Fried Rice Recipe
Serves 4
 Cooktime 10 minutes
  

Ingredients

 

4 cups precooked organic brown rice

15 ounces any Organic Cooked Beans (optional)

1/2 cup green onions, sliced thin

1/2 cup organic sweet corn, fresh or frozen

1/2 cup onion, diced

1/2 cup assorted diced vegetables

1 Tbsp Shoyu Soy Sauce or to taste

2 Tbsp toasted sesame oil

 

Directions

 

Heat oil in a skillet. Saut� onion for 2 minutes. Add rice, beans, sweet corn and shoyu. Cover and reduce flame to medium. Cook 5 minutes. Mix rice and toss in the green onions. Saut�, stirring frequently until the rice and beans are hot.
 

 

Dulse flakes or Gomasio may be sprinkled on the rice for a condiment and extra flavor (or any other favorite condiment.

Wholly Macro will be closing for two weeks.

 

We will be closed the week of December 26, 2012 and the week of January 2, 2013.

 

We will re-open the week of January 9, 2013 and will send that menu out on January 5, 2013.

 

If you need to reach us during that time, or need anything at all, please contact our assistant Annette at 954 214-5403.

She will be happy to help you.

 

We will repeat this announcement each week until we close.
 

 

As always, and especially for anyone new to the Wholly Macro Delivery world, we encourage you to order extra food to freeze for use while we are closed. All of our menus are surprisingly freezer friendly, and are just perfect for ordering extra food from to freeze.

WEEKLY ARTICLE : FREEZE AND HOLD

 

 

A Wholly Macro True Story

 

During one of our recent closures, Jaime went out of town and I stayed home. Usually it is the other way around. I go away and Jaime stays home.

 

What can I say. I am a traveler, and he is a homebody.

 

And yes, once in a while we actually go on a trip together.

 

Like this trip coming up over the holidays. We'll be going to California together for a family celebration. Perfect timing too, since both Christmas and New Years fall right in the middle of our delivery days and we would have been closed in any case.

 

But the closure I am referring to above, where I stayed home while Jaime travelled, is the one I wanted to tell you about.

 

I had a great number of business related projects planned for my two weeks of home alone time off. I also had a number of social obligations I wanted to fulfill. And a tremendous need for some "me" time as well.

 

All of this left me feeling a bit overwhelmed at the idea of fitting everything I wanted to do into my rapidly dwindling two weeks off.

 

Couple that with the fact that I was losing my chief cook and bottle washer (Jaime), and panic began to set in.

 

As much as I love cooking, and I really do, I knew that in order to get the things done that I wanted to get done, something was going to have to give. It was sad for me to realize that shopping and cooking was what was going to have to give.

 

I simply could not indulge in the time it would take to cook for myself the way I would have liked to, and get everything else accomplished that I felt I had to.

 

So I got smart. A brilliant idea occurred to me in fact.

 

When I sent out the three week advance notice prior to that particular closure, I began ordering containers of food for myself as well, as if I were a client.

  

I then froze said ordered containers.

 

I did that each week prior to our closure, until, by the time Jaime left, I had a very nice selection of food items in my freezer.

 

That made me feel good, and secure. I felt as if my life depended on those items. And I felt very pleased that I had planned in advance in order to take good care of myself.

 

Things were as busy and crazy as I had anticipated during that particular closure. But thanks to my advance planning, I had real food ready and waiting for me, each meal, of each day.

 

I did for myself, just as I always suggest for everyone else: I moved a few items every day or so, from the freezer to the refrigerator, where they thawed beautifully.

 

When time permitted, I would "doctor" the different items up. I made a lot of fried rice. I would cut up all sorts of fresh veggies, 

saut� them until their colors and flavors popped, add the brown rice, and create a nice little stir fry for myself.

 

   

 

I loved the idea of adding simple - quick and easy - fresh items to the fully prepared Wholly Macro food. It gave me variety from meal to meal, time permitting only though. There was no pressure when I didn't have the time to putter in the kitchen because after all, the food really was already ready to eat, and didn't really require my "doctoring". It was fun though, to sort of "cook" and it satisfied my own personal need to cook, and my desire and love of cooking and puttering in the kitchen, without the real time and energy involved.

 

That's not to say that I wasn't thrilled when Jaime got home, we reopened, normalcy resumed, and we were once again preparing fresh food for ourselves and all of you each week, because I was.

 

  

  

But all in all, I was absolutely amazed at how well the "freeze and hold" system we suggest each time we close worked for me, and I have been looking forward to sharing my true story with all of you for quite some time now.

SHIITAKE MUSHROOM BARLEY MISO SOUP

A rich and creamy blend of high fiber whole grain barley and pearled barley cooked with mineral rich and digestive kombu sea vegetable, the unique and interesting in flavor medicinal shiitake mushrooms, along with the more traditional cremini mushrooms, and sweetly blanched carrot, celery, yellow onion, and parsnip dices, in an enzyme rich, strengthening dark barley miso, ginger, and wakame sea vegetable base, garnished with a sprinkle of fresh green scallions.
BROWN RICE AND HATO MUGI  RISOTTO

Ah, the calming and balancing whole grain dish! Strengthening medium grain brown rice is slowly cooked with light, cleansing, skin beautifying and blood cleansing hato mugi wild barley, and pearled barley, which lends itself perfectly to the formation of a sweet and creamy risotto made with kombu sea vegetable, sweet and enzyme rich yellow miso, mirin, a naturally fermented brown rice cooking "sherry", pungent and flavorful organic capers, slices of cremini mushrooms to add richness and flavor, slices of shiitake mushroom to impart their unique flavor and immune strengthening health giving properties, and a red blood cell building fresh green parsley garnish.

TOFU KALE LASAGNE
SMALL___ LARGE___
Whole grain brown rice lasagne noodles are layered with an aromatic blend of tofu, yellow miso, oregano, rosemary, garlic and olive oil, and a fresh green calcium and mineral rich blend of kale, green cabbage, red cabbage, and arugula, smothered in a beta carotene rich orange marinara sauce of yellow onion, carrot, and kabocha squash, topped with rice milk totally vegan "mozzerella cheese" and melted brown rice mochi. Garnished with chlorophyll rich bright green basil.

POLENTA MARINARA

Freshly ground dried organic corn creates this firm yet creamy polenta, that is spiked with fresh kernels of corn and green peas, then topped with a lovely orange pancreas nourishing, naturally sweet marinara sauce of carrots, butternut squash, and yellow onions, garnished with chlorophyll rich fresh green parsley.

MEDITERRANEAN THREE BEAN SALAD

Heart healthy chick peas, deeply rich red kidney beans, and French cut fresh green beans, are cooked with kombu sea vegetable to aid in their digestion and enhance their mineral quality, then combined with enzyme rich pickled cucumber, red onions, and radish, to create a fresh and flavorful crunch. Finished with a burst of liver cleansing tangy lemon zest, alkalizing umeboshi plum, and chlorophyll rich fresh green parsley.


LEMONGRASS MOUSSE CAKE

Refreshing, creamy rich, and good for the liver generous dollops of lemongrass scented tofu and amasake mousse, are layered between a whole wheat pastry flour cake, that is topped with caramelized slivers of toasted almonds.

Most foods used in the Wholly Macro kitchen are not packaged, but instead are bought in the produce section or in bulk. But as you know, cross contamination is always a possibility, especially with bulk items. And in the few packaged foods that we do use, such as nut butters for example, it is common to find warnings on the manufacturer label stating that the item was processed in a plant that handles tree nuts, soy, wheat, dairy, gluten, shellfish, and so on.  

 

Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged  or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.

 

We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.
