ABOUT THIS WEEK'S MENU
We have another really delicious menu in store for you this week!
I should never write these newsletters when I am hungry, because as I gaze back and forth at the menu as I write, my stomach starts to growl, and I get hungrier and hungrier, until I just can't wait until we prepare each of the dishes for the week so that I can partake of their delicious bounty!
Recently, we sort of embellished the header at the top of this newsletter, where we describe the type of food that we make here at Wholly Macro.
We don't know if you noticed, but we, in our continuous search for just the right wording to define the type of food that we prepare, added the line:
Mediterranean Inspired Asian Cuisine.
And you know what?? It really fits!
Because as I read over the menu each week, I have to chuckle at the eclectic blend of Asian, American, Mediterranean, Eastern European, South American, and various other culturally influenced dishes that we present.
Maybe it should say: Mediterranean Inspired Asian Cuisine, With Influences From Every Other Known Culture Added To The Mix!
I'd change it, but I don't want to drive my web site and newsletter artist completely crazy!

WEEKLY ARTICLE
Move Over Mediterranean

This is not really an article per se, but more of an update / report.
I received an email from one of my favorite publications, Harvard Health News.
It is so refreshing and inspiring to see a medical facility such as Harvard so into what I can only refer to as "Alternative Medicine".
This particular newsletter had a link that read:
Mediterranean Style Diet Linked To Healthier Arteries Throughout The Body.
A landmark clinical trial done in Spain, called Prevention With Mediterranean Diet, recently reported that Mediterranean style eating prevents heart attacks, strokes, and death from heart disease!
It found that a Mediterranean type diet, which includes generous amounts of olive oil, reduced the risk of cardiovascular problems by upwards of 30%.
It also found that it reduced the risk of developing diabetes by 40%.
And in January of 2014 The Journal of the American Medical Association reported that a healthy Mediterranean style diet can also help to prevent peripheral artery disease, a form of hardening of the arteries that happens when fatty deposits obstruct the arteries that supply blood to parts of the body beyond the heart and the brain, namely parts of the body that return blood to the heart, such as the arms, legs and abdomen.

Per the report: The Mediterranean diet is not a specific eating prescription, but rather a general style of eating that emphasizes certain healthy foods, while minimizing unhealthy foods.
The basic mix is a variety of seasonal fruits, vegetables, nuts, seeds, healthy plant oils, whole grains, legumes (beans), and optional moderate consumption of fish, and / or other animal proteins.

Some additional tips though, just in case you don't want to refer to our previous newsletter right this moment:

- Always saut� food in olive oil or other plant based oils, not butter, and NEVER margarine.
- Make your own salad dressings and sauces with first cold pressed extra virgin olive oil, lemon juice, and umeboshi vinegar.
Pure cold pressed olive oil is important. High heat and chemical solvents used in commercial manufacturing destroy the healthy substances found in olive oil.
- Always choose whole grains instead of refined and processed grains.
- Incorporate BEANS into your diet. Add them to soups, salads, and other dishes.
- Sprinkle nuts and seeds on everything from cooked grains to desserts.

- Eat more fresh produce!! Add additional fresh produce to any recipe. That is what we do here at Wholly Macro! Eat it as a snack too. Include fresh produce in breakfast and desserts as well.

Our (whole grain) rice dish this week: Brown Rice, Hato Mugi, And Dried Apricot Marinara makes a perfect breakfast (or anytime) food and is loaded with the mildly sweet ~ tart vitamin A rich goodness of dried apricots, which compliment the fresh produce filled marinara sauce perfectly.
And the dessert this week, Sweet Potato Pie With Tofu Whip Cr�me is made from vegetables, so NO GUILT!!!
I feel a Wholly Macro True Story coming on:
While I was studying at the Kushi Institute a few years ago, as is their tradition, they served dessert two nights a week. You can imagine that it was a BIG deal! On one such night they had a choice of TWO desserts. Two different pies. They both looked so delicious. One was a sweet potato pie, and one was a parsnip pie. I of course wanted to try a piece of each but was feeling way to piggy and embarrassed to do so. My dear friend, with whom I was dining, very sweetly gave me permission to indulge in a piece of each. She said, "Take a piece of each. What can it hurt? They are vegetables"!!
She spoke the truth, and it was a real eye opener for me. My guilt at eating two pieces of pie got in the way of the real truth, which was that the pies were merely vegetables, pureed, then layered atop a crust of nuts and seeds!
They were small pieces!!
- And our biggest tip of all: Just order your meals from Wholly Macro and all will be provided for you, an abundance of fresh produce, nuts, seeds, whole grains, beans, healthy vegetable oils, and on and on!
While it is so uplifting to read articles about the link between diet and health, like this one from Harvard, I can still see where they seriously lack the true understanding of the power and energy of food.
Harvard often uses such phrases as: The key to a healthy heart and brain is a healthy diet.
But why limit healthy food selection to Mediterranean wisdom only??
Move Over Mediterranean.
We here at Wholly Macro like to borrow our food wisdom from ALL traditional cultures.
At least Harvard is on the right track though. For that we are so grateful. (Maybe they will even catch up to us someday!!) (Kidding. We think!!). It is always good to have such a revered medical institution as Harvard on our side!

Delicious grains of medium brown rice are cooked with mineral rich kombu sea vegetable, and heirloom quality fat, mucus, and toxin cleansing hato mugi, then tossed with good for the spleen and pancreas dried apricots, and trace mineral and vitamin E rich lightly roasted sunflower seeds that are draped with a very healing and relaxing for the stomach, pancreas, and blood sugar levels, naturally sweet - vegetable marinara sauce made from kabocha squash, carrots, and yellow onions. Tofu is a brilliant way to consume protein. It is a fermented form of protein that is very easy on the digestive system, promoting better digestion of food and therefore better absorption of nutrients. Bite sized cubes are marinated in circulation stimulating fresh ginger juice, then coated with calcium rich brown and black sesame seeds and arrowroot to form a paper thin crust, and pan seared to a delicious crispness. Garnished with liver relaxing upwardly energetic scallions.

Most foods used in the Wholly Macro kitchen are not packaged, but instead are bought in the produce section or in bulk. But as you know, cross contamination is always a possibility, especially with bulk items. And in the few packaged foods that we do use, such as nut butters for example, it is common to find warnings on the manufacturer label stating that the item was processed in a plant that handles tree nuts, soy, wheat, dairy, gluten, shellfish, and so on.
Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.
We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.
