ABOUT THIS WEEK'S MENU:
We have a great menu for you this week if we must say so ourselves.
This week is the last week of September. Pretty soon our menu's will be changing seasons and becoming more fall like, but for now, for this last, sweet, late summer end of September week, the menu will remain pretty summery as we relish in the last of the summer corn, and the last of the summer strawberries.
But the real star of our menu this week is our Famous Homemade Barbequed Seitan.
For anyone who has ever made seitan from scratch, you know what a labor of love it is.
It is quite a labor intensive project, so for many of the seitan dishes that we prepare here at Wholly Macro, we buy seitan that is ready to use, and then work it into the recipe that we are preparing to create a magnificent dish.
But for the Famous Homemade Barbequed Seitan dish, we make the seitan completely from scratch.
It is our homemade seitan, our homemade barbeque sauce, and our very special homemade recipe.
We don't make this dish very often because it is such an intensive "labor of love", so we thought we would mention it and bring it to your attention because this is a dish you don't want to miss!

WEEKLY ARTICLE
Life's a beach, or so they say!
For us, that is the absolute truth.
We thrive on the very feel of the ocean, it's smell, the breeze it creates as the wind rolls off of its water, swimming in it, being near it, and just knowing that it is "there".
And I don't know about everyone else, but I am having a hard time comprehending that summer is almost over.
It just zoomed by.
So I hope that everyone has taken advantage of "the beach", among other things to take advantage of during South Florida summers.
And yes, there actually are things to take advantage of during the long hot summer and its several hours of extra daylight, such as:
Evening bike rides and walks.
Meetings with friends at an outdoor cafe - preferably on the water.
Summer garden crops.

Fresh organic corn.
An ever so slightly slower social calendar (since many of the snowbirds have flown the coop temporarily), making it a nice time to catch up with old friends.
And last but not least, swimming in the ocean.
The ocean in the summertime (here in Florida) is literally a hot salted bath.
Hot salted baths are an important and effective ancient Oriental home remedy.
The hot salted bath reduces stress, relieves aches and pains, detoxifies the body, improves kidney function, and tonifies the entire system.
To draw a hot salted bath, place four cups of natural sea salt in a tub of comfortably hot water. Soak for 20-30 minutes, then rinse the salt off in a slightly cooler fresh water shower.

For the rest of you, you NEED to do this from time to time for the many health benefits a hot salted bath provides, but here in Florida, especially this time of year, we have the ultimate hot salted bath right in our backyards, appearing as, ta da: The Ocean.
We encourage you to take full advantage of it.
While it is generally too cool during the short Florida winter for us Floridians at least, it is just perfect the rest of the year.
And as I was reading in my "favorite" magazine, the AARP magazine, (go ahead, laugh!), I found a very interesting article called "Work Out On The Beach, Too". It suggests that you kick your work out up a notch by moving it to the beach. Working out in the sand challenges your sense of balance, gets your heart rate up faster, and engages several muscles that you don't normally use.
For us here at Wholly Macro, the beach and the great outdoors adds some color and diversity to our workout rainbow, and allows us to really unplug and unwind!

We are just so lucky here in South Florida to have such a beautiful beach right outside of our back doors (so to speak), and we always recommend that our clients take full advantage of it.
Swim in the ocean (or any natural body of water) whenever possible, rather than in a chlorinated and / or electrically heated pool that is filled with city water, no matter how it is purified.
Practice breathing exercises while swimming by gulping in all of the abundant, fresh, and negative ion charged ocean (or other) air as you possibly can, then holding your breath for as long as possible as you swim. Come up for air and repeat the process to increase lung capacity and infuse your entire body with oxygen.
Walk along the shore and practice deep breathing exercises.

Body scrub using the sand, and relish in the silky feel of your skin afterwards.
I once went to a famous resort in Colorado with my family. We were treated to a spa day. My sister talked me into the seaweed wrap and salt glow. After experiencing it, I was disappointed. It paled in comparison to my own natural body scrubbing / salt glow / seaweed wrap spa that I do almost daily at my very own REAL beach.
Health is Wealth!

CORNUCOPIA MISO VEGETABLE CHOWDER

A light yet hardy array of fresh and colorful dices of bright yellow corn, green peas, leek, cauliflower, yellow onion, yellow squash, graceful pasta like strands of spaghetti squash, beta carotene rich bright orange carrots, and naturally diuretic crisp celery, in a mineral rich red lentil and kombu base, with wakame and irish moss sea vegetables, cleansing and relaxing shiitake mushroom, enzyme rich barley miso, deeply purple high iron dulse sea vegetable, and circulation promoting fresh ginger root broth, garnished with delicate green scallions.

BROWN RICE AND MUNG BEANS

Medium grain brown rice is cooked with mineral rich and digestive kombu sea vegetable, then delectably spiked with the vibrant, good for the liver energy of mung beans, omega fatty acid and trace mineral rich lightly roasted sunflower seeds, chlorophyll rich fresh green parsley, and a sprinkle of calcium rich and energizing freshly ground sesame gomashio.

Anyone who has ever made or tasted seitan made from scratch will appreciate how special this dish is. Seitan is basically pure protein, with lots of naturally occurring minerals, and virtually no fat or cholesterol. It has a wonderful chewy texture to it, and is very versatile. In this dish it is braised in a yellow onion, almond butter, mustard, brown rice syrup, shoyu, and barley malt "barbecue" sauce, then garnished with fresh chives. Homemade seitan is very unique and delicious. The store bought variety cannot compare!

A pleasing combination that we stumbled upon here in the Wholly Macro kitchen, rich and flavorful mineral and protein rich black eyed peas, additionally mineral enhanced and made more digestive by the presence of kombu sea vegetable, are tossed in a beta carotene rich butternut squash, carrot, and yellow onion "marinara" sauce, that is lightly garnished with dices of succulent zucchini, and a glitter of fresh green chives.

STEAMED BROCCOLI WITH SHIITAKE KUZU GLAZE

Juicy, bursting with flavor and nutrition rich green broccoli florettes, are highlighted with bright orange beta carotene rich julienne carrots, and strength imparting and relaxing for the stomach and pancreas rutabaga, then draped in a healthful glaze of cleansing and relaxing shiitake mushrooms, cremini mushrooms, circulation stimulating ginger root, naturally sweet, stomach and pancreas supporting yellow onions, intestinal strengthening kuzu root, and shoyu soy sauce.

The most delicious and understated dessert, a delicate and light cake made of whole wheat pastry flour, brown rice syrup whole grain sweetener, and natural vitamin E and omega rich sunflower oil, is filled with fresh, juicy, and succulently sweet strawberries layered between rich dollops of healthy, low fat, tofu "whip cr�me", topped with another layer of cake, and garnished with rice syrup glazed crunchy and calcium rich sliced almonds.

Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.
