We love this cute little blurb that we found in one of our favorite magazines recently:

 

"Some foods can

make you skinny - even if you don't eat them!

 

In a study conducted by Cornell Food and Brand Lab involving more than 700 cafeteria diners, the mere presence of healthier items, such as an apple, led about a third of the participants to select healthier lunches - even if they didn't choose the healthier item itself.

 

Healthy items, or so called trigger foods, seemed to remind diners to eat more nutritious fare".

WEEKLY NEWS: It's That Time Of Year Again...
  
  
  
   

Wholly Macro will be closing for two weeks.

 

We will be closed the week of December 26, 2012 and the week of January 2, 2013.

 

We will re-open the week of January 9, 2013 and will send that menu out on January 5, 2013.

 

If you need to reach us during that time, or need anything at all, please contact our assistant Annette at 954 214-5403.

She will be happy to help you.

 

We will repeat this announcement each week until we close.
 

As always, and especially for anyone new to the Wholly Macro Delivery world, we encourage you to order extra food to freeze for use while we are closed. All of our menus are surprisingly freezer friendly, and are just perfect for ordering extra food from to freeze.

ABOUT THIS WEEKS MENU

 

Eat Right To Stay Strong For The Season

 

We have so many goodies on this week's menu. It is such a nice melding of beautiful, local, and seasonally appropriate whole foods.

 

 

Herman Aihara (1920 - 1998) was a macrobiotic pioneer and leader. He taught that we get more out of life when we eat mainly seasonal whole foods. He said that when we eat only parts of foods we become malnourished.

 

"When we eat only part of a whole food and discard the rest, such as vitamin pills, white flour, and refined salt, the food becomes harmful to our health".

 

Herman Aihara used refined salt to further explain: It is almost nothing but sodium and chlorine, sometimes fortified with synthetic iodine, and is harmful to the body in this form whereas real, whole, natural sea salt is rich in many other minerals, including real iodine. 

When we single out parts of a food, and discard the rest, we lose the many vitamins, minerals, and enzymes present in the whole that are needed to properly digest and assimilate it.

 

Herman Aihara also said that: Humans are healthiest and strongest when they live on the products of their nearby surroundings. "Humans can adjust to almost any climate, but we must keep certain factors, such as temperature, water, sugar, and mineral levels quite constant merely to stay alive, and even more constant if we want to be healthy".

 

 The best foods for maintaining constancy of physiological and mental conditions are those from the plant kingdom that are seasonal, whole, and local.

 

And Wholly Macro just so happens to have an entire menu planned for you this week that is entirely plant kingdom based, seasonal, whole, and as local as possible (we shop at local organic markets, and grow all of our own herbs!).

     

Back to the seasonally appropriate part of this newsletter for a minute:

 

Suddenly, people are starting to drop like flies all around us due to colds and flu. Have you noticed?

 

Not to worry. Wholly Macro to the rescue!!

 

  

We have a nice Smoldering South Of The Border Refried Bean dish on the menu for you this week. Beans are good sources of immune boosting iron and zinc. And they are also loaded with vitamin B6 which helps create infection fighting white blood cells called lymphocytes. You can DOUBLE the amount of iron that you can absorb from beans by combining them with as little as 25 mg of vitamin C, such as is found in the fresh orange zest highlighting this dish! 

 

 

We also have an assortment of mushrooms on this week's menu. We always use shiitake mushrooms in our miso based soups, as is the case this week in our delicious Corn and Dulse Miso Vegetable Chowder.

 

 

 

And the Buckwheat And Bowtie 

dish is also loaded with mushrooms. Mushrooms contain beta-glucans, carbohydrates that can spur production of virus attacking white blood cells. A study in the European Journal of Applied Physiology found that cremini mushrooms are a rich source of selenium and riboflavin (aka vitamin B2), both of which help ward off bacterial infections.

 

 

Another seasonal favorite appearing on our menu this week is, ta da, squash. Hard winter squash that is. The Spanish Rice and Red Quinoa dish has pumpkin seeds in it, and the Brussel Sprout Nishime is full and sweet succulent kabocha squash. All pumpkins are part of the squash family, including the seeds. So kabocha squash is a  type of pumpkin more or less. But what's so great about squash / pumpkin anyway?? It is full of beta-carotene for starters. The body converts beta-carotene into vitamin A, and that helps create white blood cells, which fight infection. Studies suggest that vitamin A may enhance the body's response to flu antibodies. Both squash (pumpkin) pulp and seeds protect against infection.

 

So please consider loading up on the Wholly Macro food this week, because don't forget, we will be leaving you for a few weeks over the holidays. Take advantage of all of the immune building, local and seasonal whole foods on our menu this week and always, and stay strong while we are gone, this winter season, and during all of the other seasons of the year as well.

CORN AND DULSE MISO VEGETABLE CHOWDER

A light yet hardy array of fresh and colorful dices of bright yellow corn, green peas, leek, cauliflower, yellow onion, graceful pasta like strands of spaghetti squash, beta carotene rich bright orange carrots, naturally diuretic crisp celery, mineral rich wakame sea vegetable, cleansing and relaxing shiitake mushrooms, enzyme rich barley miso, deeply purple high iron dulse sea vegetable, circulation promoting fresh ginger root, and a garnish of delicate green scallions.
SPANISH RICE AND RED QUINOA

Medium grain brown rice is cooked with the high Andes mountains Peruvian power packed iron rich red and beige whole grain quinoa, then further mineralized with kombu sea vegetable, and tossed with tiny dices of carrot, scallions, and parsley, with a flavorful crunch provided by omega fatty acid and trace mineral rich green pumpkin seeds, and a final flourish of enzyme rich naturally fermented green olives.

SMOLDERING SOUTH OF THE BORDER REFRIED BEANS

There are nothing like beans to strengthen and recharge the kidneys. This dish uses azuki beans which are renowned for their kidney strengthening properties, cooked with mineral rich digestion promoting kombu sea vegetable, sweet red caramalized onions, delicate strands of liver cleansing fresh orange zest, aromatic and circulation promoting fresh ginger root, alkalizing umeboshi plum, and a sprinkle of fresh green scallions.

BUCKWHEAT AND BOWTIES

Whole buckwheat groats, known for their strengthening quality, are tossed with light, nutritious, and fun to eat brown rice bowtie noodles, sauteed cremini mushrooms and yellow onions, fresh, alkalizing and digestion promoting umeboshi plum marinated red radishes, intestinal bacteria friendly pickled cucumbers, vitamin E rich toasted sunflower seeds, and lots of fresh green chlorophyll rich red blood cell building parsley.

BRUSSEL SPROUT NISHIME

Mineral rich brussel sprouts are stewed in their own flavorful juices with blood cleansing and strengthening fresh burdock root, beautiful bright orange beta carotene rich kabocha squash, mineral rich and strengthening rutabaga and turnip, and circulation stimulating fresh ginger root.

 

ROASTED SPICED PEARS  WITH TOFU GINGER  WHIP CR�ME

Freshly roasted pears, dried figs, and dried apricots, are spiced with naturally liver astringent orange zest, and fragrant cinnamon and ginger, covered in a caramel of brown rice syrup and intestine strengthening kuzu, and topped with a calcium rich tofu, vanilla, and amasake whip cr�me. Garnished with the satisfying crunch of rice syrup caramelized toasted almonds.

Most foods used in the Wholly Macro kitchen are not packaged, but instead are bought in the produce section or in bulk. But as you know, cross contamination is always a possibility, especially with bulk items. And in the few packaged foods that we do use, such as nut butters for example, it is common to find warnings on the manufacturer label stating that the item was processed in a plant that handles tree nuts, soy, wheat, dairy, gluten, shellfish, and so on.  

 

Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged  or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.

 

We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.

Instruction is based on oriental medicine/macrobiotic principals. Start with a basic class  with soup, beans and grains or try a dessert class for a real treat!
