Greetings!

 

Well, August was excellent!  I hope September is more of the same.

 

Great weather, and I finally found a butcher that does a good job aging rib eye steaks.  Aging makes such a difference with steaks, as it does with Cuban cigars.  39 days aged rib eye melts in your mouth when cooked properly, and is forgiving should you over cook it a bit.  Now I need to steal my wife's cast iron pan to sear the heck out of it first, using the pan on the grill. The surface cooks quickly and creates this sort of carmelized flavor, something to do with proteins, enzymes and stuff.

 

The aging process is really about fermentation.  What most do when "resting" cigars before they smoke them is allow the fermentation process to continue, reducing the tannins in the tobacco, thus reducing the acidity and improving the flavors.  Exposure to oxygen is a key to this process, that is often called breathing, rather than true aging.  Six months to a year seems optimum for this simple approach to improve a Cuban cigar's flavor.

 

So while different than my aged rib eye, both processes have a time criteria that results in changes to the product, resulting in better flavor.  I don't get the chemistry, but I know a good steak when I eat it and a good cigar when I smoke it.

Try this, leave a Montecristo No 2 torpedo for three months, with lots of exposure to oxygen, so it can rest and come closer to completing the fermentation process.  Then buy a properly aged steak, grill it up for dinner.  Now pour a few fingers of fine single malt Whiskey, Cognac, or Bourbon.  

 

Enjoy your drink with your steak dinner (Thanks Cam for this tip) , then have the rest with your after dinner cigar.  You are bringing three different kinds of aging together, all with similar flavor profiles. Each improved through proper storage, time and fermentation.

The steak, when seared well, will have a nice caramelization, the whiskey will also have caramel notes along with a myriad of other flavors and of course, the Montecristo will offer fermented flavors such as burnt caramel, coffee, toffee, burnt leather and the like.  

 

Lots of fun seeing what your palette will recognize and a nice evening overall, at least for me.  Enjoy!

Cuba has really done a great job with their Limited Edition cigars over the past ten years or so.  All are strong side cigars with wonderful dark rich filler leaves and all are aged at least two years. 

They have reduced the quantities they make for each release so they sell out faster than ever now.  Especially when they are made by Cohiba.  The Cohiiba 1966 was one of the fastest selling LEs ever.  Even I was caught unawares and have no stock in my private collection. I am pretty spoiled, but in this case I was heart broken, since it was a fantastic cigar, one of the best LEs ever produced by Cohiba.

The Cohiba Robustos Supremo (5" x 58 ring) is shaping up to be a great smoke as well.  Like any limited production, it ages on the shelf as it moves through the inventory warehouses and at some point, cigar lovers take notice and snap them up. This usually occurs when smokers notice the flavor profile has sort of "come into its own", if that makes sense.  

I have had several Cohiba Robustos Supremo and noticed a marked improvement each time.  A client also mentioned a notable improvement when he smoked one the other day (Tks Nate for your comments).  

This may be one you want to get sooner rather than later.

Benchmark for Excellence!Habanos1
In Cuba in 1492 the Spanish expedition commanded by Christopher Columbus saw tobacco for the first time in the New World. The Taino Indians rolled and burnt some mysterious leaves, which they called Cohiba, in an unknown ceremoney for the explorers.  
From that starting point more than five hundred years ago, tobacco has been traded and planted throughout the world. Since its discovery, Tabaco Negro Cubano or Cuban Black Tobacco has been considered the best in the world because of the unique growing conditions in some areas of the Island. This distinction remains incontestably valid after more than five centuries.

The heart of the distinction is the tobacco and its taste born of a combination of four factors that exist only in Cuba: the soil, the climate, the varieties of Cuban black tobacco seed and the know-how of the tobacco growers and cigar makers. Other places may have acquired some Cuban skills, even some Cuban seeds, but never the natural gifts of the Cuban soil and the Cuban climate. These you will find nowhere else.
Nor will you find anything that matches the centuries-old culture of cultivating Cuban tobacco: the extraordinary labour that the tobacco farmer invests in his crop; the months and years of patient waiting before his leaf is deemed fit for a Habano.

A further distinction lies in the definition of the term "Habanos". All Habanos are Cuban, but by no means all Cuban cigars are Habanos.
 
The title is the Denominaci�n de Origen Protegida (D.O.P), or Protected Denomination of Origin reserved for a selection of the most outstanding brands whose cigars are manufactured to the most exacting standards from tobaccos grown only in particular areas, which are also protected as denominations of origin.

All Habanos are crafted totally by hand, known as Totalmente a Mano, using methods that were pioneered in Havana two centuries ago and remain virtually unchanged to this day.

More than 500 manual tasks are performed in both the agricultural and manufacturing processes from the planting of the seeds to the Habano's final resting place in its box.

Every cigar must pass through the most stringent quality control processes established by the Regulatory Council for the Protected Denomination of Origin (D.O.P.) Habanos before they can earn the precious title of Habano.

Bottomless Pit?

Well, a man was driving down a country road, and he decided to get out and get some fresh air. He got out, and started walking in a meadow. As he walked, he came upon a hole. Wanting to see how deep it was, he threw a pebble down. No sound.

So he threw a medium-sized rock down. No sound. The man started to get frustrated, so he threw a boulder down. No sound.

As he searched about, he spotted a railroad beam. He hauled it over to the hole, and shoved it in. No sound. He sat down on the ground, exhausted. Suddenly, he saw a goat running at him, full speed. He leaped up, and it brushed past him, and fell in the hole. He listened, but there was no sound. He sat down again.

A few minutes later, a farmer came walking up. The man asked him "How deep is this hole?" The farmer said "Oh. That's the bottomless pit. It never ends. Say, have you seen my prize goat?" The man, not wanting to get the blame, said "No". The farmer said "Oh well. He can't get far. He was tied to a railroad beam".

Now that they are retired, my mother and father are discussing all aspects of their future. "What will you do if I die before you do?" dad asked mum. 

After some thought, she said that she'd probably look for a house-sharing situation with three other single or widowed women who might be a little younger than herself, since she is so active for her age. 

Then mum asked dad "What will you do if I die first?" He replied "Probably the same thing".

Election fever?

A woman who had been married three times walked into a bridal shop one day and told the sales clerk that she was looking for a wedding gown for her fourth wedding.

"Of course, madam" replied the sales clerk "exactly what type and color dress are you looking for?" The bride-to-be said "A long frilly white dress with a veil".

"Please don't take this the wrong way, madam, but such dresses are usually more fitting for the first time bride who is more innocent in the ways of life, if you get my meaning".

"WELL!" replied the customer, a little peeved at the clerk's directness "I can assure you that a white gown would be quite appropriate. Believe it or not, despite all my marriages, I remain as innocent as a first-time bride.

You see, my first husband was so excited about our wedding, he died as we were checking into our honeymoon hotel. My second husband and I got into such a terrible fight in the limo on our way to our honeymoon hotel that we had that wedding annulled immediately and never spoke to each other again".

"What about your third husband?" 

"That one was a politician" said the woman "and every night for four years, he just sat on the edge of the bed and told me how good it was going to be, but nothing ever happened.
