The Ides of March
As I sit here and begin my first ever newsletter introduction I am excited about the upcoming events taking place in March. This has always been one of my favorite months with the beginning of spring, St. Patrick's Day, and March Madness. I first started here at Satek Winery almost one year ago! I have enjoyed learning and watching the grapes go from being on the vines, to turning into wine, and going into the bottles. I know I am excited to see this season of winter come to an end and learn what happens here in the spring.
With spring rapidly approaching which will (hopefully) bring warmer weather, we also begin getting ready for the pruning of our grapes. Later this week several of the Satek Winery staff members will be attending a grape pruning workshop to learn the ins and outs of the process.
A little less know event in March is Pi Day, a celebration for the mathematical day of the constant π (3.14159....). This year Pi Day falls on a Friday and to celebrate at the winery we are making all glasses of wine only $3.14 a glass* on March 14.. So bring a slice of pie and come celebrate with us on Friday, March 14th.

The polar vortex of cold Artic air that brought frigid temperatures to the area has grape growers and wineries concerned about the loss of this year's grape crop. Once again Mother Nature has brought another challenge to the grape growers. What we have to focus on now is how much damage has been done. There will be no pruning until the extent of damage can be determined and then we will make any adjustments needed prior to pruning.
Vines are susceptible to two kinds of winter injury. First there can be damage to the trunks which can be critical to the survival of the vine. Minor injury can result in moderate tumor tissue outside the bark. These trunks can heal after a season or two and can remain a healthy vine. Severe injury can result in crown galls (cancerous growths) on the trunks. This causes a definite decline in health and sometimes death of the vine. New shoots will start to grow below the galled area and become a replacement vine. The second type of cold injury is damage to the buds. Bud damage can greatly affect the production of the vine. Buds are made up of three parts, the primary, secondary, and tertiary. If the primary bud, which contains most of the flowering clusters is lost the secondary buds will grow in its place. As a result of this, the loss of production could be as high as 50%.
We will be in the vineyards the next couple of weeks collecting samples of buds and dissecting them so we can estimate the percentage of crop loss. Not only has this harsh winter raised our concern of the crop production but has also hampered our efforts to inspect and repair the trellis. Like everyone else we are anxiously awaiting warmer temperatures and the melting of snow. I know it's just a matter of time, so until then, another glass of wine.

Mark your calenders because the dates for the sixth annual art shows have been determined! June 21st and August 16th will be the official dates for the 2014 Art at Satek show! Our lawn will be filled with vendors displaying their work for viewing and purchase. The show runs from 10:00 - 5:00 with wine tasting available all day.
Our tents will be all set up in case you want to bring your own lunch and picnic or you can purchase food from a local caterer that will be on sight throughout the day. This event is family friendly, so bring everyone out! *Those wishing to purchase or taste alcohol must present a valid ID.

This delicious recipe has been taken and modified from New Zealand chef Peter Gordon. Dan, Satek Winery's assistant wine maker, has made this recipe and modified it just a little bit by adding some of our wine to it. This recipe has everything you would want in a good jam , a sweet taste and a spicy kick. Use it as an appetizer with some of your favorite crackers.
Ingredients:
6 very ripe tomatoes- washed 4 red chillis 4 cloves of garlic peeled 1 ounce of Asian Fish Sauce 1/3 teaspoon of ginger 1 1/3 cup of sugar 3/4 cup of Pam's Perfect Little Red Wine
Mix half the tomatoes with the chillies, garlic, ginger and fish sauce to a fine purée in a blender. Cut the remaining tomatoes into tiny dice and set aside.
Place the purée, sugar and vinegar in a deep saucepan and slowly bring to a boil, stirring continually. When it reaches a boil turn it down to a gentle simmer and add the remaining diced tomatoes. Skim off any foam and cook gently for 30-40 minutes, stirring often to release the solids that settle on the bottom of the pan. Be sure to scrape the sides down during cooking so the jam does not burn at the edges.
When the jam is on setting point (has become very syrupy and very thick), pour into warmed sterilised jars and allow to cool. Cover and keep in a cool place; it will keep for several months.
