Is Sugar Bad? No, we just eat too much of it!
Naturally occurring sugar - which gives fruit, some vegetables, and milk their sweet taste is healthy sugar. It's the added sugar (sweetners put in during processing) that we need to ease up on. We don't have to cut out dessert, we need to plan when we have dessert (and of course be willing to exercise it off). You know the saying "I have a sweet tooth"? There is research that shows a love of sugar can be found in your DNA. Reasearchers have found two sweet-receptor genes that can predict a preference for sweets. That doesn't mean you have an excuse to eat excess sugar. The American Heart Association (AHA) recommends most women get no more than 24 grams of added sugar per day. That is about 6 teaspoons or 100 calories. That is less than the amount of sugar in one can of soda. What about the sugar substitutes? The FDA deems stevia, aspartame (Equal), sucralose (Splenda), and other calorie free sweetners safe. Dr. Kimber Stanhope, PhD, a nutritional biologist a the University fo Califonia - Davis, says the faux sugars won't cause blood-sugar spikes or weight gain. The key is moderation. Small amounts of sugar are okay. The more sugary foods you eat, the more you will crave them. |

Mini Brie & Apple Quiche
~ For Your New Year's Eve party ~
We love the way Brie and apples taste together in these mini quiches. Mini phyllo cups make it swift and simple to create an elegant appetizer.
Servings: 30
Prep Time: 15 mins
Cook: 15 mins
Ingredients
- 30 mini phyllo shells (two 1.9-ounce packages; see Note)
- 1/2 medium apple, peeled and finely diced
- 5 large eggs
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- Pinch of freshly ground pepper
- Pinch of ground nutmeg
- 4 ounces Brie (1/2 small wheel), cut into 30 squares
Preparation
- Preheat oven to 350°F.
- Arrange phyllo shells on a large parchment-lined baking sheet. Divide apple among the shells.
- Whisk eggs, mustard, salt, pepper and nutmeg in a large measuring cup. Pour the egg mixture over the apple (do not overfill the shells). Place a Brie square in each shell.
- Bake until the egg is set, the Brie is melted and the phyllo is starting to brown around the edges, about 15 minutes. Let cool slightly before serving.
Note: Mini phyllo shells, or fillo, are available in the freezer section near other frozen appetizers. They do not need to be defrosted before filling and baking.
