Wholly Macro has recently acquired a new addition to the family. Its name is Irish Moss. And no, we are not referring to the stray cat that we have decided to give safe haven from the mean streets of the city to in our yard. 

 

 

 

Some of you have seen the cat when coming by for a consult, a cooking class, a shiatsu session, or to pick up your food. 

 

We like the cat. It is fun and helpful, and yes, even a little bit cute, and it keeps the yard insect and rodent free (we hope).

 

But no, Irish Moss is a new variety of seaweed that we were recently introduced to and have decided to add to our menus.

 

And while it does grow in Ireland, thus the Irish, fortunately for all of us, it grows off the coast of the North Eastern United States as well.

 

You will see it listed in the contents of the miso soups for now, unless and until we figure out additional uses for it, possibly in sauces and desserts.

 

It is pretty much flavorless in that you won't notice that it is there taste wise.

 

It was and still is traditionally used as a thickener. A processed (and not nearly as healthy) derivative of it is called carrageenan. You may have seen this listed as an ingredient in some of the products that you buy in the grocery store such as salad dressing, rice dream and regular ice cream, and many other commercial food products as well.

 

But the Irish Moss that we have acquired is the real deal. It is not processed, and is a whole food, not just a carrageenan derivative.

 

 
 IRISH MOSS

It melts when cooked, somewhat similar to agar agar. So by the time you receive the soup it will have merged with the soup broth, adding a slightly thickened consistency. But unlike agar agar, it thickens into a creamy velvety texture, while agar thickens into a solid gel.

 

We decided to incorporate it into our menus after finding out that not only is it available to us via our seaweed connection in Maine, but that it has valuable healing properties as well.

 

Irish Moss was traditionally used to treat respiratory problems, from as simple as irritating coughs and bronchitis, to as serious and debilitating as TB and pneumonia.

 

It has also been found to be very helpful in treating digestive conditions such as IBS in all of it's varying forms, such as gastritis, ulceration of the stomach and duodenum, and Crohn's.

 

We find it interesting that in Traditional Oriental Medicine the lungs and large intestine are an organ pair, and that Irish Moss' healing properties focus on and support both of these important bodily organs.


 

The soothing action of Irish Moss may also be helpful in treating inflammation of the urinary system.

 

And if that isn't enough, recent research has found that Irish Moss has immune system boosting and anti-viral properties as well, making it helpful in treating shingles and herpes, possibly some strains of influenza, and who knows what else. More research still needs to be done.

 

We strive to use as many healing foods as we possibly can here at Wholly Macro, flavorfully and tastefully packing them into each and every Wholly Macro menu that we create each week, which is why we are so pleased with our latest acquisition.

It is such fun for us to discover exciting new food items and to be able to share them with you!

  SPLIT PEA MISO SOUP WITH TOFU SOUR CR�ME

A thick, creamy, and nourishing puree of liver healthy and protein rich green split peas cooked with mineral rich kombu sea vegetable, speckled with dices of carrots, parsnips, and yellow onions, powerfully cleansing and immune system boosting shiitake mushrooms, gentle and relaxing mineral rich wakame and irish moss sea vegetables, enzyme rich sweet yellow miso, fresh dill, and a garnish of tofu sour cr�me. 

SESAME-UMEBOSHI NORI RICE BALLS

The best source of complex carbohydrates, power packed short grain and sweet brown rice is rolled into chewy and delicious "balls", that are spiked throughout with crunchy morsels of roasted ginger and fresh and flavorful green parsley, stuffed with a piece of alkalizing umeboshi plum, and coated with gently relaxing mineral rich nori and dulse sea vegetables, and calcium and trace mineral rich toasted brown and black sesame seeds. A beautiful and appealing, fun, and very healthy way to consume brown rice! 
  SEITAN STROGANOFF

 Juicy and flavorful morsels of protein rich seitan, are grilled to perfection, then smothered in a thick, rich, and creamy shiitake, cremini, and portabella mushroom gravy, flavored with shoyu, mirin, brown rice syrup, and ginger, and thickened with intestine strengthening kuzu root and sweet, good for the stomach and pancreas yellow onions and rutabaga. Garnished with fresh scallions for some liver energizing green-ness!
UDON FETTUCCINE WITH WILD GREENS

 Calcium and mineral rich brown and black sesame seeds are dusted with arrow root and browned, then tossed with bitter green good for the liver and heart wild green rappini, arugula, and dandelion, slices of fresh scallion and circulation promoting fresh ginger, and served over a bed of toasted sesame oil flavored brown rice udon noodles.
BRAISED RED CABBAGE WITH KALE AND ARAME

This dish is a study in the naturally beautiful colors provided to us by our highly valued fresh vegetable friends that literally show their colors to represent their nutrients. Deep purple red cabbage is high in iron and beta carotene, and is braised in a toasted sesame oil, ginger, brown rice syrup, umeboshi plum, mustard, and tamari, then highlighted with lightly steamed calcium and chlorophyll rich dark green kale, and iron and mineral rich delicate strands of arame sea vegetable and sweetly saut�ed yellow onions.  
  LEMON POPPY SEED CAKE

 A delicious and creamy lemon custard layered dessert, the cake is a whole wheat pastry flour, sunflower oil, and "amasake" brown rice milk light as a feather batter that is laced with the subtle crunch of poppy seeds, layered with rich and creamy high calcium, low fat tofu, almond, and fresh lemon whip cr�me with subtle hints of vanilla, sweetened with the gently sweet and complex carbohydrate goodness of brown rice syrup, and garnished with a sprinkling of poppy seeds and lemon zest.

Most foods used in the Wholly Macro kitchen are not packaged, but instead are bought in the produce section or in bulk. But as you know, cross contamination is always a possibility, especially with bulk items. And in the few packaged foods that we do use, such as nut butters for example, it is common to find warnings on the manufacturer label stating that the item was processed in a plant that handles tree nuts, soy, wheat, dairy, gluten, shellfish, and so on.  

 

Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged  or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.

 

We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.

You will leave the class feeling confident in knowing that you can now cook with unprocessed whole grains dried beans, a wide variety of healthy vegetables including sea vegetables, the proper amount of good quality sea salt, and so much more. Instruction is based on oriental medicine/macrobiotic principals. Start with a basic class  with soup, beans and grains or try a dessert class for a real treat! You choose, or we can choose, depending on your needs.
