Wholly Macro will be closing for two weeks.

 

We will be closed the week of May 22, 2013

and the week of May 29, 2013.

 

We will re-open the week of June 5, 2013 and will send that menu out on June 1, 2013.

As always, and especially for anyone new to the Wholly Macro Delivery world, we encourage you to order extra food to freeze, for use while we are closed. All of our menus are surprisingly freezer friendly, and are just perfect for ordering extra food from to freeze.

    May Day, May Day - This Is Your Liver Calling

 

 

Spring has sprung. In fact if you blinked, you missed it here in South Florida.

 

But as we always teach at Wholly Macro, it is very important to follow the cycle of the seasons no matter where you live geographically, nor how long or short your particular seasons are. This is important because specific organs are related to each and every season of the year, and it is during that very season in which the organ is related, that the related organ needs the most support and nurturing, and is most responsive to support and nurturing.

 

 The organ related to spring is the liver / gallbladder. The color associated with this organ and season is green, the green of young plants.

 

Spring is all about new growth, fresh starts, cleansing, and detoxifying. Coincidently enough, the liver and gallbladder are major detoxifiers.

 

Nature is so perfect.

 

Eating green foods is one of the best ways to cleanse, nourish, and protect the liver and gallbladder. Leafy green vegetables provide a natural tonic for these organs. The natural sour / bitter flavor of leafy greens stimulate the gallbladder to produce bile, and the bile aids the liver in doing it's job of detoxifying the blood. And coincidently, again, that same natural bitter flavor found in many greens stimulate the heart to contract with each beat, helping it to pump fresh blood throughout the body.     

              

Do you get that connection? The sour nature of greens purify the blood by acting like an astringent on the liver, squeezing and stimulating it to cleanse, cleanse, cleanse, as all of the blood in our entire body passes through it for the filtration and removal of toxic unusable material. And at the same time, the bitter nature of many of the same greens are also working on the heart, encouraging the heart to contract strongly and well so that it can effectively pump clean blood to all parts of the body.

 

It is said in oriental medicine, that the many veins found in the leaves of greens reflect the many veins found in our human bodies, and that the veins of the leaves support the veins of our body, helping them to carry fresh, clean, detoxified blood throughout our body to nourish our bones, organs, tissues, glands, and muscles.

 

All leafy greens contain oxygen rich chlorophyll, a natural blood cleanser. And they also contain iron, magnesium (a natural muscle relaxer), calcium, manganese, vitamin C, vitamin A, potassium, and essential fatty acids.

 

 

 

 Wild greens are especially great for the liver. Wild greens such as dandelion have been venerated as liver tonics for centuries. Other wild greens include scallions and leek.

 

 

 

Generally, the darker and more intense the green color, the higher the level of nutrients, which is why kale (the king of usable calcium and good prevention and care for osteoporosis), and collard greens (brilliant green very high nutrient content good for the colon, lungs, liver, lymphatic system, heart, and skeletal system) are the stars of the anti-aging green show. But escarole (very bitter, and excellent for heart function), parsley (super high in chlorophyll, very cleansing for the blood, and a natural diuretic as well), and arugula and rappini, (bitter greens, very alkalizing, normalize blood acidity), are true green super stars as well.

  

And then there is broccoli. A cruciferous vegetable, it contains sulphoraphane, which triggers the liver to produce detoxifying enzymes that block free radical attacks on DNA. Once this cycle is triggered (by the broccoli), it continues to protect us for up to four days after the sulphoraphane containing food is eaten. Other vegetables containing the powerful detox compound sulphoraphane are cabbage, brussel sprouts, bok choy, kale, radish, and turnips.

 

 

 

 

Broccoli sprouts contain 10 to 100 times more sulphoraphane than broccoli does.  

 

 

 

 

Greens have always been a traditional part of a healthy liver / spring diet. Think of them as natural body cleansers, fresheners, and builders.

And then there are the grains. Springtime liver healthy grains are such grains as oats, barley, wheat (spelt in particular), kamut, and hato mugi, a powerfully cleansing grain.

 

If you can't eat gluten and are cringing at the mention of some of the above grains, look to your liver!

 

 

Spilt peas and green lentils are very good beans for the liver. Think green!

 

Soft and flexible green sea vegetables such as wakame are also very good for the liver / gallbladder.

 

To promote liver health avoid thick, oily, creamy, fatty foods, especially from dairy sources, such as cream, cheese, yogurt, and ice cream. Yes, cream cheese too!

 

Also moderate your intake of hard baked crunchy foods such as chips, crackers, and cookies. These types of foods are very irritating and hard on the liver.

 

Have you ever been around a person who loves to eat food that is "well done"? Burnt toast, crispy French fries. Maybe you are (or hopefully were) one of those people? And have you ever noticed a cook who always tends to overcook / almost burn things? This type of behavior also indicates a liver imbalance. 

The eyes and eyesight are related to the liver. Eye problems, poor eyesight, and thick discharge from the eyes (as opposed to natural tear like discharge) are indicative of a congested liver. As is finger and toenail health. Nail fungus and weak nails are related to the liver.  

 

 An irritated liver (person) angers easily, is terribly impatient, is grouchy, tends to shout, and will present with a very distinct furrow / frown between the eyebrows. 

 

Watch for this type of behavior, or any of the above-mentioned conditions in yourself and your family, friends, and co-workers. It is a true sign of a liver crying out for attention, care, and love.

 

So again, and especially in the spring, use only pure, unprocessed vegetable oil, and in small quantities, and limit your intake of hard, crunchy, over cooked foods, and baked flour products.

 

Studies prove over and over again that people who eat diets high in vegetables, beans, and whole grains will always have a lower risk of heart disease, cancer, and diabetes, with bonuses such as better memory and better eyesight.

 

Spring really is the perfect time of the year to nurture your liver. There are many many types of liver and gallbladder cleanses. Please research the subject thoroughly, and with the help of a qualified natural health care professional of your choice select a safe and appropriate cleanse for yourself.

Here are a few tips to be aware of for appropriate liver cleansing:

 

Do not start any type of liver cleanse or fast until you are sure that the cold weather is pretty much over. It is not good for you to be doing any type of fast, or liver / gallbladder cleanse, when the weather is cool, nor to start one during a warm spell when the possibility of a cold snap still looms. Don't be impatient! Wait. And recognize your impatience as a sign of a liver in need!

 

Realize that there are many methods of cleansing. Choose a cleanse that will support your needs. For example, if you are thin or frail, a strict juice fast may not be the way to go for you, but it may be perfect for another type of individual.

 

Speaking of juicing, green juicing can be very tonifying for the  liver when done correctly. Dandelion juice is one of our favorites here at Wholly Macro.

 

Not all cleanses involve fasting. Certain medical conditions or weak tendencies may contraindicate a strict fasting cleanse.

 

For most people special drinks and pills are not necessary. Your liver efficiently takes care of detox when supported by the right foods.

 

Recognize that the plant foods that nature provides during each season are specifically designed by nature to do exactly what that season's organs need. In other words, it is possible to cleanse your liver and gallbladder with food, as long as it is the right type of food.

 

A proper springtime diet is all about clearing out the past in order to make room for the present. Clearing out winter stagnation in order to make way for new growth.

 

Spring Cleaning: Creating space in your body for the new energy that spring brings, so that as it arrives, it does not get all clogged up in your liver.

 

Good health in general, and liver health in particular, have been, and always will be about prevention, and making healthy, appropriate, and well informed choices.

 

What better way is there to combat the effects of pollution, stress, aging, and disease, than with your fork?

A light yet hardy array of fresh and colorful dices of bright yellow corn, leek, cauliflower, yellow onion, graceful pasta like strands of spaghetti squash, beta carotene rich bright orange carrots, and naturally diuretic crisp celery, in a mineral rich red lentil base, with a kombu, wakame sea vegetable, cleansing and relaxing shiitake mushroom, enzyme rich yellow miso, deeply purple high iron dulse sea vegetable, and circulation promoting fresh ginger root broth, and garnished with energizing and fragrant fresh scallions.

BROWN RICE AND HATO MUGI RISOTTO

Ah, the calming and balancing whole grain dish! Strengthening medium grain brown rice is slowly cooked with the wild Japanese seed/grain called "hato mugi", known in the Orient for calming the nervous system, beautifying the skin, and purifying the blood. Hato mugi lends itself perfectly to the formation of a sweet and creamy risotto made with kombu sea vegetable, sweet and enzyme rich yellow miso, mirin, a naturally fermented brown rice cooking "sherry", pungent and flavorful organic capers, slices of cremini mushrooms to add richness and flavor, and a chlorophyll rich, red blood cell building minced parsley garnish.

High protein meaty like textured seitan, is the "carne" in this strengthening, fun to eat dish that is flavorfully filled with red kidney beans, sweetly saut�ed good for the spleen/pancreas yellow onions, beta carotene rich brilliantly colored carrots, circulation promoting and delicious fresh ginger, high in energizing and complex carbohydrate brown rice syrup, and mildly spicy good for the lungs natural mustard for some chile pizzazz, all topped with the fresh green light energy of good for the liver fresh scallions.

Most foods used in the Wholly Macro kitchen are not packaged, but instead are bought in the produce section or in bulk. But as you know, cross contamination is always a possibility, especially with bulk items. And in the few packaged foods that we do use, such as nut butters for example, it is common to find warnings on the manufacturer label stating that the item was processed in a plant that handles tree nuts, soy, wheat, dairy, gluten, shellfish, and so on.  

 

Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged  or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.

 

We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.
