September 9, 2013

Greetings!

Taylor and Toponia
At the Fatted Calf, we are known for our charcuterie. It's a centuries-old craft we're delighted to see coming back to the forefront of the food world. All of our products are handcrafted in small batches, and all of our meats are pasture-raised on small farms.

We love being part of Oxbow Public Market and the larger Bay Area food community, and we are always excited to see our regulars and new faces alike. Each week we strive to bring our customers the best tasting food made from the well-sourced ingredients you've come to expect.

Our cookbook, In the Charcuterie, comes out September 17.  It features recipes, butchery instructions, stories and in-depth explanations of the curing process. It is a book full of the answers to the questions we're asked each day at the shop, framed in the beauty of the Napa area and the farms we use. We are excited to share the recipes and techniques that really make the Fatted Calf special.

Come and taste the mortadella or some White Rock salami (made with wine from White Rock Vineyards). Decide what you like best and learn to make it yourself in one of our hands-on classes or at home with our new cookbook. We love seeing people excited to take home a porchetta roast or some pork chops. We're equally flattered when people show up early and eager for one our of classes or Butcher's Happy Hour demonstrations. Engaging with each of you across the counter is important to us. We're happy to share tastes of our patés or guide you to ingredients for a perfect meal.

We look forward to having you in soon to pick up some beef jerky, meat sticks, or to help you plan for that holiday party. Thank you for being a part of the community we value so very much.
