About This Weeks Menu:
Smash and Grab
This portion of this newsletter is a repeat of a previous Wholly Macro newsletter that we like to run every now and then when we have Rice Balls on the menu.
And It's not what you think!!
When we say "Smash And Grab", we mean it in a good way, because what we are referring to is smashing and then pan - frying our Sesame ~ Umeboshi Green Nori Rice Balls, before you grab them!
While it is easy enough to simply eat our delicious and convenient rice balls as is, what we here at Wholly Macro really LOVE to do with them, is to pan fry them before eating.

How To Fry A Rice Ball:
We do this by brushing a stainless steel or cast iron pan with regular un-toasted sesame oil, then slowly, on a medium flame, bringing it to a medium high temperature. We want it hot, but not smoking hot. Just to clarify: We want to be smoking hot, and we all are, aren't we (because we eat such healthy food, moon bathe, etc.) but we definitely don't want our cooking oil to be smoking hot!
Anyway, where were we?? Oh, right. Once the pan gets nice and hot, place a rice ball or two in the pan, and gently smash it so that it is a little flatter and more of it can make contact with the hot oil. Let it sizzle away. Let the sesame seeds snap, crackle, and pop as they heat up and get nice and crisp. Flip it, and repeat on the other side.
Then eat and enjoy!!

Rice balls were invented to be a perfect travel food. They are compact, very nutrient dense and filling, and because they contain umeboshi plum, which acts as a natural preservative due to it's pickled state, the rice balls can last for a long time, up to a week and beyond.
Here at Wholly Macro we always take rice balls with us when traveling, even if our travels are simply an afternoon or evening away from our kitchen, and most definitely when our travels are within our home, as in, from the living room to the kitchen!
In other words, you don't have to enjoy rice balls only when travelling, you can enjoy them day-to-day while at home as well.
But we love to take them with us on trips, big trips too, because once we arrive at our destination and refrigerate the rice balls, there is nothing as convenient and satisfying as a few smashed and fried rice balls to grab while on the go!
Please note: The rice balls do not have to be smashed and fried, they are also delicious as is. Frying them is just something delightful that we have discovered along the way here at Wholly Macro, and we always like to share our best discoveries with you!
Please make sure though, that wherever you are, and however you enjoy your rice balls, that you do so in a civilized way. And by civilized, we mean that you can smash and fry your rice balls, grab them, and go, but you cannot eat them (or anything) on the go.

How To Eat In A Civilized Way
Please always be sure to sit down to your meal.
Look at your food and appreciate the life force that it contains and is about to transfer to you. This type of visual observation actually initiates digestion by stimulating the flow of gastric juices and digestive enzymes.
Eat slowly and breathe deeply while eating. Food combined with oxygen burns more calories than food without oxygen! (Think exercise, think live foods!)
Chew well. The rice balls are a real mouthful, so be sure to chew them thoroughly.

You can eat the healthiest meal imaginable, but if you are not in a relaxed state while eating, your metabolism shuts down because your body perceives stress, and goes into fight or flight mode as it focuses on protection. Blood is actually routed away from the midsection of the body and towards the extremities in preparation for fight or flight. This is not a good scenario for your digestive organs!
In fact, if you eat a meal while stressed or on the go, you actually absorb up to 50% less nutrients from your food.
If you want to improve your digestion, metabolism, and state of health, pay attention not only to what you eat, but to how you eat it as well!

CHICKPEA AND SWEET VEGETABLE MISO SOUP

Chickpeas, while especially good for balancing the heart and supporting the stomach and pancreas, also provide a creamy smooth base for this soup. They are cooked together with mineral rich kombu sea vegetable, and the sweet and pancreas relaxing vegetables: carrots, kabocha squash, yellow onion, rutabaga, burdock root, and parsnip, along with naturally diuretic celery, also good for the pancreas wakame sea vegetable, shiitake mushrooms, digestion promoting sweet yellow miso, and a garnish of bright green chives and iron rich deep purple dulse sea vegetable. Yum!

SESAME UMEBOSHI NORI RICE BALLS

The best source of complex carbohydrates, power packed short grain and sweet brown rice are rolled into chewy and delicious rice "balls", that are spiked throughout with crunchy morsels of roasted ginger and fresh and flavorful green chives, stuffed with a piece of digestive and alkalizing umeboshi plum, and flecked with gently relaxing mineral rich green nori sea vegetable flakes which are rich in chlorophyll and antioxidants, then dipped in calcium and trace mineral rich toasted brown sesame seeds. A beautiful and appealing, fun, and very healthy way to consume brown rice at a meal or as a snack!

Given a choice, I can't see why anyone would choose high cholesterol eggs over this healthy version of the classic "scrambled eggs", unless they just simply don't know any better, which is a big part of why we do what we do here at Wholly Macro, educate people in healthier lifestyle and diet choices. This dish uses low cholesterol, low fat, high protein tofu, cooked in a scrambled egg texture, with fresh green peas, yellow onion, fresh yellow corn kernels, immune system boosting shiitake mushrooms, cremini mushrooms, yellow miso, and high in calcium sesame tahini. Garnished with a smattering of fresh green scallions.

CASHEW QUINOA WHITE BEAN BURGERS

These thick and juicy whole grain burgers are made from high protein ~ heart healthy quinoa, mineral rich flavorful white beans, tiny dices of yellow onion, juicy corn kernels, fresh carrots, and minced parsley, that are richly finished with the satisfying crunch of ground cashews.

GINGER ALMOND ARAME COLE SLAW

A lovely blend of textures, flavors, and colors, and healthy too! Barely blanched green cabbage, deeply colored red cabbage, beta carotene rich orange carrots, bright green snow pea slivers, crispy naturally diuretic celery, and deep black iron and mineral rich arame sea vegetable, are mixed in a tofu, lemon, mustard, umeboshi plum, and toasted sesame oil "tofu mayonnaise", then tossed with crisp and flavorful pungent pieces of fresh ginger, and crunchy slivers of calcium rich almonds.

TOFU CHEESECAKE WITH CAROB GANACHE

Well, since I would never eat "real" cheesecake, I find this to be a fantastic substitute. It is rich, creamy, smooth, and healthy. The crust is a crunchy and satisfying blend of rolled oats, sunflower seeds, and almonds, gently sweetened with complex carbohydrate filled brown rice syrup, and the "cheese" is a blend of protein rich tofu, calcium rich sesame tahini, amasake brown rice milk, intestine strengthening kuzu, fiber and mineral rich agar agar, and vanilla, all topped with the richest tasting naturally caffeine free pure carob ganache.

Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.
We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.
