Cold-Hearted
There is an old adage, basically about controlling what you can and accepting what you can't. If you pair this (and we're WAY into pairing) with "time and tide wait for no man", you basically have where we're at this month. 2014 is about 740 hours old or so, and Valentine's Day is rapidly approaching, but the cold is hanging around like a jilted paramour; we'd love to start game-planning for Spring, but the massive drifts of snow are difficult to overlook.
We take pride in being open the stated 361 days of the year, but when a county SNOW WARNING is declared, the decision is made for us, yet, being stubborn, we want to eat our cake and have it too. Thusly, we will defy the elements and any lost winter days, and celebrate a Polar VorteX-Mas, extending Bounce-Back coupons and holiday savings that the cold weather has truncated, all the while keeping an eye on the Feast of St. Valentine and everything it signifies as well. Autumn Classic is back and better then ever! The best apple wines are made from a blend of apples to highlight diverse characteristics. After a fantastic growing season at Stroh Orchards, we carefully pressed a blend of 15 locally grown apples on November 7th at a chilly 20 degrees F. After a slow, cool fermentation with special German yeast, the wine was settled, filtered and carefully bottled. The result?.... a complex blend with aromatic beginning, full mouthfeel midpalate, and angular sweet/tart finish. This wine would make an excellent paring with fruit salads and pork belly. Autumn Classic is scheduled to be released towards the end of February.
