Wholly Macro's Upcoming Closure
It is that time again.
A full three months have passed since our Christmas and New Years break, and we have such fun creating menus and preparing food for all of you, that the time just zooms by. We don't know how it is even possible that three months have already passed, but what we do know, is that your Wholly Macro team is in need of a break.
Wholly Macro Will Therefore Be Closed:
April 2, 2014, and April 9, 2014
Our Last Delivery Day Prior To Closing Will Be March 26, 2014
We have been open continuously since January 2014.
For those of you who have ordered from us regularly these past three months, you should be in excellent health!!
* We feel sure that if you follow the Freeze and Hold method outlined below for a mere two-week period, you should be just fine during our brief closure.
We are giving you plenty of advance notice, and we are making a lot of very delectable goodies during the next TWO weeks until we close, all in preparation for you to Freeze and Hold.
We hope that you will order several extra's for yourself each week from now until March 26, as they all freeze very well.

ABOUT THIS WEEKS MENU
We have a two more weeks of wonderful menus planned for you, with lots of dishes that are very conducive to freezing. We suggest that you order a few extra dishes each of these next two weeks, and freeze them, to hold you over until we re-open. This will give you a nice variety of super convenient, already prepared, excellent quality foods to select, from your handy dandy Wholly Macro stash!
You just can't go wrong with the Brown Rice And Red Lentil Miso Vegetable Soup. It is so thick, rich, and strengthening, that it is a meal in and unto itself, and our soups freeze exceptionally well. Please note that this soup can also be used as a fulfilling breakfast porridge.

The Jeweled French Yellow Couscous Pilaf is a really lovely dish. The couscous is light and fluffy, very flavorful, and fun to eat, and it just sparkles with all of the delectable "jeweled" goodies interspersed throughout. And it is so easy to chop up additional fresh vegetables such as cucumber and parsley and add them to it if desired. You can also use your favorite mixture of fresh lettuce, and toss it with the couscous for a hearty grain filled mid eastern inspired salad.

The next dish, the Falafel Burgers, just so happen to freeze extremely well also. You can reheat them in the oven, in a frying pan, or you can simply lightly steam them or serve them room temperature for a protein rich, really tasty and exciting main course treat! We will be making several extra containers of these for ourselves, because they love to travel!! We'll take them with us on our trip, and even without freezing them they will stay fresh (refrigerated) for the better part of the two weeks, and come in very handy as we transition from location to location.
And the Macaroni And "Cheese": You just can't go wrong. It is one of our most popular dishes. Comfort food! And it is a nice sturdy blend of grain and protein. We love to steam broccoli florettes and / or arugula, and drape them over the macaroni and cheese to get a hit of fresh vegetable energy in as well!

The Mediterranean Three Bean Salad is a nice dish also, combining protein and vegetables.We love making a fresh salad and dressing it with this dish.

And we ask you:Who among you wouldn't want to have a few extra containers of Baklava on hand??They sound good, don't they? Please believe us when we tell you how much better they will sound (and taste) during the weeks that we are closed, when you pull them out of your wisely thought out Wholly Macro stash! The Baklava will stay fresh, in the refrigerator, indefinitely. They do not have to be frozen. But they do freeze just fine, we have frozen them many a time here at Wholly Macro, thawed them out per our thawing method described in the above link, and enjoyed tasty crispy Baklava whenever the urge strikes!
We urge you to please give all of the above information some serious thought, and Plan In Advance for our closure.
Based on past experience and feedback from our long time and highly valued clients (and ourselves), you will be glad that you did!

WEEKLY ARTICLE:
A Cup Of Beans A Day Keeps The Doctor Away
There is "chatter" out there, in the myriad of conflicting information floating about regarding what to eat and what not to eat, about the health benefits of beans.
While most of it is positive, we have heard some people say that they have heard that beans are "too high" in carbohydrates, aka "Carbs", aka, simple sugar.
These "too high in sugar" carbs that they speak of, in a derogatory way, are labeled as bad.
Wholly Macro does not subscribe to this school of thought.
We understand that beans are powerhouses of a perfectly orchestrated balance of high quality protein, energy rich complex carbs, and essential minerals.
We feel that beans are grounding and stabilizing, to both the body and the mind. Not to mention that they are one of the best food sources available to promote strong and healthy kidneys!
The kidneys govern the bones and the nervous system (in Oriental Medicine). Eating beans will help strengthen both of these important body support systems.
So we were very excited when we recently came across an article in the Archives Of Internal Medicine, which described a randomized trial involving participants diagnosed with diabetes.
It states that "daily consumption of approximately one cup of legumes (peas and beans) was found to improve glycemic control, and reduce systolic blood pressure and heart rate", which thereby reduced the participants risk for coronary heart disease.

Body weight, waist circumference (belly fat, the bad kind), and fasting blood glucose and triglyceride levels also decreased with daily consumption of legumes.

The conclusion (and we just LOVE this): "Legumes appear to make dietary carbohydrates digest more slowly (because they are complex carbohydrates, not simple sugars), and they appear to lower the over all glycemic index" (blood sugar level), because beans contain complex carbohydrates, and are encased in a fibrous coating which further slows the release of their good, complex carbohydrate sourced sugar into the blood stream, making beans a slow release and long term source of beneficial and blood sugar stabilizing energy.
Slower digesting carbs - complex carbohydrates such as are naturally contained in beans and whole grains - actually lower blood sugar levels, and have been associated with reduced hypertension (high blood pressure), and fewer coronary heart disease related events, even in non-diabetic individuals, and most certainly in pre-diabetic and diabetic individuals according to the study.
When I worked as a hospital nurse, (eons ago thankfully), beans were a huge "no no" on the diabetic and renal diet.
I never questioned it back then.
But when I began my studies of macrobiotics and oriental medicine, I did question it.
It made no sense to me that beans, which I was learning were so good for the kidneys, and so rich in good quality complex carbs, could be considered so bad for people suffering with diabetes, kidney disease, and heart disease, by the western medical community.
It is really most fulfilling therefore to have found the above information, some 20 years later, finally showing some evidence that at least some part of the medical community is coming around to believing in the superior health benefit of beans.
We here at Wholly Macro fully support our (re-worded) adage that A Cup Of Beans A Day Keeps The Doctor Away!

A nice comforting dish, not usually thought of as healthy, but this version of it is!! Brown rice penne noodles are cooked al dente, then smothered in an high calcium, high protein, low fat and low cholesterol, alkalizing and digestion promoting, chunky and "cheesy" tofu, tahini, umeboshi plum, yellow miso, and soy "cheese" sauce, (whew!) laced throughout with chlorophyll rich fresh parsley and garnished with fresh capers.

Lung healthy white beans, deeply rich red kidney beans, and French cut fresh green beans, are cooked with kombu sea vegetable, to aid in their digestion and enhance their mineral quality, then combined with enzyme rich pickled cucumber, red onions, and radish, to create a fresh and flavorful crunch. Finished with a burst of liver cleansing tangy lemon zest, alkalizing umeboshi plum, olive oil, and chlorophyll rich fresh green parsley.

Whole grain fillo pastry is layered with crunchy wheat germ, then filled with a rich and vibrant blend of walnuts, almonds, pine nuts, and pistachios, flavored with brown rice syrup, rose water, orange zest, and cinnamon, brushed with sunflower oil, and baked into sweet and crispy triangular "baklava" pastry puffs. Place in a dry pan on the stove or in the oven to re-crisp if desired.
