Connections during a Long-Awaited Spring

 

Here are a few fun ways to confirm that spring has finally arrived at Camp Lebanon!

  • Cedar Lake is ice free. 
  • Tremolo calls from a pair of nesting loons echo out from Turtle Bay. 
  • Kayaks, canoes, and pedal boats speckle Camp's beachfront, awaiting launch.
  • The "F" dock is in! (F as in fishing . . . that's how the fish know where to find us!) It won't be long before kids will be angling and dangling their fishing lines over the edge.
  • Yard work and cabin renovation check lists are being completed thanks to volunteers from Teen Challenge - Brainerd, Discovery Church - Sauk Rapids, Community Covenant - Upsala, and others.
  • I'm wearing my flip flops!
Spring time at Camp means parents and their kids get the opportunity to push the "pause" button on busy lives, making time to play, laugh, reflect, and experience incredible spiritual milestones that add to a family's heritage. Moms & Daughters got to watch (and hear!) the ice go out on Sat., April 26 while enjoying a craft-filled Candy Land adventure on the sweet path of life. Exploring the God of Awesome, Dads & Lads followed with a super fun weekend 
handling fascinating artifacts and hearing fabulous stories from Don Slinger, a creation scientist and former DNR conservation officer. 

Spring time at Camp also signals the return of our Young at Heart Retreat and Senior Day guests who best know how to enjoy the wonderful blessings of friendship, laughter, fellowship, and a celebration of God's faithfulness. We call their experience a Sweet Taste of Heaven!

 

And springtime at Camp means summer camp is right around the bend. Families can choose from nine youth camps to give their children (or grandchildren!) an opportunity to deepen their love for God and His truth for living. Teens can also learn to serve through a four-level Teen Leadership Training (TLT) program -- one of the best ways to nurture an active, growing faith. What's more, Camp Lebanon can be experienced as a family! Four family events cook up s'more fun ways to sweeten your summer with a relaxed week or weekend together .

Out of the Camp Kitchen

Here are few favorite recipes as we spring into a new season of summer fun!

 

These flavorful dips offer a tasty complement to fruit kabobs and mixed fruit party bowls. Mix all ingredients together and stir until smooth and well-blended.

 

Strawberry Crème Fruit Dip

7 oz. jar marshmallow crème

8 oz. strawberry cream cheese

¼ tsp. nutmeg

¼ tsp. cinnamon

½ tsp. vanilla

 

Orange Crème Fruit Dip

8 oz. cream cheese

½ c. orange marmelade

½ tsp. vanilla

 

Chef Jim's Chicken Salad

 

2 c. diced chicken--both white and dark meat

½ c. heavy mayonnaise

2 T. honey mustard dressing

1 stalk of celery, chopped

1 large yellow onion, chopped

salt & pepper to taste

 

Place chicken, celery, and onion in a bowl, season with salt and pepper. In a separate bowl mix mayonnaise and honey mustard, add to seasoned chicken mix well until all ingredients are thoroughly combined. Consider these options, too

  • Add sliced red grapes if chicken salad is to be served as a stand-alone salad. 
  • Toast almonds over medium heat until golden brown and add to salad as a garnish.

Add a Little Kick to Coleslaw

 

Add a handful of chopped cilantro to your coleslaw for a refreshing, tasty twist to this summer favorite!
