of chlorophyll rich red blood cell purifying fresh green parsley.

Delicious high protein, low fat pieces of tofu, are marinated with naturally fermented shoyu soy sauce, baked to nice brown flavorful perfection, then draped with a sauce of brightly saut�ed leek, slivers of naturally chelating kombu sea vegetable, good for the stomach and pancreas yellow onions and green cabbage, and circulation stimulating fresh ginger, cooked in their natural juices, and thickened with digestion strengthening and alkalizing kuzu root.

Most foods used in the Wholly Macro kitchen are not packaged, but instead are bought in the produce section or in bulk. But as you know, cross contamination is always a possibility, especially with bulk items. And in the few packaged foods that we do use, such as nut butters for example, it is common to find warnings on the manufacturer label stating that the item was processed in a plant that handles tree nuts, soy, wheat, dairy, gluten, shellfish, and so on.
Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.
We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.
