The holidays are upon us!

 

Wholly Macro is going to be closed during the week of Christmas and during the week of New Years this year, because the holidays have the nerve of falling directly on our delivery days!!!

 

Wholly Macro Will Be Closed:

 

December 24, 2014, and December 31, 2014

 

Our Last Delivery Day Prior To Closing Will Be

December 17, 2014,

 

Wholly Macro will re-open on January 7, 2015

and will send that menu out on January 3, 2015.

For those of you who have been ordering from us regularly, you should be in excellent health!!

 

We feel sure that if you follow the Freeze and Hold method, linked below, for a mere two-week period, you should be just fine during our brief closure.

 

We are giving you plenty of advance notice, and we are making a lot of very delectable goodies during the next few weeks until we close, all in preparation for you to Freeze and Hold.

  

We would like to suggest that you order a few extra dishes for yourself to freeze this final week, to hold you over during the two weeks that we are closed. This will give you a nice variety of super convenient, already prepared, excellent quality foods to enjoy from your handy dandy Wholly Macro stash, and hopefully you will only miss us a little bit!

Food Bullying ~ The Quinoa Wars

Quinoa  has been "around" for thousands of years, and provides essential vitamins, minerals, and fiber, such as vitamin B, vitamin E, iron, magnesium, phosphorus, potassium, and calcium, all of which help to support our overall health.


 

In fact, modern science has come to consider quinoa as nutritious as mother's milk, and the United Nations declared the year 2013 International Quinoa Year. Somewhere. We missed that here at Wholly Macro, but internationally, quinoa is very important as an abundant and stable food source, able to very nutritiously feed the world.

 

Quinoa is a naturally gluten free grain / seed and is a complete source of protein, containing all of the essential amino acids.

 

 

 

It is also high in the all around important omega 3 fatty acids, and is rich in quercetin and other similar phyto chemicals that help the body to maintain healthy inflammation levels.

Not only that, but it tastes great too! You'll love it in this weeks Forbidden Temple Black Rice and White Quinoa dish.

 

We are so happy to provide it for you via our delicious and nutritious cutting edge Wholly Macro menu's, and were somewhat saddened to read a little about it's source recently, including what quinoa goes through in these modern times in order to find it's way to our table.

And no, quinoas source is not Whole Foods!

 

Bolivia and Peru are the two main producers of this Andean Mountain super food.

 


 

 

And as international demand for quinoa continues to increase, in leaps and bounds in fact, feuding between Bolivia and Peru has ensued.

 

The fight is between traditional organic growers in Bolivia, and heavy pesticide use agribusiness growers in Peru who are cheapening their product, and the quality of the quinoa that we receive, while crowding Bolivia out of the quinoa business.

 

Peru produces a cheaper factory farmed version of quinoa.

 

A decade ago, Bolivia produced 90% of global sales of quinoa while Peru only produced 6%.

 

But Peru is about to bypass Bolivia this year and become the top exporter of Quinoa.

 

And while all is fair in love and war, Peru's higher output of Quinoa stems from its greater use of insecticides and chemical fertilizers.

 

Peru's lower lying lands produce two harvests a year, albeit a smaller and presumably less nutrient dense version than the heirloom Bolivian highland variety.

 

Not only that, but Peru's low lying quinoa is apt to be further contaminated by pesticide overuse because it is grown on land previously occupied by other crops.

 

Bugs love quinoa from what we read, but few pests survive the highlands of the Bolivian Andes Mountains! Therefore, Bolivian highland quinoa grows slower, richer, and stronger, with less threat of a pest invasion and much more sustainable organic growing practices.

 

Is it hard for you to imagine the Andes Mountains?

 


 


 

We feel a short Wholly Macro True story coming on!

 

When I was 20 years old, I went backpacking in South America.

 

In the summertime.

 

And it was beyond freezing high in the Andes!

 

At one point we took a train from the warm beaches of Chile, over the "Altiplano" to La Paz Bolivia.

La Paz is a fantastic city by the way!

 

We got on the train, back packs in tow, and were soon surrounded by South American Indians carrying stacks of beautifully woven colorful wool blankets.

 

 

 

We did wonder why they had so many blankets, and deducted that they must be bringing them to La Paz to sell at the market(s).

 

We were so wrong!

 

As the train proceeded over the Altiplano, and directly UP into the city of La Paz, located high in the Andes Mountains, the temperature on the unheated train must have dropped 50 plus degrees, from 80 degrees Fahrenheit to below freezing. Thick ice formed on the inside of the windows of the train, and we begged our fellow passengers to sell us a few of their blankets.

 

Nothing doing!

 

They proceeded to use their blankets to keep themselves warm.

 

Every single one of their blankets in fact.

 

We dug through our backpacks and put on every bit of clothing we owned, which was not much, and to no avail. 

 

We were totally frozen by the time we got to Bolivia, (thank god we were young!), and we really could have used some of that hardy heirloom Bolivian quinoa to warm and super nourish our weary bones!

 

But of course, who ever even heard of quinoa way back then!

 

We bought a few woolen blankets instead and still use them, to this day!

 

Times have changed.

 

We have heard of quinoa now.

 

And here at Wholly Macro we always seek out truly organic heirloom Bolivian quinoa.

 

We want to eat grains from the plants that strongly stand up to the cold clean winds of the Bolivian highlands.

 


 

We want that very quinoa to impart its strength to us!

 

And we want it to be clean and pure.

 

Not heavily laden with pesticides.

 

Point in fact, the U.S. Food and Drug Administration has been rejecting some shipments of quinoa from Peru because of high pesticide residues.

 

That has got to be serious!

 

And yes, the organic Bolivian quinoa costs more than the commercial varieties, but in the food bullying quinoa wars, it is of utmost importance to support the organic growers, and thereby protect our health, protect authentic food sources, protect the brave organic farmers, and protect future humans.

 

We urge you to file this important information somewhere in your "filing system" and be sure that you are buying, eating, using, and supporting authentic organic Bolivian quinoa and not it's more commercial counterpart.

CHESTNUT AND SQUASH MISO SOUP WITH CHIPOTLE CR�ME

A luscious, sweet and creamy, good for the spleen/pancreas blend of deliciously and naturally sweet and seasonal fresh chestnuts, butternut squash, carrots, and yellow onions, pureed into a rich, high enzyme yellow miso broth with a base of red lentils, a swirl of high calcium sesame tahini for rich creaminess, mineral rich wakame sea vegetable, deeply cleansing shiitake mushrooms, and a garnish of very mild chipotle pepper spiced tofu "sour cr�me", and parsley. Can be served warm or cool for a delicious and satisfying nutritious treat!

FORBIDDEN TEMPLE BLACK RICE AND WHITE QUINOA

Forbidden temple black rice is rich, sweet, firm, super strengthening, and good for the kidneys. Quinoa is the high in protein Andes mountains powerhouse of a grain. These two whole grains are a beautiful study of yin and yang energy and color with their stark contrast of black and white, and are further mineralized with kombu sea vegetable and gomashio sesame sea salt condiment. They are then tossed with fruity and flavorful olive oil, and finished with a sprinkle of fresh green chives.
FILLO PASTRY PUFFS WITH CRANBERRY AND ONION TAPENADE

An interesting and wonderful blend of sweet and tart, this dish combines the good for the stomach and pancreas, naturally sweet flavor of slow cooked yellow onions and leek, with the kidney supportive subtly tart ambience of dried cranberries, in a protein rich base of liver healthy green split peas cooked with kombu sea vegetable for digestibility, and a splash of mirin brown rice cooking "sherry" and naturally fermented tamari soy sauce, all wrapped in wheat germ and rosemary layered, cooked to crisp perfection fillo pastry. Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged  or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.

 

We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.
