WATERMELON MINT SMOOTHIE
Prep Time: 10 minutes
Yield: 2 Glasses
Ingredients:
1 1/2 cups Watermelon - seeds, rind and skin - optional but recommended
6 Strawberries, Cherries, or other berries - entirely optional Juice and zest of 1/2 Lemon, Lime or Orange - optional
1-2 sprigs of Fresh Mint Directions:
Place all ingredients in a blender and puree until smooth.
Or:
Juice all ingredients in a vegetable juicer.
Serve and enjoy!

Watermelon: A Non-Guilty Summer Pleasure
I would say that we are in the thick of it here in South Florida. And in most other parts of the country and world as well.
The heat and humidity actually hit us like a brick wall as soon as we got off of the plane in Miami a few weeks ago.
Of course they keep the airports and airplanes freezing cold almost everywhere we have ever been.
Except for Venice Italy.
That airport was "au natural". And very hot and humid.
It was so hot in fact, that as we entered the airplane that was sitting out on the tarmac waiting for us, fog filled the plane as the cold air from the planes ventilation met the hot air enveloping the over heated passengers as they swarmed aboard.
And in contrast to the frigid temps on the overseas flight from Europe back to Miami, we were met with salt laden humidity inside the Miami airport, despite the attempts to keep it cool via the A/C system.
We were somewhat prepared for the hot temps that we encountered during some of our travels and most definitely upon our return to Miami due to our secret weapon: Watermelon.
Watermelon is the go to food throughout the Mediterranean (and all of Europe), where they are very keenly seasonally aware interestingly enough.

So even before we left for our summer adventure, I knew that watermelon would be my food of choice during our trip for several reasons.
- It would make a very fine dessert food for me, and would help me to avoid the temptation of far less healthy sweets to satisfy my unabashed sweet tooth. (in the absence of our healthy Wholly Macro sweets). I am happy to report that this has worked quite well for me, although I am happy to have our all natural and healthy Wholly Macro desserts on hand once again as well!!
- It would keep me cool and hydrated while traipsing around sightseeing in the summer heat due to its naturally cooling energetic quality.
And, - It was readily available and easily accessible throughout our travel region.
During my travels I came across several articles touting many additional and fascinating health benefits related to watermelon.
I would like to share them with you.
Watermelon beats out tomatoes as a "high lycopene food".
Lycopene is a carotenoid phytonutrient (think vitamin A / beta carotene), which is especially important for cardiovascular health.
And the most up to date research is revealing that lycopene is important for bone health as well.
Other foods containing high concentrations of lycopene are pink grapefruit and guava.
But the highest concentrations of lycopene are found in watermelon, and it is the perfect food for the summer season.
While tomatoes, pink grapefruit, and guava are often consumed in less than whole form, usually in juices, pastes, and jams, watermelon is almost always consumed as a fresh whole food, making it the perfect seasonal source of this important nutrient.

Another important nutrient found in watermelon is Citrulline.
Citrulline is a "supportive" amino acid that works in conjunction with L-Arginine, one of the 22 standard amino acids that comprise protein in the human body.
Amino acids are the building blocks of protein, and play myriad super important functions in over all health and well-being.
There are many amino acids comprising protein, Citrulline being one.
It takes an army of amino acids to create the 22 standard amino acids that we are most familiar with.
With watermelon containing about 250 mg of Citrulline per cup of flesh, it becomes an important source of Citrulline based L-Arginine conversion.
Not all Citrulline converts to L-Arginine. Our body has choices on what it wants and / or needs to do with Citrulline. But if a person's body is not receiving enough L-Arginine, Citrulline becomes an important source of this valuable amino acid.
Research shows that high levels of L-Arginine help to improve blood flow and other aspects of healthy circulation and cardiovascular health.
And Citrulline on its own has been found to relieve muscle pain, muscle soreness, muscle stiffness, and muscle fatigue.
Watermelon is high in other nutrients as well, such as phenolic-based antioxidants, flavonoids, and vitamin C.
And fascinatingly enough, the entire watermelon is super high in all of these amazing nutrients, not just the juicy red flesh at the center.

Food scientists have compared the nutrient content of flesh from different parts of the watermelon, and discovered that impressive concentrations of all of the nutrients were present throughout the fruit.
It is important to note that recent research has shown that the biggest jump in the overall nutrient content within a watermelon occurs when the flesh of the watermelon turns from white to pink, jumping even further as the flesh continues to ripen from pink to red.
So please always search for the reddest, fully ripest watermelon to get the most in nutritional content and benefit, remembering that the entire watermelon is flooded with nutrients at that time, not just the red flesh.
Here at Wholly Macro, we love to juice the whole entire watermelon: seeds, skin, white rind, and juicy red flesh.
On its own, it makes a thick and delicious cooling and thirst quenching drink.
But it can also be combined with many other fruits, vegetables, herbs, and elixirs to make any number of beautifully colored healthy summer drinks.

And Watermelon - Mint
There are many ways to enjoy fresh watermelon. Be creative, and discover your own favorites. Or simply enjoy a lovely slice at the end of a meal as the perfect summer dessert.
Please always buy organic watermelon so that it's beautiful juicy flesh is not coursing throughout with toxic chemicals.
And please stop eating watermelon well before any sign of a cool down in the outside temperature.
Be aware of the seasons.
Watermelon is a very cooling food, perfect for the heat of the summer, but very ill suited for changing seasons and cooler weather.

While found in great abundance during the summer, watermelon naturally becomes much more difficult to buy as Fall approaches.
Please respect the wisdom of Mother Nature and reserve watermelon as the non-guilty, highly nutritious summer pleasure that it is!
And please don't forget one of Wholly Macro's favorite gems of wisdom:
While a moderate serving of fresh watermelon promotes health and balance, an over indulgence can do just the opposite. Again, be aware of your own body. If you are feeling too cool, especially during the heat of summer, watermelon may not be your best food choice. Please seek the advice of an experienced nutritionist or preferably a macrobiotic counselor if in doubt. |

Who doesn't LOVE those!!

TARO ROOT AND ARUGULA MISO VEGETABLE SOUP

Strengthening and nourishing taro root forms a light and creamy soup base, cooked along with kombu sea vegetable for minerals and digestion, naturally sweet, strengthening and vitalizing lotus seeds, fresh cauliflower, bright green snap peas, beta carotene rich orange carrots, naturally diuretic and cleansing fresh daikon, yellow onions, immune system strengthening shiitake mushrooms, live enzyme rich mild yellow miso, and a garnish of fresh green good for the liver arugula.

Medium grain brown rice, the perfectly balanced and most complete source of complex carbohydrates, is complimented in this dish by whole grain amaranth, an heirloom ancient South American origin whole grain that adds a delightful texture to the brown rice, as well as beneficial vitamins and minerals. Amaranth is a compact quick cooking grain, imparting powerful yet light energy. It won't weigh you down. They are cooked with kombu sea vegetable for additional mineral enrichment, then tossed with omega three and vitamin E rich lightly toasted sunflower seeds, and fresh green blood building and iron rich parsley.

Tempeh is a brilliant way to consume protein, which is ordinarily a heavy type food. Tempeh is a fermented form of soybeans, very easy on the digestive system, promoting better digestion and therefore better absorption of nutrients such as the rich omega 3 oils and naturally low in fat protein naturally occurring in soybeans. Bite sized cubes of tempeh are marinated in circulation stimulating fresh ginger juice and shoyu soy sauce, then coated with arrowroot and pan fried to form a paper thin crispy crust. Naturally sweet iron rich and good for the spleen and pancreas fresh apricots, and pungent, good for the lungs and large intestine natural mustard braise the naturally enzyme and friendly intestinal probiotic rich sauerkraut, and liver relaxing upwardly energetic scallions garnish the dish.

A trifle is a cake, fruit, and cr�me layered dessert. Delicious, but traditionally not especially healthy except for the fruit, but our version is, of course!!! The cake is a whole wheat pastry flour, carob powder, sunflower oil, and brown rice syrup batter, layered with phyto nutrient - good for the joints - deep red cherries, and a carob fudge sauce that is rich, delicious, natural, and naturally caffeine free.
