                             Go With The Seasonal Flow

 

 

 

 

We are SO ready for a seasonal change here at Wholly Macro.

 

What about you? Are you ready? Is your body ready? We hope so, because fall is finally upon us.

 

And the timing could not be more perfect.

 

Just as we planned to write this newsletter, voila, the weather changed.

 

Therefore, we are ever so slightly shifting the delivery menu's, from summer fare, to more "Fall-ish" fare, because as the weather starts it's long awaited, and much anticipated cool down, we want our bodies to be in "strengthening mode".

 

You see, in summer, our bodies, and the planet also, are in an expansive, lightening up / cooling down mode.

 

Summer is the time to release the pent up and contracted energy of the winter.

 

In the winter, we naturally bundle up, close up, and eat a heavier diet. Think bears hibernating, think squirrels busily hoarding away secret stashes. Even the turtles, (that I feed), in my neighborhood pond, are very active in the summer, and then go into shutdown / hibernation mode over the winter.

 

 

It is our innate nature, from turtles to humans, to "bulk up" in, and for the winter, and to lighten up in the summer.

 

So even though we don't experience the extreme temperature changes and seasonal changes that are experienced in the rest of this country and much of the rest of the world down here in South Florida, we still need to eat and live in tune with the seasons.

 

It is the natural order of the universe to live in harmony with the planet, going with the flow, not against it.

 

We can do this in many of our daily activities, but we need to do this primarily through our diet.

 

As the seasons change, the food that we select to cook with, and the very cooking methods themselves, change also.

 

In this way, we protect our valuable and essential organs and their related functions from weather and temperature extremes, while at the same time preparing them. Keep in mind: we only get one set!

 

Each organ and their respective functions are associated with each season, and are essential to balance, harmony, and life itself.

 

And even though we specifically focus on the organs related to the current season, we also want to continue to include the foods that strengthen, protect, and prepare the organs and systems associated with the other seasons of the year as well.

 

It is a good practice to always think ahead a season. When in summer, we must keep an eye to fall. During fall, we must think ahead and prepare for winter.

 

Just as we prepare our homes, our clothing, our gardens, and our cars, in advance, for the coming season, so also must we prepare our bodies!

 

Here is a brief rundown of some of the foods that are especially good for a particular season / organ. I think you will find that we use them all, and more, in the Wholly Macro kitchen.

 

  Lets start with fall, which relates to the lungs and large intestine. You want to be sure to eat brown rice, fresh ginger root, small white beans, yellow soybeans, shallow root vegetables such as rutabaga and turnip, and tree fruit such as apples and pears in the fall.

 

 

 Going into winter, which is related to the kidneys and bladder, you want to include adzuki beans, black beans, deeply growing root vegetables such as burdock root, dried vegetables such as dried daikon, and dried fruit, such as cranberries.

 

 

 Of course we are still going to eat foods related to spring - the liver and gallbladder season, such as wild greens like dandelion, arugula, rappini, leek, chives, and scallions, grains such as barley, spelt, and oats, and fermented bean foods such as tofu and tempeh.

 

 Moving into summer, related to the heart and small intestines, we eat large leafy greens such as kale, collard greens, and mustard greens, grains such as quinoa and corn, and large (expanded) beans such as lima and kidney beans.

 

And then we have late summer, related to the stomach and spleen / pancreas. Late summer involves round foods such as millet, cabbages, broccoli and cauliflower, and sweet vegetables like onions, kabocha and butternut squash, and sweet round fruits such as peaches.

 

 

 

Another way to look at this is to break things down by foods good for the different systems in our body, such as the circulatory system which needs foods that are high in fiber, omega fatty acids, unsaturated oils, chlorophyll, and Vitamin C, such as apples, flax seeds, nuts and seeds, lentils, parsley, and whole grains.

 

 

The skeletal system which needs foods high in calcium, vitamin D, vitamin K, potassium, magnesium, and protein. Foods such as broccoli, leafy greens, fish, tofu, sea vegetables, and nuts fill this need.

 

 

Then there is the digestive system, which needs foods high in fiber, vitamin C, flavonoids, and probiotics, such as apples, beans, cabbage, cranberries, flax seeds, sweet potatoes, miso, natural pickles, and whole grains.

 

 

And not to forget the immune system, particularly important during fall and winter. The immune system loves vitamin C, vitamin E, zinc, and all plant based phytonutrients such as carotenoids. Nutrients of this nature are found in beans, broccoli and cabbage, carrots, citrus, and whole grains.

 

And last, but far from least, there is the nervous system, which thrives on vitamins and minerals, and omega fatty acids, found in foods like brussel sprouts, butternut squash, kale, sweet potatoes, peas, nuts, and seeds.

 

 

 

Overwhelming?? While fascinating, it is a lot to manage on a daily basis, which is why we just love providing all of these superstar foods for you here at Wholly Macro.

 

Be kind to your hard working body and all of it's various components. If you let us cook for you, at least for part of your week, you can relax in knowing that you are providing your body with all of the above essentials that it needs for good health.

 

Because no matter the season, and no matter how you look at things, or how well you prepare in advance / think ahead, one thing is perfectly clear: Healthy and varied plant based foods are essential for good quality life, and one way or another, you have just got to get them into your body!!

 

We have created a really fantastic menu for you this week. It is inspired by the welcome change in temperature, slightly reminiscent of the summer that has been with us for so long it seems, but has suddenly departed, full of fall energy, and with an eye to winter as well. We even threw in a few liver lovin' spring vegetables to balance out the heavier fall / winter foods.

MINESTRONE MISO SOUP                                                                      SMALL___ LARGE___
A rich full bodied macrobiotic version of the Italian classic, using a variety of mineral rich and kidney strengthening beans such as: Black beans, chick peas, and pinto beans, combined with bite sized dices of carrot, celery, yellow onion, sweet and fragrant fennel, bitter green liver cleansing arugula, brown rice chiocciole noodles, (the coolest little noodles that allow little items like beans to float through them!), flavorful and decorative cremini mushrooms, energetically relaxing, cleansing shiitake mushrooms, wakame sea vegetable, barley miso, and a sprinkling of fresh green chlorophyll rich Italian parsley.



MILLET AND KABOCHA SQUASH STUFFING                                          SMALL___ LARGE___

Who says that stuffing has to be stuffed into something?? Often it is more enjoyable eaten on it's own, as is the case with this delectable dish that is made with healthy and alkalizing millet cooked with mineral rich kombu sea vegetable, cubes of beta carotene rich gorgeous orange kabocha squash, sweet and juicy kernels of fresh corn, pancreas friendly yellow onions, naturally diuretic crispy green celery, and kidney strengthening dried cranberries, garnished with parsley and rosemary.


APRICOT AND MUSTARD BRAISED TEMPEH                                          SMALL___ LARGE___

Tempeh is a brilliant way to consume whole soybeans. Tempeh is a fermented/pre-digested form of soybeans, very easy on the digestive system, promoting better digestion of food and therefore better absorption of nutrients such as the rich omega 3 oils, calcium, and low fat protein naturally occurring in soybeans. This tempeh is a soybean and whole grain blend. Bite sized cubes are marinated in circulation stimulating fresh ginger juice and shoyu soy sauce, then coated with arrowroot to form a paper thin crust, then braised with naturally sweet iron rich and good for the spleen and pancreas fresh apricots, and pungent, good for the lungs and large intestine natural mustard, tossed with pieces of mineral rich roasted rutabaga, and a liver relaxing light and energizing scallion garnish.

PENNE PASTA WITH PUMPKIN SEED PESTO                                         SMALL___ LARGE___
Brown rice is the base of these lovely penne noodles that are tossed in a fragrant and low fat pesto made from zinc and mineral rich, essential fatty acid rich pumpkin seeds that are blended with bright green bursting with chlorophyll parsley, fresh basil, and yellow miso, all highlighted with digestion stimulating and enzyme rich natural organic green olives.

RAPPINI, SWEET POTATO, AND SEITAN STIR FRY                                SMALL____LARGE___
Fresh ginger, shoyu soy sauce, brilliant green wild and bitter good for the liver rappini, beta carotene rich bright orange sweet potatoes, delectable phyto nutrient rich broccoli florettes, strengthening and mineral rich rutabaga, and chewy pieces of protein rich seitan create this colorful and flavorful stir fry.

BROWN RICE PUDDING WITH ALMOND WHIP CREME                           SMALL____LARGE___
The shorter grained sweet and short grain brown rice are full of power, and work well to create this thick and rich porridge like dessert pudding, that incorporates kombu sea vegetable, sesame tahini, "amasake" naturally sweet fermented brown rice milk, brown rice syrup, pine nuts, cinnamon, and vanilla. Topped with a lovely almond, tofu, and tahini, calcium and protein rich whip cr�me.

Most foods used in the Wholly Macro kitchen are not packaged, but instead are bought in the produce section or in bulk. But as you know, cross contamination is always a possibility, especially with bulk items. And in the few packaged foods that we do use, such as nut butters for example, it is common to find warnings on the manufacturer label stating that the item was processed in a plant that handles tree nuts, soy, wheat, dairy, gluten, shellfish, and so on.  

 

Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged  or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.

 

We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.
