What exactly is a tannin?

Tannin is a compound extracted from grape skins. They are most noticeable in red wine. Tannins enable the wine to age and gives the wine a nice texture.

Crush. 5 letters, but a world of meaning: Late fall nights, early morning starts, sore muscles, "abandoned" spouses, sticky situations, unintentional tie-dye clothing, and oceans of water used for cleaning. It comes once a year, for which we are grateful, but it is when future medals can be forged or an immense amount of time and labor can be lost as circumstances and weather dictate; you react as best as you can. For the less familiar, it is a peek behind the curtain, and for the initiated, it is a reminder of the life-blood of a winery, a link to particular wines that will linger far past the life of the vintage. Here we go. |
Crush
Last Friday began the start of crush when we received over 2000 pounds of blueberries! Pictured below are the men hard at work crushing the blueberries. the rest of the grapes are getting ready to be picked and soon we will be full crush mode! If you have a chance to come to the winery on a weekday, you will most likely see the the Crush-Season in action!

Von Steuben Day Celebration
The third annual Von Steuben Day Celebration kicks off this September! This year the celebration will be held two days,September 14th-15th, from 10:00-6:00.
Baron Friedrich Von Steuben is a general from the American Revolutionary war. He is credited with training soldier's in self-discipline and military tactics. Because of the training he taught the soldiers, many historians claim that he is what played such a crucial role to the success at Valley Forge. If you ever get a chance to visit Valley Forge, be sure to check out the statue of Baron Von Steuben.
Besides being a war hero, Von Steuben is also who our very own Steuben County is named in honor of, and there is a variety of grapes named in his honor.
The Steuben grape grows very well in our generally cooler climate. Here at Satek, we have the Steuben grapes in 4 varieties of our wines; Steuben, Pam's Perfect Little Red Wine, Kreibaum Bay Steuben Dessert Wine, & Kreibaum Bay Krystal Steuben.
To Celebrate Von Steuben Day the Meadowlark String Quartet will once again come to the promenade to perform. They will play two sessions on Saturday afternoon. The first will be from 2:30-3:30 and the second performance will be from 4:00-5:00.
The meadowlark string quartet is made up of 4 members from the Fort Wayne Philharmonic; Olga Yukova and Marcy Tentacosti on the violins, Deb Welter on the viola and Jane Heald on the cello. The Quartet performs regulary at the Embassy Theater, nursing homes, and elementary schools. Violinist, Marcy Trentacosti states "We are happy to bring great music to this wonderful event. The timeless music of Hayden, Mozart, and Beethoven to celebrate Von Steuben Days at Satek Winery."
WLKI will be out on Saturday morning to get the celebration off to a great start. With German Themed food prepared by gourmet chef Linda Hankins,of Apron's Inn available for purchase all day Saturday.

Peach Melba Shortcake á la Satek

Auguste Escoffier (1846-1935) was a French chef, restaurateur and culinary writer who popularized and updated traditional French cooking methods. Referred to as the "king of chefs and chef of kings" he invented in 1892 or 1893 at the Savoy Hotel in London the dessert pêche melba, so named to honor Nellie Melba, the Australian operatic soprano (1861-1931) who was the first Australian to achieve international recognition as a classical musician.
The dessert consists of peaches and raspberry sauce with vanilla ice cream. For our version start with white cake or sponge cake (such as those used for strawberry shortcake.) Scoop vanilla ice cream on top and cover with sliced, fresh sugared peaches. Then ass a significant pour of Satek Winery Raspberry Wine. Bon Appétit! Enjoy!

Grower Spotlight
Pleasure to meet you, Stray Voltage

Did you know Steuben County had a ski resort? Tamarack Trails, not far from the Wing Haven Nature Preserve, provided yet another source for seasonal attraction to the area. At the base of Tamarack "mountain", you can still trace the rusty ski lifts up to the top, where one is rewarded a panoramic view of the tri-state area. You have a similar observation up at Stray Voltage Vineyard, just a short jaunt from Tamarack. David Holmes named the family vineyard "Stray Voltage" after reflecting on his time at REMC where David is around plenty of amps and volts.
David Holmes planted 1200 Traminette vines in 2008 and up here at Stray Voltage, like Tamarack, you see far. We've been told it's the second highest point in Steuben County. With an alpine backdrop, his hillside vineyard gets layers of heat during the day, perfect for building sugars, but also a cooling breeze that ramps up the incline like a half-pipe skateboarder. All this intermixes, which will provide even ripening and consistency within the laser straight rows of high cordon Tram. In the spring, the heavy cold air settles to the bottom of the hill, protecting Hilltop from the nippy frost that can wreak mayhem in other vineyards.
This is the first harvest from Stray Voltage, and the winery crew is excited to squeeze this fruit into flavorful fermentation. There's also plenty more to plant more, something Dave is considering.
To trellis these vines, Dave chose retired telephone posts, which provide a more than ample support system. The wire is heavy gauge, and the vineyard is secure, rigid, and built to last.
I'm always curious how people decide get into wine grape growing. David simply had a desire to see how he and his family could contribute towards a product that another family can enjoy. So, stay tuned for yet another exciting vintage of Traminette, grown...for you....by people that care.
Now.....back to a little Frisbee before the squeeeeeeeeze of 2013.
