Coyote Blues
To celebrate EatLafayette™ taking place June 16 - September 1 we will be featuring one of the more than 80 participating restaurants each week on our blog. This week we are featuring Coyote Blues.

The concept of Coyote Blues all started with an original piece of artwork depicting a blue coyote by Vergie Banks. The original owners were thinking about opening a Mexican restaurant that would incorporate the local Cajun flavor. One look at the painting and everything just fell into place, including the name, Coyote Blues.

Coyote Blues opened in 2003 and quickly became a Lafayette favorite because of their spin on a fresh Mexican grill infused with Louisiana soul. One of the most surprising things about the restaurant is their many seafood offerings. From crawfish to oysters, tuna and tilapia they offer a unique take on local seafood. By far the best kept secret on the menu is their Angus Border Burger, handmade every day with chilies and spices topped off with a toasted jalapeno cheese bun, perfect for lunch.

Coyote Blues is also known for their daily drink specials and live music in the bar area on Mondays, Wednesday and Thursdays. Coyote Blues is located in front of the Acadiana Mall at 5741 Johnston Street. They are open Mondays 11 a.m. - 9:30 p.m., Tuesdays to Thursdays 11 a.m. - 10 p.m., Fridays and Saturdays 11 a.m. - 11 p.m. and Sundays 11 a.m. - 9 p. m.
