Healing Cuisine

Can food that is good for you also be exciting and tasty? Can exciting tasty food also be good for you?
Of course it can.
Anyone who doesn't think so is really missing the entire point of our human interconnection with nature, our planet, and the entire universe.
We are what we eat. It is a simple as that. Really.
Wholly Macro often wonders why people put so much time and energy into denying the obvious.
Unhealthy food leads to illness and misery.
Healthy food leads to health, happiness, and freedom. |
There really is no way to get around this, try as you might.
In the end, most people, including the mainstream, are coming to realize that eating healthy food does make a difference.
Here at Wholly Macro we have always maintained that there are several components to good cooking. But two of the most important components are:
1. To make food that has sensory appeal. That is, it must look beautiful, be creative and varied in texture, flavor, and color, and taste delicious.
2. It must be good for you.
There is the healing aspect of cooking and there is the culinary aspect of cooking. The melding of the two creates Healing Cuisine.
Healing cuisine is food with a purpose.
Sure, you can just eat, with no thought whatsoever in mind as to what you are eating or why. This is what most people in America do. Or, you can eat food that is actually healing to your body. Many indigenous cultures do this. They either purely intuitively eat fresh and healthy local cuisine, or they do it because of the wisdom they have received from their elders that has been passed down throughout the generations. |
If you are going to eat, you might as well eat food that promotes health and wellness rather than illness and disease.
Some foods that are healing are:
Fermented foods, which alkalize the body and promote a healthy immune system via their natural probiotic content.
Natural phytonutrient rich plant based foods such as broccoli, mushrooms, leafy greens, green and orange colored vegetables, and fresh ginger, which provide the ideal nutrients for a healthy immune system.
Certain foods are known to inhibit cancer cell growth by preventing new blood vessels from forming, blood vessels whose sole purpose is to supply cancerous tumors with their own blood supply. This is an exciting discovery called anti-angiogenesis.

An example of some anti-angiogenesis foods include: kale, bok choy, soy beans, shiitake mushrooms, pumpkin seeds, kabocha squash, whole grains, beans, and parsley.
Foods that have been linked to such illnesses as cancer, diabetes, high blood pressure, and heart disease include: grilled meat, eggs, dairy, processed sugar, burnt foods, fried foods, excessive alcohol intake, hydrogenated oils and trans fats, excessive processed salt, pesticides, artificial food coloring, and chemically laden foods to name just a few!
Our goal here at Wholly Macro is to fill each weekly menu with as much healing cuisine as possible while at the same time maintaining a high sense of culinary integrity.
As we glance over this week's Wholly Macro Delivery Menu we are just amazed at how much healing cuisine (from the above mentioned foods and beyond) it contains.

The dessert this week, Azuki Bean Fudge, is admittedly an unusual one! But, it is very delicious, and super healthy too.
Did you know that in Asian cuisine azuki beans are typically cooked into a thick paste and then sweetened? This bean paste is then used to make ice cream and many other desserts.
Yum yum!

Beans are natural, earthy, and unadulterated thank goodness. They support the stomach, spleen, kidneys, and heart. They counteract damp conditions within the body, reduce blood cholesterol, lower blood pressure, regulate colon function, prevent constipation, and stabilize blood sugar levels.
They are an excellent source of minerals such as calcium, potassium, iron, and zinc, and contain several B vitamins as well. |
In addition, as if that is not enough, beans contain two important phytochemical nutrients: diosgenin and isoflavones. Both have been linked to cancer prevention.
Azuki beans in particular strengthen the kidneys and adrenals.
And in Japan, azuki beans are served on auspicious occasions because the color red denotes good fortune!

We increase our ability to be healthy simply by believing that we can be. But we must also take constructive action to create that healing.
The most direct and constructive way to create healing is to ingest natural healing cuisine in our diet every meal, every day.

MILLET AND CHICKPEA SWEET VEGETABLE MISO SOUP

Millet is an alkalizing grain that is good for the pancreas. Chickpeas, while especially good for balancing the heart, also provide a creamy smooth pancreas healthy base for this soup. They are cooked together with mineral rich kombu sea vegetable, and the sweet and pancreas relaxing vegetables: kabocha squash, yellow onion, carrot, and parsnip, along with good for the pancreas wakame sea vegetable, shiitake mushrooms, digestion promoting sweet yellow miso, and a garnish of bright green scallions, and iron rich deep purple dulse sea vegetable. Yum!

GET YOUR OMEGA'S BROWN RICE AND MILLET PILAF

This is quite simply, a good for you whole grain mixture, incorporating the stable balance of medium grain brown rice, and the moist and plump, good for the spleen and pancreas energy of whole grain millet, cooked with kombu sea vegetable, then "seeded" with omega three trace mineral rich pumpkin and sunflower seeds, and deeply cleansing on a cellular level black and brown sesame seed gomashio, finished with a garnish of chlorophyll rich red blood cell purifying fresh green parsley. |

A frittata is sort of a cross between a quiche and an omelet, made here with a calcium and protein rich tofu base, lightly blended with flavorful sesame tahini, blood alkalizing and digestion promoting umeboshi plum, colorfully blanched and naturally sweet red onions, gently relaxing cremini mushrooms, fresh green broccoli florets, naturally fermented and enzyme rich black olives, and a soy based "cheddar cheese" topping. |

Brown rice penne pasta, are luxuriously draped with a colorful marinara of beta carotene rich bright orange carrots, sweet and delicious butternut squash, yellow onions, and dark green leafy anti-oxidant and mineral rich kale. Juicy, bursting with flavor and nutrition rich green brussel sprouts, and wild, bitter green, good for the heart and liver rappini, are highlighted with bright orange beta carotene rich julienne carrots, and powerful and strengthening rutabaga root vegetable, then draped in a healthful glaze of cleansing and relaxing blood cholesterol lowering shiitake mushrooms, cremini mushrooms, circulation stimulating ginger root, naturally sweet, stomach and pancreas supporting yellow onions, intestinal strengthening kudzu , and shoyu soy sauce. |

This is such an incredible dessert! You get all of the mineral rich kidney strengthening qualities of deep maroon colored azuki beans that have been tenderized and even further mineralized by the addition of kombu sea vegetable, then cooked with all natural, low on the glycemic index brown rice syrup sweetener, before being richly spiked with pure organic carob powder, roasted chicory, barley, and rye grain coffee powder, and subtle overtures of sultry vanilla, all fabulously topped with roasted chopped walnuts. Asian people often use azuki beans in desserts. It is often on menu at Asian restaurants as azuki bean ice cream and is especially auspicious at the New Year!

Most foods used in the Wholly Macro kitchen are not packaged, but instead are bought in the produce section or in bulk. But as you know, cross contamination is always a possibility, especially with bulk items. And in the few packaged foods that we do use, such as nut butters for example, it is common to find warnings on the manufacturer label stating that the item was processed in a plant that handles tree nuts, soy, wheat, dairy, gluten, shellfish, and so on.
Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.
We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.

Instruction is based on oriental medicine/macrobiotic principals. Start with a basic class with soup, beans and grains or try a dessert class for a real treat! You choose, or we can choose, depending on your needs.
